1 ½ pounds boneless chicken breast, cut into 1-inch pieces
4 cups water
1 package Bear Creek® Chicken Noodle Soup Mix
1 medium zucchini, halved lengthwise and sliced
2 cups halved grape tomatoes
2 cups baby spinach leaves
1 tablespoon lemon juice

Steps:

  • Heat oil in large nonstick skillet over medium-high heat and brown chicken in 2 batches. Transfer to a plate.
  • Stir water and soup mix into the skillet and bring to a boil over high heat. Return chicken to skillet.
  • Reduce heat to low and simmer 5 minutes. Stir in zucchini and cook 3 minutes.
  • Stir in tomatoes and spinach and cook 2 minutes or until noodles are tender. Stir in lemon juice.

This salad needs no separate dressing: The warm spiced chicken infuses all of the vegetables with flavor and richness.

4 skin-on, bone-in chicken thighs (about 1 3/4 lb. total)
2 tsp. extra-virgin olive oil
Kosher salt
2 tsp. mustard seeds
1 tsp. fennel seeds
3 small cucumbers (such as Persian or kirby), cut into 1" pieces
1 watermelon radish or kohlrabi, 1/2 fennel bulb, or 4" piece daikon, very thinly sliced
1 bunch red radishes, trimmed, very thinly sliced
1 bunch scallions, sliced 1/2" thick
3 Tbsp. (or more) red wine vinegar
Lightly crushed salted pita chips (for serving)

Steps:

  • Heat a medium heavy skillet, preferably cast iron, over medium.
  • Meanwhile, place chicken thighs, skin side down, on a work surface. Using a paring knife and working one at a time, cut a 1/2"-deep slash along both sides of thigh bone. This will help the thighs cook a little more quickly and evenly. Add oil to pan.
  • Season chicken on both sides with salt, then sprinkle all over with mustard seeds and fennel seeds, patting to adhere. Place chicken in skillet skin side down, and cook, undisturbed, until skin is very deeply browned and crisp and chicken is about 75 percent cooked through, 18-20 minutes. Some seeds will end up in the pan, which is fine as they will flavor the oil. Spoon out any that are burning. Turn chicken and cook on second side until just cooked through, about 4 minutes longer. Transfer to a platter and let rest 10 minutes.
  • While the chicken rests, toss cucumbers, watermelon radish, red radishes, scallions, vinegar, and a pinch of salt in a large bowl.
  • Cut chicken off the bone, then slice crosswise into 1 1/2"-2" pieces.
  • Gently toss chicken and pita chips into salad. Taste and season with more vinegar and/or salt if needed.

One 6-pound whole chicken, cut into 8 pieces
Kosher salt and freshly cracked black pepper
Olive oil, for cooking
3 cloves garlic, sliced
4 ounces dry vermouth
2 beefsteak tomatoes, cut into eighths
1/2 cup pitted green olives (your favorite kind)
Small bundle fresh oregano, tied with butcher's twine
1 1/2 cups chicken stock
2 tablespoons unsalted butter
Fresh basil, torn, for serving

Steps:

  • Set up a grill for cooking with direct and indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Place a large cast-iron pan on the direct-heat side of the grill to preheat.
  • Sprinkle the chicken with salt and pepper on both sides. Add a film of olive oil to the pan, followed by the chicken pieces, skin-side down. Allow the chicken to deeply brown, 4 to 5 minutes, then flip and add the garlic. Briefly sauté until fragrant, then deglaze with the vermouth. Scatter in the tomatoes, olives and oregano bundle. Add the chicken stock and season with salt and pepper. Move the pan to the indirect-heat side of the grill and close the lid. Allow to cook until the chicken is cooked through and the internal temperature reads 160 degrees F, 15 to 20 minutes. Remove the pan from the heat and stir in the butter. Discard the oregano bundle. Top with the basil and serve.

1/4 teaspoon salt

3 lbs roasting chickens, cut up
2 tablespoons oil
1 onion
2 garlic cloves
2 tomatoes, coarsley chopped
1 small zucchini, sliced
1 red pepper, cut into large pieces
1 small squash, sliced
1 tablespoon basil

Steps:

  • In a plastic bag, combine flour, salt, pepper, shake.
  • Add chicken, shake bag again, to coat chicken thoroughly.
  • Heat oil in a skillet over medium high setting until hot.
  • Add chicken, cook until golden brown on all sides, remove chicken, keep warm.
  • Cook onion and garlic in skillet till tender.
  • Add tomatoes and return chicken to skillet.
  • Cover and cook over medium low heat for 30 minutes.
  • Add zucchini, red pepper, squash.
  • Cover again, and continue cooking for another 5 - 10 minutes, until chicken is fork tender, juices run clear and vegetables are cooked.
  • Put chicken on platter. Add basil to vegetables in skillet, mix well.
  • Serve vegetables over chicken.

1-1/2 lb. boneless skinless chicken breasts, cut into thin strips
1/4 cup olive oil
1 cup chopped onions
2 cloves garlic, minced
1 jar (24 oz.) CLASSICO Tomato and Basil Pasta Sauce
2 Tbsp. chopped fresh oregano
3 cups cubed eggplant
2 each zucchini and yellow squash, cut lengthwise in half, then sliced crosswise
1 green pepper, cut into strips
1 lb. fusilli pasta, uncooked
1/3 cup KRAFT Shredded Parmesan Cheese

Steps:

  • Combine flour and black pepper in medium bowl. Add chicken, a few strips at a time; toss until evenly coated.
  • Heat oil in large skillet on medium heat. Add chicken; cook 5 min. or until evenly browned, stirring occasionally. Transfer to paper towel-covered plate with slotted spoon.
  • Add onions and garlic to reserved drippings in skillet; cook 3 min. or until crisp-tender, stirring frequently. Return chicken to skillet. Stir in pasta sauce and oregano; cover. Simmer on medium-low heat 20 min., stirring occasionally.
  • Add eggplant, zucchini, squash and green peppers to chicken mixture in skillet; mix well. Simmer, covered, 15 min. Meanwhile, cook pasta as directed on package, omitting salt.
  • Drain pasta. Serve topped with chicken mixture and cheese.
