Steps:
- Saute ground beef, onion and garlic in the olive oil until cooked.
- Add all remaining ingredients to big pot and add beef and onions. Simmer 2-3 hours.
- Freezes well.

Steps:
- Put 2 tbsp olive oil in pan. Crush garlic and finely chop bell pepper. Add to pan.
- Saute slowly till soft. Add crushed tomatoes, seasoning and sweetener. Let sauce simmer 7 minutes. Then add 1 more tbsp olive oil and simmer 3 more minutes.
- Saute chicken in 2 tbsp olive oil with salt and pepper. Once done place in pan and cover each breast with 1/4 cup cheese.
- Place in broiler till melted then top with marinara sauce.

- Toss cauliflower with olive oil, garlic, and seasonings.
- Line Baking sheet with tin foil and spread cauliflower out.
- Bake at 400 for 40 minutes, stirring halfway through.

EASY CHEESY TACO CASSEROLE (SOMERSIZE LEVEL 1)
This is another one from my Somersize mailing list. It's good for Level 1, in spite of the small amount of flour it contains.

Steps:
- Heat olive oil in medium skillet.
- Saute onion in olive oil until soft.
- Brown ground meat with onion.
- When meat is almost cooked through, add taco seasoning.
- When meat is cooked completely, drain off grease and set aside to cool.
- In a large casserole dish, beat eggs.
- Open diced tomatoes and drain the juice off into a small mixing bowl.
- Add the flour to the juice of the tomatoes and mix well until the lumps are gone.
- Add flour/juice mixture to eggs and stir well.
- Add shredded cheese to egg mixture.
- Add ground beef and tomatoes to egg mixture and stir well.
- Bake in a preheated 350-degree oven for 1 hour, or until set and cooked all the way through.
- You can top with a layer of shredded cheese halfway through cooking time if desired.
- Serve topped with salsa and sour cream, if desired.

Steps:
- Salt and pepper the chicken, and cook in large skillet in olive oil.
- Once cooked through, remove chicken, and add rotel. Stir to remove all the bits from the bottom of pan. When the tomatoes are simmering add the cream cheese and cream.
- Stir until all is melted, and simmering gently. Add chicken back in, and cover. Cook over low for 5 minutes. Serve hot.
- Great over green beans.
