One 1-pound package refrigerated hot breakfast sausage
1 onion, diced
One 2-pound block processed cheese, such as Velveeta
One 10-ounce can diced tomatoes and green chiles
2 cans chopped green chiles
1 jalapeno, diced
Chips, for serving

Steps:

  • Brown the sausage and onion in a large nonstick skillet, breaking the sausage up as you go. Once browned, drain off some of the fat.
  • Chop the cheese block into cubes and add along with the diced tomatoes and green chiles and chopped green chiles, juice and all.
  • Cook over a low heat until it all starts coming together. Then stir in the diced jalapeno. Serve with chips.

Steps:

  • In a large skillet, cook beef and sausage with onion, jalapenos and garlic over medium-high heat until meat is no longer pink, 5-7 minutes, crumbling meat. Using a slotted spoon, transfer to a 5-qt. slow cooker. Stir in chili, soup, tomatoes, pimientos and cheese. , Cook, covered, on low until heated through, 2-3 hours, stirring halfway through cooking. 5 large fresh or 1 cup frozen, defrosted or canned, chopped hatch chiles, drained, squeezed dry
3 tablespoons unsalted butter
2 tablespoons grated onion
3 garlic cloves finely grated using a microplane
1/2 teaspoon kosher salt
2 tablespoons all-purpose flour
1/2 teaspoon ground cumin
1 1/2 to 2 cups whole milk
4 cups grated Cheddar cheese (nothing fancy!)
2 cups grated Monterey Jack cheese
2 plum tomatoes, seeded, diced, drained
Roughly chopped cilantro (for serving)
White-corn tortilla chips (for serving)

Steps:

  • If using fresh chiles, place on a foil-lined baking sheet and broil until blistered, 5 to 7 minutes per side. Place in a bowl, cover with plastic wrap, and let steam for 5 minutes. Remove skins, stems, and seeds. Chop chiles, drain on paper towels, and set aside.
  • In a medium pot over medium-low heat, melt the butter. Add the onion, garlic, and salt and cook, stirring, until lightly browned and liquid has evaporated, about 2 minutes more. Whisk the flour and cumin into the butter mixture and cook until lightly browned, 30 seconds to 1 minute.
  • Raise the heat to medium and slowly whisk in the milk. Whisk constantly until sauce is thick enough to coat the back of a spoon, about 5 minutes.
  • Lower the heat to medium-low and add the cheeses, 1/4 cup at a time. Stir until cheese has melted completely before adding more cheese.
  • Fold in the tomatoes and chiles. Taste and adjust seasoning. Sprinkle with cilantro and serve immediately with chips alongside.

This is a delicious cheese dip that my daughter makes. The cream cheese gives it a wonderful consistency. All the fresh ingredients make this a dip that you will be asked for over and over again! Please note I have put "to taste" on alot of the ingredients as it depends on how big your bunch of veggies are. If you actually get lucky enough to have any left it keeps in the fridge a good while and reheats great. I usually serve/take this dip in a crockpot so it stays warm.

1 (10 ounce) can tomatoes and green chilies, diced. I like Rotel Original
1 (11 1/2 ounce) jar canned jalapeno slices, I like mild

Steps:

  • Dice the cheese into approximately 1-inch cubes.
  • Into a medium saucepan, put the cheese, Rotel tomatoes and the jalapeño slices, reserving the juice from the jalapeños.
  • Heat over medium heat approximately 5 minutes until the cheese is melted, stirring constantly.
  • Add the juice from the jalapeños to make the desired heat as well as the desired consistency. I usually add about 1/2-3/4 of it.
  • Serve hot with tortilla chips.
  • Can also be done in the crock pot to keep it warm for parties, etc.

2 tablespoons salad oil
1 medium onion, finely chopped
1 (4 ounce) can diced green chilies or 1 jalapeno chile, diced
1/3 cup heavy cream
1 cup chihuahua cheese or 1 cup edam cheese
6 medium green bell peppers or 6 medium red bell peppers, seeded and cut int 1/2 inch wide strips

Steps:

  • In a 3-4 quart pan, combine oil and onion.
  • Cook, stirring, over medium heat until onion is soft (about 7 minutes).
  • Add chilies and cream.
  • Cook, stirring, until hot.
  • Reduce heat to low and add cheese, stirring until melted.

2 1/2 cups grated Mexican Asadero or Manchego cheese
1 cup Roasted Jalapeno Salsa, recipe follows
Baked Tortilla Chips, recipe follows
2 slices red onion, 1/2inch thick
4 cloves garlic, unpeeled
1/4 cup olive oil
12 jalapeno chilies, seeded and halved
3 Anaheim chilies, seeded and halved
2 teaspoons dried oregano
Juice of 1 lime
1 teaspoon sea salt
2 tablespoons salt
1 teaspoon cayenne
Juice of 1 lime
2 cups water
2 tablespoons vegetable oil
12 stale corn tortillas

Steps:

  • Preheat the oven to 350 degrees. To prepare the Chile con Queso, mix the cheese and Roasted Jalapeno Salsa in a cazuela or an ovenproof serving dish and bake until the cheese has melted, about 10 minutes. Serve immediately.
  • In a cast iron skillet, over a very high heat, char the onion slices and remove. Toast the garlic, remove and peel. Add 2 tablespoons of the olive oil to the skillet and sear the chilies until charred. Add the remaining oil, the oregano, lime juice, and salt ingredients and cook 1 minute. Place all the ingredients in a food processor fitted with a metal blade. Process until they are roughly chopped but smooth.
  • Preheat the oven to 325 degrees F. In a medium saucepan, mix the brine: salt, cayenne, lime juice, water and oil. Warm over a low heat and whisk thoroughly. Cut the stale tortillas into strips or wedges. (If the tortillas are fresh, dry them by spreading them on a baking sheet and letting them sit out, room temperature, for 1 hour or more.) Briefly dip the tortilla pieces into the brine, then shake off the excess water. (A longer soaking in the brine will make the tortillas take on a more pronounced flavor.) Spread the prepared tortilla chips in a single layer on a baking sheet. Bake, turning occasionally, until they are crisp and golden brown, about 12 to 15 minutes.
