- Heat oil in stockpot over medium-high heat.
- Add garlic and saute 30 seconds or until lightly browned.
- Add greens and saute 5 minutes, or until wilted.
- Add remaining ingredients.
- Bring to a boil, cover, reduce heat, and cook 45 minutes.
SAUTEED GREENS WITH VINEGAR

Steps:
- Shake the rinsed greens in a colander to remove the excess liquid, but the leaves don't have to be thoroughly dry.
- Heat a large pot over high heat until very hot. Add the olive oil. When the oil is almost smoking, add the garlic and cook for a few seconds until it is light brown. Add a couple of handfuls of greens and toss with tongs, incorporating the garlic so it doesn't burn on the bottom of the pan.
- Add the remaining greens all at once, or in batches if your pot isn't large enough to hold it all at once. Toss constantly so the greens wilt evenly. When wilted, season with salt and pepper. Continue cooking over high heat, tossing often, until the excess liquid evaporates.
- Turn greens out into a bowl and let it cool to room temperature, then season with vinegar. Serve at room temperature, or refrigerate for up to 2 days and eat cold.
- Michael's Notes: The wine vinegar will cause the greens to lose their beautiful green color. You can omit it, but I think it improves their taste.
COUNTRY TURNIP GREENS

- Put the ham in a large stockpot over medium heat. Cook until the ham is crispy and the fat is rendered, about 8 minutes. Pour in the apple cider vinegar and scrape the bottom of the pot with a wooden spoon to lift up any brown bits.
- Meanwhile, rip the greens into large pieces to make it easier to fit all of them into the stockpot.
- Add the greens to the pot and season generously with black pepper. Pour in the chicken stock and stir to combine. Bring the greens to a simmer and cover the pot. Reduce the heat to medium low and cook until the greens are tender and the liquid is reduced by half, about 45 minutes. Remove the lid and continue to cook, stirring occasionally, until the liquid is nearly gone, about 10 minutes more. Serve immediately.
TURNIP AND MUSTARD GREENS WITH SMOKED BACON AND VINEGAR

- Wash the greens, remove the thick stalks, and coarsely chop the leaves.
- Heat a large sauté pan over medium heat and add the oil and bacon. Cook the bacon until it is about halfway rendered and still soft, 4 to 5 minutes. Add the onion and season with salt. Cook for 5 to 6 minutes, until the onion is fragrant, translucent, and beginning to turn golden. Add the greens and a big pinch of salt, lower the heat, cover, and cook, stirring occasionally, for about 15 minutes, until the greens are very soft and the water from the greens has evaporated. Adjust the seasoning and serve with the spicy vinegar.

QUICK TURNIP GREENS

Steps:
- Heat a quart of salted water to boiling in a saucepan. Cook greens until just tender, about 5 minutes; drain.
- In a skillet cook bacon. Remove and drain on paper toweling.
- Add onion to the skillet and cook until soft, 6 to 7 minutes, stirring occasionally. Add the greens and toss. Stir in the sugar and the vinegar and cook until heated through, about 2 or 3 minutes.
- Crumble bacon and sprinkle over top. Add a couple of dashed of hot sauce. Season with salt and pepper to taste and serve.
