MESQUITE GRILLED CHICKEN SANDWICHES



Mesquite Grilled Chicken Sandwiches image

Made with a delicious homemade marinade and served on a grilled bun, it's one of our family's favorite weeknight dinners.

3 chicken breast halves
1 Tbsp. paprika
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon dried thyme
1/4 teaspoon pepper
1 teaspoon brown sugar
1 teaspoon kosher salt
1/4 cup oil
1/4 cup bbq sauce
1/4 teaspoon liquid smoke
6 hamburger buns
butter
fixins

Steps:

  • Trim fat off of chicken breasts. Place each breast in between two pieces of wax paper and pound to 1/2" thickness. Cut each breast into 2-3 smaller pieces (to fit bun size).
  • Mix marinade ingredients and pour over chicken breast pieces. Refrigerate 30-45 minutes.
  • Grill chicken for about 5 minutes on each side, or until internal temperature reaches 165 degrees.
  • Butter buns and place on grill until slightly toasted.
  • Spread each bun with mayonnaise (if desired) and top with fixins.

These flavorful and spicy mesquite chicken sandwiches are a great way to get a quick healthy dinner on the grill.

4 small chicken breasts
4 tablespoons mesquite grill seasoning
8 slices bacon, cooked
4 slices Swiss cheese
1/4 cup mayonnaise
3 tablespoons Dijon mustard
1 teaspoon Sriracha hot sauce
Buns, lettuce, and tomato

Steps:

  • Rub the mesquite grill seasoning evenly over all sides of the chicken breasts. Place on a plate, cover with plastic wrap and refrigerate for at least 30 minutes.
  • Preheat grill to high, and cook chicken breasts on greased grill grates, flipping occasionally, until cooked through, about 10 minutes total. Place two bacon slices onto each chicken breast, and top with a slice of cheese. Close grill lid and let cheese melt, about a minute. Remove from grill.
  • Whisk together the mayo, mustard, and Sriracha. Spread evenly on the top of a bun, and the stack chicken breast with tomato and lettuce.

1 package McCormick® Grill Mates Mesquite Marinade
1/4 cup fresh lime juice
2 tablespoons honey
2 tablespoons vegetable oil
8 small boneless skinless chicken breast halves (about 2 pounds)
8 small club rolls
8 lettuce leaves
2 medium tomatoes, sliced
8 slices crisply cooked bacon (optional)
8 slices American cheese (optional)

Steps:

  • 1 Mix Marinade Mix, lime juice, honey and oil in small bowl. Place chicken in large resealable plastic bag or glass dish. Add marinade; turn to coat well. 2 Refrigerate 15 minutes or longer for extra flavor. Remove chicken from marinade. Discard any remaining marinade. 3 Grill over medium heat 6 to 7 minutes per side or until chicken is cooked through, turning frequently. Serve chicken on toasted rolls with lettuce and tomatoes. The spread and the chicken can be made in advance, and the chicken can be eaten hot or cold.

4 breast half, bone and skin removed (blank)s skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
ground black pepper to taste
1 tablespoon olive oil
1 teaspoon minced garlic
2 tablespoons mayonnaise
2 teaspoons prepared Dijon-style mustard
1 teaspoon chopped fresh rosemary
8 slices garlic and rosemary focaccia bread

Steps:

  • Sprinkle pepper on one side of each chicken cutlet. Heat oil in a large skillet; brown garlic in oil, then add chicken, pepper-side-down. Saute chicken until cooked through and juices run clear, about 12 to 15 minutes.
  • In a small bowl combine the mayonnaise, mustard and rosemary. Mix together and spread mixture on 4 slices focaccia bread. Place 1 chicken cutlet on each of these slices, then top each with another bread slice.
