CHEESY SAUSAGE BRUSCHETTA RECIPE
This delicious Cheesy Sausage Bruschetta is the perfect accompaniment to any grilling or bbq meal. Lightly grilled bread topped with a mixture of sausage, peppers, onions and shredded cheese, then baked.

Steps:
- Thinly slice the onion and bell pepper. Chop the sausage (without the casing) into small bits. In a medium to large frying pan add the olive oil, minced garlic, thinly sliced veggies, sausage and spices.
- Cook on medium heat (uncovered) until tender and sausage is browned, stirring occasionally. Once it is cooked, move the topping to a clean bowl to cool, then add the shredded cheese and stir to combine.
- Pre-heat oven to 375F (190C). Line a medium/large cookie sheet with parchment paper.
- Grill the sliced bread, either on a pan grill or bbq, place the slices on the prepared cookie sheet. Divide the topping between each slice of bread. I added a little extra cheese on top. Then place the sheet in the hot oven and bake for about 5 minutes or until the cheese has melted. Serve immediately. Enjoy!

SPICY SAUSAGE AND BROCCOLINI PANINI

- Place a medium skillet over medium-high heat. Add 1 tablespoon of olive oil and the sausage to the skillet and cook, stirring often and breaking the sausage apart with the back of a wooden spoon, until the sausage is cooked and beginning to brown, about 4 minutes. Add the broccolini and salt and continue to cook until the broccolini is tender, an additional 6 minutes. Allow the mixture to cool.
- In a medium bowl, mix together the sausage mixture and provolone until combined. Place 4 slices of bread on a cutting board and divide the mixture evenly among the slices. Top with the remaining slices of bread.
- Heat a large skillet or griddle over medium heat. Brush with 1 1/2 tablespoons of the remaining oil and place 2 sandwiches in the skillet. Cook until lightly browned and crispy on the bottom, about 3 minutes. Flip the sandwiches and cook until crispy on the bottom and the cheese is melted, an additional 3 minutes. Continue with the remaining oil and sandwiches. Cut into squares or triangles and serve.
SPICY SAUSAGE BOLOGNESE WITH PAPPARDELLE

- In a Dutch oven or medium pot heat the olive oil, 2 turns of the pan, over medium to medium-high heat. Add the sausage and brown and crumble. Add the garlic, carrots, celery and onions, and cook to soften, 10 minutes. Stir in the wine and let it absorb, then add the stock, tomatoes, cinnamon, clove and nutmeg. Bring the sauce to a bubble. Season with salt, and then stir in the basil. Simmer gently for about 15 minutes, stirring occasionally. Cool the sauce and store for a make-ahead meal.
- Reheat over medium heat and stir in the milk, cooking until well incorporated.
- Heat a large pot of salted water to boil, and then cook the pappardelle to al dente. Reserve a cup of the starchy cooking water just before draining the pasta.
- Return the pasta to the drained pot and toss with half of the sauce and some starchy water. Serve the pasta in shallow bowls topped with extra sauce and some grated Pecorino-Romano.

- In a small bowl, mix together the spicy honey mustard ingredients. Set aside.
- Form the raw Jimmy Dean Premium Pork Sausage into 8 small patties about the size of your biscuits.
- In a large frying pan, heat oil over medium high heat for about 1 minute. Add patties and cook for 4 to 5 minutes on each side, or until they are cooked through. Remove from heat. Lay Swiss cheese slices on top and allow them to melt over the patties.

- Cut french bread into thin slices (
- Cut tomatoes into thin slices and set aside.
- Keeping separated finely chop shallot, green onion, celery, cilantro, parsley, basil and oregano.
- In a pan, using 2 oz olive oil sauté until soft (3-5 min): shallot, 3 tbls green onion, celery, parsley, basil,1 1/2 tbls cilantro, 1 tbls pressed garlic.
- In a bowl mix together all cheeses (may have to microwave cheese 30 sec), cooled down sautéed ingredients from pan, garlic powder white pepper and cayenne pepper, best if refrigerated a few hours before spreading.
- Put butter remaining olive oil and remaining garlic in a cup and melt down in a microwave.
- Spread sliced bread on large cookie sheet.
- Stir butter and generously brush it on one side of each piece of bread.
- Put bread in broiler until lightly toasted.
- Spread cheese mixture on cooled down bread.
- Place sliced olives (2-3) on each piece.
- Top with 2 or 3 slices of tomato.
- Mix remaining cilantro and green onion and sprinkle over each slice.
- You may have to chop some more cilantro and green onion for this.
- Remember cilantro has a very powerful taste so use sparingly.
- You can serve cold or put in oven at 350 for 5-8 minutes not allowing cheese to run.
SPICY SAUSAGE BROCCOLI RABE PARMESAN

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 6 minutes. Drain well in a colander set in the sink.
- Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the broccoli rabe, recover, and steam until just tender, about 2 minutes depending on thickness.
- Place the Italian sausage into a large skillet over medium heat, and cook until browned and no longer pink inside, about 5 minutes. Remove sausage from pan and set aside; drain excess grease, leaving about 1 tablespoon of sausage drippings in the pan. Sprinkle in the garlic, and cook until it starts to brown, about 1 minute; stir in half the broccoli rabe. Cook and stir until the rabe has wilted, and add the remaining rabe and the diced tomatoes. Cook until all the rabe is tender, about 5 minutes; sprinkle with salt and black pepper.
- Return the sausage to the skillet, and cook just until the meat is hot; sprinkle with Parmesan cheese, crushed red pepper flakes, and a drizzle of olive oil. Serve over hot rotini.
