CHILLI CON CARNE SOUP
This is a soupy version of a classic chilli - kept mellow so children can enjoy it too

Steps:
- Gently fry the onion and garlic in the oil for a couple of minutes until beginning to soften, then add the mince. Raise the heat and cook for 5 minutes, stirring from time to time, until the meat is no longer pink.
- Stir in the beans, tomatoes, stock, chillies, chocolate and plenty of salt and pepper. Bring to the boil, cover and simmer very gently for 1 hour, or longer if you have the time. (You can make it up to a day ahead to this point, then cool and chill.)
- Ladle into mugs or large cups and scatter with herbs, cheese and black pepper. You'll need spoons to eat it.

KAREN'S CHILI CON CARNE SOUP
A delicious and hearty chili con carne that is also easy to make. The small addition of brown sugar and touch of vinegar in combination with the chili powder gives the soup an enticing flavor trio. Add more or less to suit your individual tastes. Offer cornbread like my Mom did and you have a tasty, tempting meal.

Steps:
- Heat oil in a stockpot over medium heat. Add onions and garlic; cook and stir until tender, about 5 minutes. Add ground beef; cook and stir until browned and crumbly, 5 to 7 minutes. Mix in tomatoes, navy beans, chili beans, black beans, green bell pepper, celery, brown sugar, vinegar, chili powder, and salt. Bring to a boil. Reduce heat to medium-low and let simmer until thick, at least 1 hour.

- Heat oil in a Dutch oven over medium heat. Add beef, onion and garlic. Cook, stirring to break up beef, until browned, about 7 - 10 minutes. Drain off excess fat. Add chili powder and red pepper flakes; cook, stirring, for 1 minute.
- Stir in broth, tomatoes, beans, cocoa and salt. Bring to a boil.
- Reduce heat and simmer, covered, stirring occasionally, for 45 minutes.
- Serve topped with sour cream and cheese.

Steps:
- Coat a pan with cooking spray, sauté onion until it is softened.
- Stir in the beef mince and brown, Add the garlic, paprika and cumin, cooking for 1 minute.
- Stir in the crushed tomatoes and stock, cover and simmer for 30 minutes.
- Add the kidney beans and warm through.
- Scatter with the grated cheese and parsley before serving.

- 1.Add oil to large saucepan and heat. Add onion and cook until soft.
- 2.Add ground beef, increase heat and cook for 5 minutes, stirring from time to time, until the meat is no longer pink.
- 3.Stir in beans, tomatoes, stock, Mrs. Dash® Extra Spicy Seasoning Blend and chocolate. Bring to a boil, cover and simmer gently for 1 hour.
- 4.Ladle into mugs or large cups and garnish as desired.
THICK CHILI CON CARNE
Zesty "south of the border" specialty. This is the recipe for chili my mother has always used. It's not too hot and not too mild. It's just right. I entered it into a chili cookoff once and it won first place.

Steps:
- Cook ground beef and onion in 3 T hot butter until browned.
- Add the kidney beans and tomato soup and cook 10 minutes.
- Combine the chili powder, flour, water and salt and make into paste. Blend into ground beef mixture.
- Bring to a boil and then cover and cook over low heat, stirring frequently, 45 minutes. Depending on your taste, feel free to add more or less chili powder. Serve hot -- with crackers or warm bread.
- If you like your chili less thick, just add the chili powder in step three and omit the flour, water and salt.
