SWEET AND SIMPLE MEATLOAF SAUCE
This is my favorite topping for meatloaf. It is good for basting before and during cooking and also for serving at the table for those who like more sauce.

Steps:
- Stir all ingredients together.
- If you plan to serve some at the table, set it aside before you baste the raw meatloaf.
- Baste meatloaf before and during cook time.

SWEET AND SPICY MEATLOAF
Steps:
- Heat the olive oil in a large skillet over medium-high heat. Saute the green peppers, red peppers and onions until very soft and browned, 10 to 12 minutes. Transfer to a plate or baking sheet and refrigerate until cold. (This can be done a day ahead.)
- Preheat the oven to 350 degrees F.
- Mix the breadcrumbs, milk and roasted garlic in a bowl; it should have an oatmeal-like consistency. Set aside.
- In another bowl, mix the ketchup, steak sauce, sriracha, maple syrup and steak seasoning. If the sauce is too spicy for you, add a little more ketchup to mellow the heat. Set aside.
- In a bowl, combine the ground beef, sausage, parsley, eggs, pepper-onion mixture and two-thirds of the meatloaf sauce. Mix well, but don't overwork. Take a small ball of the mixture and make a bite-size patty. Saute the patty in a pan until cooked through, then taste. Add salt and pepper to the meatloaf mix as needed.
- When you are happy with the flavor, place the meatloaf mixture in a greased loaf pan, or form it into a log and place it on a parchment-lined baking sheet. Bake until the internal temperature reaches 155 degrees F, 1 to 1 1/2 hours. Remove from the oven; adjust the oven to a low broil. Brush the top of the loaf with half of the remaining sauce, then return to the oven to caramelize the sauce, 2 to 3 minutes. Let rest for 20 minutes before slicing. Serve with mashed potatoes and a drizzle of the remaining sauce.
SWEET AND SAVORY MEATLOAF WITH SWEET AND TANGY GLAZE
Mix chopped spinach, mushroom and prunes with ground meat and bake up a loaf coated with an apricot-ginger glaze.

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
- Combine the meatloaf mix, breadcrumbs, spinach, mushrooms, prunes, dill, parsley, Worcestershire, eggs, garlic, onion, 1/4 cup of the ketchup, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
- Stir together the apricot preserves, soy sauce, ginger, vinegar and remaining 1/4 cup ketchup in a small bowl for the glaze. Remove the meatloaf from the oven and brush the top and sides all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.
SWEET AND SPICY MEATLOAF
This spicy meat loaf is not only super easy, it's also something that both kids and adults will love!! Take it from someone who has the world's pickiest family. You can either use the remaining barbeque sauce on top of the loaf before baking, or serve it on the side after the meal is cooked.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, mix ground beef, eggs, onion, barbeque sauce, green bell pepper, diced tomatoes with green chile peppers, Salsa Verde flavored tortilla chips and Worcestershire sauce. Shape into a loaf and place in an 11x7 inch baking pan.
- Bake in the preheated oven 75 to 90 minutes, or until center of the loaf is no longer pink.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the ground beef, bread crumbs, salt, ground black pepper, eggs, onion flakes and 1/2 of the can of tomato sauce. Mix together well and place into a 5x9 inch loaf pan.
- Push the meatloaf down into the pan forming a well for the sauce around all the edges.
- Bake at 350 degrees F (175 degrees C) for 40 minutes.
- Meanwhile, in a small saucepan over medium heat, combine the remaining tomato sauce, brown sugar, vinegar, white sugar and mustard. Bring to a boil and remove from heat.
- After meatloaf has cooked for 40 minutes, remove from oven and pour sauce over the top of the meatloaf.
- Return to oven and bake at 350 degrees F (175 degrees C) for 20 more minutes. Let sit 5 minutes before removing from pan.

SWEET AND TANGY MEATLOAF RECIPE

- Preheat oven to 350 degrees F.
- In a large bowl, combine ground beef, breadcrumbs, egg, garlic powder, Worcestershire sauce, ketchup, brown sugar and apricot preserves.
- Place in a greased 9x5 inch loaf pan.
- Cook for 40-50 minutes.
- In a separate bowl combine ketchup, brown sugar and apricot preserves. Remove meatloaf from oven after it has cooked, spread on glaze and cook for an additional 20 minutes.

- In a large bowl, combine the bread crumbs, salt, pepper and eggs; crumble beef over top and mix well. Add onion and half of the tomato sauce. MEATLOAF W/ SWEET AND SOUR SAUCE
There are oh-so-many meatloaf recipes here, and I know that I will only ingratiate myself further by adding another one. No? Then consider it done for record-keeping purposes. Admittedly, the ingredients in the sweet and sour sauce seem less than appealing, but the end result is wonderful.

- For the sauce: Combine all ingredients in a saucepan on medium heat.
- Bring to boil.
- Simmer gently to thicken.
- For the meatloaf: Mix all ingredients together and place into a greased bread pan.
- Pour two-three tbps of sweet and sour sauce over meatloaf and bake at 375 for 1 hour.
