DUMP-AND-BAKE CRANBERRY CHICKEN
This 5-ingredient Dump-and-Bake Cranberry Chicken is a cozy, easy dinner recipe that's perfect for cool nights!

Steps:
- Preheat oven to 375 degrees. Spray a 2-quart baking dish with cooking spray. Season chicken with salt and pepper, to taste.
- Place chicken in the prepared dish. In a separate bowl, stir together salad dressing, cranberry sauce, dry onion soup mix seasoning and orange zest. Pour sauce over chicken.
- Cover tightly and bake for 30 minutes. Remove the cover and return to the oven for 15 more minutes, or until the chicken reaches an internal temperature of 165 degrees F. Spoon sauce over chicken and serve.

This is an incredibly easy recipe - and delicious! Just mix it up before going to work, then pop it in the oven when you get home in the evening. The sauce that forms while baking tastes great on rice.

Steps:
- Place the chicken breasts in a glass or non-reactive baking dish.
- Stir the onion soup mix, cranberry sauce, and French dressing together in a bowl until well blended. Pour over the chicken breasts. Cover the baking dish with plastic wrap, and refrigerate at least 8 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Remove plastic wrap from the baking dish, and cover loosely with aluminum foil.
- Bake chicken in preheated oven until top is bubbly and slightly browned, about 1 hour and 15 minutes.

CHICKEN WITH CLEMENTINE & CRANBERRY SAUCE
I found this in Cooking Light magazine and just had to post it! I love this sauce over a roasted chicken. The magazine stated you can also just make the sauce and then use it to serve over sauteed chicken breasts for a quick weeknight meal.

- Preheat oven to 450°F.
- Remove and discard giblets and neck from chicken. Rinse chicken with COLD water and pat dry. Trim excess fat. Starting at neck cavity, loosen skin from breast and drumsticks by inserting fingers gently pushing between skin and meat.
- Rub salt and pepper under loosened skin and sprinkle in body cavity; then place clementine QUARTERS in cavity.
- Place chicken, breast side down, on a broiler pan. Insert a meat thermometer into meaty part of thigh, making sure not to touch bone.
- Bake at 450F for 25 minutes. Reduce oven temperature to 350F and turn chicken breast side up; bake at 350F for 1 hour or until thermometer registers 180°F.
- Cover chicken loosely with foil and let stand 10 minutes; then remove skin and discard.
- Make the sauce by placing the orange juice, cranberries, and sugar in a medium saucepan. Cook at medium high for 5 minutes or until the cranberries pop. Then add chicken broth.
- Combine the cornstarch and water (or wine if you choose) in a small dish and stir into the cranberry mixture. Bring to a boil and cook for 1 minute, stirring constantly.
- Remove from heat and stir in the clementine sections.

CRANBERRY SMOTHERED CHICKEN

Steps:
- In a nonstick skillet with cooking spray, lightly brown chicken breasts on both sides.
- Transfer breasts to a shallow baking dish.
- In saucepan mix together cranberry sauce, chili sauce, brown sugar and fresh lemon juice.
- Cook over medium heat till cranberry sauce is melted and mixture is smooth.
- Spoon cranberry mixture over the chicken breasts.
- Bake at 350 uncovered for 45 minutes, or until fork can be inserted with ease.
