JUSTIN'S HOOSIER DADDY CHILI
This is a wonderful chili recipe that I have used to win chili cook-offs in Indiana. It's hearty and spicy award winning chili that is sure to hit the spot on a cold winter's night. The key is in using name brand tomato soup, I have tried it with others but haven't gotten the same results. Your friends will never guess the secret ingredient. Enjoy!

Steps:
- Crumble the ground beef into a soup pot over medium-high heat. Cook and stir until evenly browned. Drain off most of the grease. Add onion, red pepper flakes, and half of the cumin; cook and stir until onion is tender.
- Pour in the tomato soup, chicken broth, and crushed tomatoes. Season with chili powder, salt and pepper. Simmer for 30 minutes. Pour in the beans, and season with remaining cumin and cayenne pepper; simmer for another 30 minutes. Now enjoy.

AB'S CHILI POWDER

- Place all of the chiles and the cumin into a medium nonstick saute pan or cast iron skillet over medium-high heat. Cook, moving the pan around constantly, until you begin to smell the cumin toasting, approximately 4 to 5 minutes. Set aside and cool completely.
- Once cool, place the chiles and cumin into the carafe of a blender along with the garlic powder, oregano, and paprika. Process until a fine powder is formed. Allow the powder to settle for at least a minute before removing the lid of the carafe. Store in an airtight container for up to 6 months.
BEST EVER HOMEMADE CHILI POWDER
This homemade chili powder is much fresher than what you get in the store (unless you live in New Mexico or Mexico). At my house, this chili powder would only make enough to put in one batch of chili!

THE BEST CHILI
There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. Top it with your favorite garnishes and serve with plenty of tortilla chips.

- Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
- Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
- Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
- Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
- Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
- Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
- Top with sour cream, Cheddar and scallions. Serve with tortilla chips.
MR. MASON'S CHILI
My grandmother used to care for the Masons. Mr. Mason was a pioneer in the roadside food industry. He owned cafes in Kansas, Oklahoma, Missouri, and Arkansas that served chili and apple pie. He kept his chili recipe secret for decades. He lived to be 107 years old, and my grandma finally got his recipe.

- Place the ground beef and half the chili powder into a large saucepan over high heat, and cook until meat is browned, breaking the meat apart into crumbles as it cooks, about 10 minutes. Mix in the onion, and cook and stir until onion is softened, about 10 more minutes. Stir in garlic, and cook until fragrant, about 2 minutes. Stir in remaining chili powder, cumin, oregano, tomato paste, and cocoa powder, and cover pan.
- Reduce heat to a simmer, and cook until meat is tender and flavors have blended, mixing enough water to make a thick chili, about 1 1/2 hours. Stir occasionally.

- Prep. If possible start with whole dried chiles and make powders from them. Cut off the tops of the chiles with scissors and shake out the seeds. Poke around in the chile with a knife to get the rest. With the scissors cut the chilis lengthwise into two halves, and then into chunks about 1 inch square. Put them into a medium hot frying pan for about 2 minutes, no oil, then shake the pan to flip as many as possible and toast them for another 2 minutes. This brings out the flavorful oils, a process called blooming.
- Grind the chunks in a spice grinder, coffee grinder, blender, or food processor. I usually use my coffee grinder, but if you do, remember to clean it thoroughly when you are done or you'll spend the night on the couch (don't ask me how I learned this).
