1 (19-oz) can chickpeas, rinsed and drained
1 small garlic clove
3/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 1/2 tablespoons fresh lemon juice
3 tablespoons extra-virgin olive oil
3 tablespoons torn fresh mint leaves
Accompaniment: crostini

Steps:

  • Slip skins from chickpeas with your fingers.
  • Mash garlic to a paste with kosher salt and pepper using a mortar and pestle (or mince and mash with a large knife), then whisk paste together with lemon juice and oil until well blended. Toss with chickpeas, then mash with a fork until mixture just holds together. Let stand at room temperature 1 hour for flavors to develop. Stir in mint.

Chickpeas (garbanzos) always taste better cooked from scratch, but unlike other beans, you do have to soak them overnight. Then it's a simple matter of simmering for about 45 minutes. Cooked chickpeas will keep up to 5 days stored in their cooking liquid in the refrigerator. The combination of warm beans and cool herbs makes a great side dish.

Yield About 6 cups cooked chickpeas

Number Of Ingredients 10

1 pound chickpeas, soaked overnight in cold water
1 onion, halved, with each half stuck with 2 cloves
2 bay leaves
1 2-inch piece cinnamon stick
Salt
2 tablespoons olive oil
1/2 teaspoon turmeric, or a small pinch of crumbled saffron
2 tablespoons chopped mint
1/4 cup chopped scallions
1/4 cup chopped cilantro leaves and tender stems

Steps:

  • Pour soaked chickpeas into a colander to drain and put in a medium-size soup pot. Add water to cover by 1 inch and bring to a boil. Add onion, bay leaves, cinnamon and 2 teaspoons salt. Skim off and discard any rising foam. Lower heat and simmer gently for about 45 minutes, until tender. (May prepare in advance and reheat).
  • Drain hot chickpeas (reserve broth for another purpose, such as soup) and discard onion and aromatics. Return chickpeas to pot and add olive oil and turmeric or saffron, stirring to distribute. Taste for salt and adjust.
  • Transfer to a warm serving bowl. Mix mint, scallions and cilantro together and sprinkle over top. Serve warm.

1/4 cup olive oil
2 tablespoons julienned soft sun-dried tomatoes (not packed in oil)
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large saucepan, combine bulgur and water; bring to a boil. Reduce heat; simmer, covered, 10 minutes. Stir in fresh or thawed peas; cook, covered, until bulgur and peas are tender, about 5 minutes., Transfer to a large bowl. Stir in remaining ingredients. Serve warm, or refrigerate and serve cold.

Steps:

  • Make the spiced tomatoes: In a medium bowl, toss the tomatoes with the garlic, coriander, cumin, cayenne, salt, and olive oil until well coated.
  • Make the smashed chickpeas: Add the chickpeas to a separate medium bowl and mash gently with a fork until about half of the chickpeas are mashed. Fold in the lemon juice, salt, pepper, green onion, and parsley until well combined.
  • Make the yogurt sauce: In another medium bowl, stir together the yogurt, cucumber, mint, parsley, salt, and pepper.
  • To assemble, spread ¼ of the yogurt sauce on a warmed flatbread. Dot with ¼ of the smashed chickpeas and top with ¼ of the spiced tomatoes. Repeat to make the remaining flatbreads. Garnish with a sprinkle of paprika and the chopped parsley. Slice in half or quarters before serving.

1 1-inch slice country bread, crust removed
1 medium onion, peeled and quartered
2 to 3 cloves garlic, peeled
1/2 teaspoon minced fresh chili pepper
1 pound flat-leaf parsley, stems trimmed off
3 tablespoons fresh lemon juice
1 teaspoon sea salt, plus more to taste
1/3 cup olive oil
2 teaspoons balsamic vinegar
2 tablespoons pitted black olives

Steps:

  • Soak the bread in water for 5 minutes. Squeeze the bread out to remove excess water and discard any hard parts. Place half of the bread in a food processor with the onion, garlic, chili pepper and half of the parsley. Process until reduced to a paste. Add the remaining parsley, bread, lemon juice, salt and half of the olive oil. With the machine running, slowly add the remaining olive oil and vinegar. Taste and adjust seasoning if needed. Scrape the spread into a bowl and garnish with the olives.

Steps:

  • Heat 1/4 cup oil in a sacepan over medium heat. Add onion, and cook until softened, about 8 minutes. Add garlic, and cook stirring, 2 minutes. Add chickpeas, and cook 3 minutes. Remove from heat; let cool for 15 minutes.
  • Add chickpea mixture, mint, parsley, lemon juice, and salt to a food processor. Season with pepper and purée. With machine running, add remaining 1/4 cup oil in a slow steady stream, mixing until emulsified. (Spread can be refrigerated in an airtight container p to 3 days). Transfer to a serving bowl and drizzle with oil. Serve with pitas.
