CHICKEN IN SOUR CREAM
This is a family favorite of ours, and I also serve it to company. Serve this delicious chicken recipe along with a salad, rolls, and a vegetable.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat vegetable oil in a skillet over medium heat. Brown chicken on both sides and transfer to prepared baking dish. Season with salt, pepper, and paprika to taste.
- Combine mushroom soup, onion soup mix, sour cream, lemon juice, and dill weed. Pour over chicken.
- Bake in preheated oven for one hour, or until chicken pieces are done and sauce is browned. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

BAKED CHICKEN WITH SALSA AND SOUR CREAM

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Put chicken and taco seasoning in a resealable plastic bag. Seal bag and shake to coat chicken in taco seasoning. Arrange seasoned chicken in a baking dish.
- Stir sour cream and salsa together in a bowl; spoon over the chicken breasts.
- Bake in preheated oven for 30 minutes. Sprinkle Cheddar cheese over the chicken breasts and continue cooking until no longer pink in the center and the juices run clear, about 10 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Preheat oven to 350°. In a shallow bowl, combine first seven ingredients. Place bread crumbs in a separate shallow bowl. Coat chicken with sour cream mixture, then coat with bread crumbs., Arrange chicken on a rack in a foil-lined 15x10x1-in. baking pan. Bake, uncovered, 30 minutes. Drizzle with butter; bake 15-20 minutes or until juices run clear.

CHICKEN WITH SOUR CREAM - (PUI CU SMANTANA ACRA)
This recipe is one which required translation. It takes a little time to translate the intent and accuracy of the original cook... Fortunately, I have not lost my basic skills in the Romanian language...By jove, I think I've got it... A favourite when I was growing up. May be served with boiled potatoes or a rice pilaf. Vegetables could include carrots, parsnips, whole green beans.

Steps:
- Preheat oven to 325°F.
- Clean chicken well, and cut into pieces.
- Brown pieces in hot butter in heavy frying pan.
- Remove chicken to a covered casserole dish.
- Make a roux; reheat butter in pan and add flour and water, blending carefully.
- Heat and stir until mixture is light brown.
- Cool roux thoroughly, (will not curdle if roux is cooled before sour cream is added).
- Add sour cream slowly, to the roux, mixing well; simmer for a few minutes.
- Pour this over chicken in the casserole dish.
- Add mushrooms, seasoning, parsley, pepper, chopped scallions with green tops, and water.
- Sprinkle Hungarian paprika over mixture.
- Cover casserole dish tightly; place in preheated oven, and cook for 1-1/2 hrs, or until chicken is tender.

ROMANIAN SOUR CREAM CHICKEN

Steps:
- Clean chicken and cut into pieces.
- Brown pieces in hot butter in heavy frying pan, then remove chicken to casserole.
- Reheat butter in pan and add flour, blending carefully. Heat and stir until mixture is light brown. Cool roux thoroughly. Will not curdle if roux is cooled before sour cream is added.
- Add sour cream slowly, mix well and simmer for a few minutes. Pour this over chicken in casserole. Add mushrooms, seasonings, parsley and scallions (green tops and all) and water. Sprinkle paprika over mixture.
- Cover tightly, place in a 325 degree oven and cook for 1 1/2 hours, or until chicken is tender.
- The sauce that is made is VERY thin, so I would make a larger roux, or at the end add a thickener.
