Recipe video above. You love Beef Stroganoff...now try CHICKEN! Golden seared chicken with a creamy mushroom Stroganoff gravy, I like making this with whole chicken thighs so I can brown it nicely which leaves brown bits in the pan that makes an incredible flavour base for the sauce!

600g / 1.2 lb chicken thighs (4 - 5) (, boneless skinless (or breast or tenderloin, Note 1))
1 tsp garlic powder
Salt and pepper
1 tbsp olive oil
1 large onion (, chopped)
300g / 10oz mushrooms (, sliced (not too thin))
40g / 3 tbsp butter
2 tbsp flour ((Note 2))
2 cups / 500 ml beef broth/stock (, salt reduced)
1 tbsp Dijon mustard
2/3 cup (150g) sour cream ((or yogurt))
250 - 300 g / 8 - 10 oz pasta or egg noodles of choice ((Note 3))
Chopped parsley or chives (, for garnish (optional))

Steps:

  • Sprinkle chicken with garlic powder, salt and pepper on both sides.
  • Heat oil in a large skillet over medium heat. Place chicken in skillet smooth side down.
  • Press down lightly with with spatula. Cook for 4 minutes until golden.
  • Turn and press lightly with spatula. Cook for 2 minutes.
  • Remove chicken onto a plate.
  • Turn heat down to medium high. Add butter, melt. Then add onions, cook for 1 minute, then add mushrooms.
  • Cook mushrooms until golden. Scrape bottom of fry pan to get all the golden bits off (this is flavour!).
  • Add flour, cook, stirring, for 1 minute.
  • Add half the broth while stirring. Once incorporated, add remaining broth.
  • Stir, then add sour cream and mustard. Stir until incorporated (don't worry if it looks split, sour cream will "melt" as it heats).
  • Bring to simmer ,then reduce heat to medium low. Once it thickens to the consistency of pouring cream (3 minutes), adjust salt and pepper to taste.
  • Add chicken back in (including plate juices). Simmer for 1 minute, then remove from stove.
  • Serve over pasta or egg noodles, sprinkled with parsley or chives if desired.

Saw Mr Food make this on a morning show and tried it. It is quick, easy and tasty. Even my picky DS liked it. I used fresh mushrooms (8 oz, I think), Lawry's seasoned salt, 9 oz pre-cooked chicken and lite sour cream. I cooked the pasta while the chicken mixture was cooking.

2 tablespoons butter (1/4 stick)
4 -8 ounces mushrooms, sliced (if canned, drain)
1/4 cup dry white wine
1/4-1/2 teaspoon thyme
1 teaspoon seasoning salt
2 cups cubed cooked chicken (approx 1/2 lb)
1 cup light sour cream (can use fat-free or full-fat if prefer)
1 lb cooked pasta noodles

Steps:

  • Melt butter in medium skillet over medium heat.
  • Add mushrooms, wine, thyme and salt and cook 2-3 minutes.
  • Add chicken and bring to a boil.
  • Reduce heat to low and simmer for 10 minutes, stirring occasionally.
  • Remove from heat and stir in sour cream.
  • Serve immediately with cooked pasta.

  • Put a tablespoon of olive oil in a large frying pan and heat for 1 minute, add the diced chicken and cook over a high heat for 5 minutes, stirring frequently to ensure it is nicely browned all over. Tip the chicken and all the juices onto a plate.
  • Turn the heat down then add the butter to the same pan and allow to melt, then add the onions and mushrooms and cook for about 3 minutes until lightly browned.
  • When the onions and mushrooms are cooked, add the garlic, paprika, salt and pepper, plus the chicken and all the juices and cook over a low heat for a further 3 minutes, or until the chicken is cooked all the way through.
  • Add the sour cream and heat gently until it just starts to bubble (don’t boil!). Turn the heat off and stir in the chopped parsley.

  • In a large, deep skillet or a dutch oven with a tight-fitting lid, heat the olive oil over medium. Once hot, add the chicken, thyme, smoked paprika, garlic powder, salt, and pepper. Continue to cook, breaking up the meat with a spoon, until it is fully browned on all sides, 3 to 4 minutes.
  • Add the sliced mushrooms. Continue to cook until the mushrooms begin to soften, about 5 to 6 minutes. Sprinkle the flour over the top, then stir so that it coats the chicken and mushrooms.
  • Add about one-third of the chicken stock. Stir and work the flour off of the bottom off the pan. Add the rest of the stock and the egg noodles and cover the pan. Bring the liquid to a boil, then immediately remove the lid and stir the pan. Re-cover, then reduce the heat to a low simmer. Let simmer until the noodles are al dente and most of the liquid is absorbed, about 7 minutes, stirring the noodles and replacing the lid every few minutes. If at any point the liquid drops below a gentle simmer, increase the heat slightly.
  • Once the noodles are tender, remove the pan from the heat and let sit 1 minute to cool slightly. Stir in the room-temperature Greek yogurt. Taste and adjust seasonings as desired. Sprinkle with fresh parsley and serve hot.
