This is a great spicy marinade recipe, a traditional African dish, great for BBQ. Nice with salad and fries, but I like adding it to a pita with salad and garlic Greek yogurt (3/4 cup Greek yogurt and 3 cloves of crushed garlic with finely chopped chives). Don't go on a date though, gives you wicked garlic breath!

¼ cup paprika
2 tablespoons hot chili powder
1 cup fresh lemon juice
3 cloves garlic, minced
1 ½ teaspoons chopped fresh ginger
1 ½ teaspoons salt
4 bone-in chicken breast halves

Steps:

  • In a large bowl, stir together the paprika, chili powder, lemon juice, garlic, ginger and salt. Rub chicken with the mixture, place in a dish, and marinate for 3 hours.
  • Preheat a grill for medium heat.
  • Place chicken onto the grill and discard the marinade. Cook for about 30 minutes, turning occasionally, until the skin is slightly charred and juices run clear.

Nando's Peri Peri Chicken Recipe tastes just like Nando's. Made with homemade Peri peri Sauce this Portuguese Peri Peri Chicken is extremely easy to make & can be a fantastic easy appetizer or main course. Make this spicy, tangy, delicious South African Piri Piri Chicken at home without an oven or grill.

2.50 pounds Chicken drunmsticks & thighs on the bones (1134 gms)
1 tsp Paprika
2 tbsp Lemon Juice
1/2 cup Home made Peri Peri Sauce
3 tbsp Olive Oil
Salt (to taste)

Steps:

  • Take the chicken drumsticks & thighs in a clean dry bowl. I have used skinless chicken pieces.. You may also you chicken pieces with skin.
  • Slash each piece of the chicken diagonally a few times (2-3 slashes each piece depending on their sizes).
  • Add salt, paprika & lemon juice to the chicken pieces and give them a good rub.
  • Next, add the homemade peri peri sauce and rub well so that the chicken pieces are well coated with the marinade.
  • Cover the bowl with a cling film and pop it in the fridge. Allow the marinated chicken to rest for at least 3-4 hours. You may also leave it over night.
  • Next, over medium heat set an iron skillet grill. Brush olive oil and arrange the chicken pieces shaking off the excess marinade without over crowding. Cook them roatating side to side after few minutes until fully cooked. It should take you about 30 mins approximately. Brush them with olive oil or drizzle oil on the skillet while cooking the chicken.
  • Serve hot. Enjoy. You may garnish it with more peri peri sauce or use the left over sauce if any as a dip. It tastes fabulous.

1/4 cup fresh lime juice
2 tablespoons cider vinegar
1/2 teaspoon paprika
1/4 teaspoon Angostura bitters
1 teaspoon hot pepper sauce (or to taste)
1 jalapeno pepper
2 garlic cloves
1 lb chicken breast

Steps:

  • Combine the lime juice, vinegar, paprika, bitters and hot pepper sauce in a glass baking dish.
  • Wearing kitchen gloves, split the jalapeno pepper, remove seeds.
  • Mash the pepper with the garlic into a smooth paste using a mortar or an electric spice grinder.
  • Add the paste to the lime mixture in the baking dish and combine.
  • Toss the chicken pieces and swish them in the marinade until they are completely coated. Cover and let marinate overnight in the refrigerator.
  • Remove the chicken from the marinade and grill or broil until cooked through and burnished, about 20 minutes on each side. Baste frequently with the marinade. If the chicken looks like it is beginning to burn, move it farther away from the heat source.
  • Serve hot with chilled orange sections and plenty of napkins.

I love churrasqueira chicken and have been looking for a recipe to make it myself. I found this on Breakfast Television Toronto's web site. They got the recipe from Roasty Chicken Churrasqueira which is in the town of Maple just north of Toronto. A friend told me that she's used this sauce for fish and shrimp, too. I've tried it on shrimp and it's wonderful. Simply marinate the shrimp for an hour and then drain the shrimp, discard the sauce and grill the shrimp on the barbie.

4 tablespoons lemon juice
5 tablespoons olive oil
1/4 cup vinegar (balsamic gives an excellent flavour)
1 tablespoon cayenne pepper
1 tablespoon garlic, minced
1 tablespoon paprika
1 teaspoon salt
1 tablespoon chili flakes

Steps:

  • Add all ingredients to a bowl and whisk together.
  • Brush on chicken before barbecuing (or baking in oven @ 350 °F for 1.25 hours WITHOUT opening the door during during entire cooking process.) It helps the flavour if you marinate the chicken for a few hours prior to cooking!
