CHICKEN WINGS WITH GUAJILLO ANCHOVY SAUCE
At Ducks Eatery in the East Village, the chef, Will Horowitz, believes in the bar snack as a maximum-detonation flavor bomb. And he'll go to great lengths to achieve that: Many of the dishes at Ducks, including the restaurant's wings, shown here, depend on labor-intensive rounds of fermenting and smoking. For our version of the recipe, though, we asked him to reel in the effort without cutting back on the flavor. Think of the result (which involves anchovy fillets, Thai fish sauce, guajillo chiles, ancho chiles and ground chamomile) as a stealth way to sneak ambitious gastronomy into your next Super Bowl party.

- In a large bowl, combine the brown sugar, kosher salt, lemon juice, granulated sugar, fish sauce, soy sauce and smoked paprika. Add 2 quarts of water and mix well. Add the garlic, cilantro stems and chicken wings. Mix, cover, and refrigerate for 7 to 14 hours.
- Remove wings from marinade, rinse and transfer to a sheet pan with a rack. Allow to sit uncovered until dry and slightly tacky to the touch, 30 to 45 minutes.
- Cut stem and cap off the guajillo and ancho chiles and remove the seeds; if the chiles are very brittle, warm them briefly in a skillet to soften. Sauté in a dry skillet until the skins change color and begin to smoke heavily, 2 to 3 minutes. Transfer to a container and cover with hot water. Soak until softened, 30 to 45 minutes.
- Drain chiles and place in a food processor. Add garlic, shallot, soy sauce, fish sauce, black pepper, lemons, smoked paprika, white anchovies, chamomile, lemon juice and salt. Purée until smooth.
- Heat oven to 400 degrees. Brush wings with butter or ghee and roast until the internal temperature reaches 160 degrees, about 20 minutes. (Alternatively, the wings could be smoked with your choice of wood at 225 degrees for 2 1/2 hours.)
- Baste wings again with butter or ghee, increase oven temperature to 450 and continue to roast until the skins are brown and crispy, 10 to 15 minutes more. (Alternatively, the wings may be deep-fried at 350 degrees until golden brown and crisp, 8 to 10 minutes.) Allow wings to rest at room temperature for 10 minutes.
- To serve, slather wings with a generous amount of guajillo sauce and top with fresh lemon zest or brined lemon peel and a generous sprinkling of cilantro.

- Stir onion, honey, brown sugar, soy sauce, butter, mustard powder, and garlic together in a saucepan over medium heat; cook until hot, about 5 minutes.
- Spread chicken wings in an even layer into a shallow baking dish; pour sauce over the wings.
- Marinate wings in refrigerate 1 hour to overnight.
- Preheat oven to 350 degrees F (175 degrees C).

GARLIC-GINGER CHICKEN WINGS
My mom lives in a small town in western New York, called Clifton Springs. Whenever I go home to visit, I usually indulge in some Buffalo chicken wings from a place called Emerson's. They have two flavors of wings; Buffalo-style, and sweet and sour. I came up with what turned out to be a deliciously sticky, ginger and garlic glaze. I really hope you give these a try.

- Preheat oven to 400 degrees F (200 degrees C). Line 2 baking sheets with aluminum foil; grease the foil with cooking spray.
- Place the chicken in a large mixing bowl. Season with salt, pepper, and hot sauce. Add the vegetable oil; toss to coat.
- Place the flour and wings in a large, food-safe plastic bag. Hold the bag closed tightly, and shake to coat the wings entirely with the flour; no wet spots should remain. Arrange the wings on the prepared baking sheets, making sure none of the pieces are touching one another. Spray wings with additional cooking spray
- Bake in the preheated oven for 30 minutes, turn all the wings, and return to the oven to cook until crispy and no longer pink in the center, about 30 minutes more.
- Whisk together the garlic, ginger, chili paste, rice vinegar, brown sugar, and soy sauce in a saucepan. Bring the mixture to a boil and immediately remove from heat.
- Put about half the wings in a large mixing bowl. Pour about half the sauce over the wings. Toss the wings with tongs to coat evenly; transfer to a tray and allow to sit about 5 minutes to allow the sauce to soak into the wings before serving. Repeat with remaining wings and sauce.

ROASTED CHICKEN WINGS MARINATED IN CALABRIAN CHILE SAUCE

- Add the wings to a 4-quart plastic food storage container. Cover the wings with the Chicken Brine. Place a plate on top of the wings to keep them submerged, and allow the wings to brine for 4 hours in the refrigerator.
- Strain the brine from the wings and discard the brine. Place the wings back in the empty food storage container and cover with 32 ounces of the Calabrian Chile Diavola Sauce. Mix the wings to coat in the wing sauce and marinate for at least 8 hours and up to 24 hours in the refrigerator.
- Preheat oven to 425 degrees F with one oven rack set in the middle level for roasting the wings and another rack set to the upper level of the oven for broiling. Cover a large sheet pan with foil and brush with the olive oil to prevent the wings from sticking. Arrange the marinated chicken wings evenly on the sheet pan; be sure not to stack them. Roast the chicken wings for 15 minutes, then flip the wings over and place them back in the oven. Continue roasting the wings until the internal temperature has reached 160 degrees F when probed with a meat thermometer (avoiding bone), an additional 10 to 15 minutes.
- Remove the sheet pan from the oven and rest it on top of the range. Set the oven to broil on the highest setting. Meanwhile, add all the roasted wings to a large mixing bowl. Add the Calabrian chiles, garlic and 2 tablespoons chopped fresh rosemary to the wings. Toss a couple of times to coat the wings, then place them back on the sheet pan evenly. Broil the wings to create a little char on them, turning after 5 to 7 minutes to hit the other side.
- Arrange them on a large platter and scrape any remaining rosemary, garlic and chiles left on the pan over the wings. Arrange the celery sticks on the platter around the wings and have 6 saucers of the Doughgonzola dipping sauce and 6 saucers of the remaining Dough's Calabrian Chile Diavola Sauce ready for your guests. Sprinkle the remaining rosemary over the platter and the dipping sauces for a nice color burst of flavor.

- Combine the hot water, salt, garlic, honey, peppercorns, parsley, rosemary, thyme, bay leaves and lemon zest and juice in a large pot and bring to a boil. Boil for 1 minute, stirring to dissolve the salt. Remove from the heat and chill until cold.
- Add the olive oil to a medium saucepan set over medium-high heat. When the oil begins to appear wavy in the pan, add 15 ounces Calabrian chiles, the minced garlic and chopped onions. Saute until the onions become translucent, 5 to 7 minutes. Add 4 cups water and bring to a boil on high heat; reduce to a simmer and cook until the liquid has reduced by a quarter and the flavors have developed, about 20 minutes. Remove the pan from the heat and allow the mixture to cool to room temperature.
- Puree the mixture in a blender or food processor until smooth, scraping down the sides to capture any ingredients that stick. Continue blending the sauce and slowly add the vinegar until the mixture comes together as a sauce. Taste the sauce and adjust the seasoning with salt and pepper. Add the reserved 5 ounces chopped Calabrian chiles for garnish. Place in a storage container and store in refrigerator.
- Process the buttermilk, sour cream, mayonnaise, Gorgonzola dolce and garlic in a food processor until smooth. Transfer to a large bowl and add the crumbled Gorgonzola. Blend with a spatula until combined. Season with salt and pepper. Store the dipping sauce in the refrigerator.
CHICKEN WINGS IN GARLIC SAUCE
Steps:
- Rinse the chicken wings in cold water and pat dry with paper towels. Place flour in a shallow platter and season it by adding paprika, salt and pepper. Toss to incorporate, then dredge the wings in the flour.
- Heat oil in a skillet and brown the chicken wings on all sides. Remove the chicken from the pan and set aside on a platter. Add the pepper flakes, bay leaf, lemons, garlic, oregano, sherry, and chicken broth to the pan.
- Cook for 2 minutes to evaporate the alcohol. Return the chicken to the pan. Cover the pan and simmer for 15 minutes, or braise in a preheated 375 degree oven for 20 minutes.
