BAKED CHICKEN & BROCCOLI RECIPE

Steps:
- Preheat oven to 400 degrees
- Rub the chicken all over with 2 tablespoons of the melted butter (or olive oil if you prefer)
- Sprinkle half the measurements of the spices all over the chicken breasts
- Place the chicken breasts side by side in the middle of a small baking dish
- In a small bowl, add the broccoli florets. Pour the remaining 2 tablespoons of melted butter (or olive oil) into the bowl as well
- Add the other half of the spices. Mix until the broccoli is coated well. Set broccoli aside for now
- Bake the chicken in the oven for 15 minutes, then (without removing the pan completely from oven) open oven doors and pour the broccoli mixture into the baking dish surrounding the chicken
- Return to bake for another 20 minutes
- Remove from oven and let chicken rest about 5-10 minutes before slicing

- Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking dish with nonstick cooking spray or butter.
- Place the chicken in a large pot with water to cover. Add some salt, bring to a boil, then reduce the heat to a low simmer and cook the chicken until tender, about 45 minutes. Drain the chicken, cover, and refrigerate until cool, or up to 24 hours. Shred.
- Meanwhile, bring a medium pot of generously salted water to a boil. Add the broccoli florets, and boil until crisp-tender, 2 to 3 minutes.
- Spread the rice in an even layer in the baking dish. Make a second layer with the broccoli. In a large bowl, mix the chicken soup, the sour cream, mayonnaise, lemon juice, shredded chicken, half the Cheddar and some salt and pepper. Pour the mixture over the broccoli and top with the remaining Cheddar. Bake for 40 minutes; let stand for 5 minutes before serving.

- Sear in an oiled pan over high heat until the outside is brown and crisp, about 5 minutes per side.

- Sprinkle Lemon Pepper Seasoning lightly over chicken that has been cut into strips.
- Bake in a casserole dish for 10 minutes at 350°F degrees.

- Combine hot water, chicken bouillon and onion powder.
- Place rice in 13x9x2 pan and add hot water mixture.
- Stir.
- Add carrots in even layer on top of rice.
- Place broccoli florets evenly atop carrot layer.
- Place chicken breasts on top.
- Frozen breast pieces need not be thawed.
- Salt and pepper chicken pieces, if desired.
- Thoroughly mix soup and milk.

- Preheat oven to 350 degrees. Dry chicken inside and out. Cut and separate broccoli flowerets from stems and reserve. Peel and chop the stems.
- Heat two tablespoons of the oil in an ovenproof casserole large enough to hold the chicken. Lightly brown the chicken in the oil on all sides. Remove the chicken from the casserole and set aside on a plate.
- Add the onion, ginger, chopped broccoli stems, garlic and red pepper to the casserole and saute over low heat until the onion is transparent but not browned. Stir in the wine. Season to taste with salt and pepper.
- Return the chicken to the casserole along with any juices from the plate. Cover the casserole and bring to a simmer.
- Place the casserole in the oven and bake for 45 minutes. Scatter the broccoli flowerets in the casserole around the chicken, baste them with some of the juices in the casserole, cover and bake another 10 to 15 minutes, until the broccoli flowerets are tender and the chicken is done.
- Remove the chicken from the casserole and disjoint or carve it. Arrange the broccoli flowerets and the chopped broccoli and onion mixture around the chicken and serve.
