HOW TO MAKE HOT CHILLI SALT
This is the ideal chilli hot salt for seasoning your food and also for cooking everything from soups to stews and so much more

Steps:
- finely chop the chilli pepper as small as you can
- mix the cholled chilli pepper with the salt crystals and spreat out on baking parchment
- leave in a warm place (above radiator, top of fridge, on Aga) for 2-3 days till it has dried out
- pack into small jar
- this will keep for up to 6 months

LIME-CHILI SALT
Steps:
- Combine the salt, lime zest and chili powder in a small bowl and use immediately. Great for garnishing cocktails, seasoning tortillas or as a finishing salt for a dish.
CHILI GRILL SALT
This is a seasoned salt recipe chock full of healtful spices. Use it anywhere you would use Lawry's or Johnny's. Good quality sea salt is full of micro nutrients just not found in commercial table salt. I like Real Salt for it's price to nutrient ratio, but celtic sea salt would be a great choice too. Chiles and turmeric are full of antioxidants and cancer fighting nutrients especially needed when grilling food. I use mostly New Mexico chile powder to keep the heat level down, but a little Arbol or Cayenne will really kick up the heat. Kelp is an amazing natural source of iodine and other sea minerals and doesn't add any strange flavor to this flavorful mix. Onion and garlic are also known for their anti biotic and anti cancer properties. You just can't go wrong with this stuff!

GRILLED CHILI STEAK WITH GARLIC-LIME BUTTER
As we head into grilling season, this is something you should definitely add to the rotation. New York strip steaks are dry-brined with a chili rub, grilled to perfection, and topped with a rich garlic-lime butter providing a flavor profile similar to that of a bowl of chili. Serve with a cold potato salad, baked or barbecued beans, or a green salad if desired.

- Mix chili powder, cumin, chipotle powder, pepper, and cayenne for rub together in a small bowl.
- Place steaks on a large plate. Sprinkle kosher salt generously on both sides, then sprinkle rub over the salt.
- Twist 3 pieces of foil into 1/2-inch diameter rolls and place them under the steaks to act as a rack and lift the steaks up from the plate. Pop steaks into the fridge and leave uncovered to dry-brine for 3 to 12 hours.
- Meanwhile, place garlic and salt for garlic-lime butter in a mortar. Grind to a paste with a pestle. Add butter and lime zest and stir with a small spoon to combine. Set aside.
- Preheat a charcoal grill for high heat. Remove steaks from the refrigerator and brush with vegetable oil on both sides.
- Place steaks on the preheated grill and cook until firm and reddish-pink and juicy in the center and meat gently springs back to the touch, about 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C) for medium-rare.
- Remove from the grill and top with garlic-lime butter.

- Rinse lamb chops and pat dry. Set aside.
- Whisk lemon juice, white wine, brown sugar, parsley, mint, vinegar, chili powder, chipotle powder, garlic, Worcestershire, liquid smoke, salt, and black pepper together in a large mixing bowl to emulsify. Add lamb chops. Marinate in the refrigerator, 8 hours to overnight.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Cook lamb chops on the preheated grill until browned and only slightly pink in the centers, brushing with marinade frequently, about 6 minutes per side. Stand chops upright for the final turn, which heats the bone and cooks the meat internally. An instant-read thermometer inserted into the center should read at least 140 degrees F (60 degrees C). Rest lamb chops for about 3 minutes before serving.

- Preheat oven to 200 degrees. Finely zest limes onto a parchment-lined baking sheet. Sprinkle 2 teaspoons salt over zest; combine with your hands. Spread mixture into an even layer and bake until dried, about 20 minutes. Let cool completely, then stir in chile powder. Chile-lime salt can be stored in an airtight container at room temperature up to 2 weeks.
- Peel back corn husks toward stem ends; remove silks. Rewrap husks and tie with long pieces of husk or twine. Soak corn in a large bowl of water 30 minutes.
- Preheat grill to medium-high. Grill corn, turning, until steamed through and charred in places, 12 to 15 minutes. To serve, unwrap husks, brush each ear with butter, sprinkle with chile-lime salt, and sprinkle with cheese. Garnish with chopped jalapenos and cilantro.

- 1. Open the bottom vent of a charcoal grill completely. Light a charcoal chimney starter filled with charcoal. When the coals are covered with gray ash, pour them onto the bottom grate of the grill. Adjust the vents as needed to maintain an internal temperature of 400 450 F. (If using a gas grill, preheat to medium-high, 400 to 450 F.)
- 2. Place a cast-iron Dutch oven on the unoiled grates. Add the oil and heat until shimmering. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring constantly, until fragrant, about 1 minute. Add the ground beef and cook, breaking up chunks with a wooden spoon, until browned, 8 to 10 minutes. Stir in the chile powder, salt, cumin, cinnamon, cocoa, allspice and cayenne. Cook, stirring constantly, until fragrant, about 1 minute. Stir in the tomato sauce, water and vinegar, and allow the mixture to come to a simmer.
- 3. Adjust the vents as needed to reduce grill internal temperature to 250 to 300 F. (If using a gas grill, reduce temperature to low, 250 to 300 F.) Cook, covered, stirring occasionally, until the meat is tender and the sauce has thickened, about 1 hour.
