Instead of a marinade or a dry rub the spice mixture is mixed in with the ground beef, making this jerky slightly different form its more expensive brothers.

Steps:
- Stir salt, chili powder, garlic powder, onion powder, ginger, black pepper, and cayenne pepper together in a large bowl; add ground beef and mix well.
- Pass beef mixture through a meat grinder set with the finest blade.
- Preheat oven to 250 degrees F (120 degrees C). Place wire-racks onto baking sheets.
- Place 1/2 ground beef mixture between two sheets of heavy plastic on a solid, level surface. Firmly roll beef mixture to a thickness of 1/8 inch. Remove the top layer of plastic wrap, invert beef mixture onto prepared baking sheet, and remove the bottom layer of plastic wrap. Repeat for remaining beef mixture.
- Bake beef mixture in the preheated oven with the oven door slightly ajar for 2 1/2 hours. Rotate the baking sheet. Bake until jerky is cooked through, another 3 hours. Remove jerky from oven and cut into strips while warm.

TERIYAKI BEEF JERKY
This homemade beef jerky recipe is a sweet and savory snack for your next adventure! The fresh teriyaki marinade loads the jerky with tons of great flavor, and it couldn't be easier to make.

- Slice the meat into ⅛ - ¼ inch thick pieces, removing as much visible fat as possible. Place in a large zip-top bag and set aside.
- Mix the soy sauce, mirin, brown sugar, minced ginger & garlic, salt, and Prague powder, if using, in a small bowl until the sugar dissolves. Pour into the zip top bag with the meat, taking care to ensure that the meat is evenly coated. Place in the fridge to marinate 12-24 hours.
- After the meat has marinated, place the strips onto your dehydrator trays. Sprinkle with sesame seeds. Dehydrate at 160F for 4-6 hours, until the meat has dried. The general rule of thumb is if you bend a piece and it cracks, it's done - if you bend a piece and it breaks it's been cooked too long.
- Remove from the dehydrator and set aside to cool completely before sealing in a bag or tupperware.
- Jerky that has been marinated with Prague powder or Instacure will last a few weeks in a sealed bag at room temperature. Jerky marinated without any cure will last two weeks in your fridge.

CHINESE BEEF JERKY
Posted for ZWT II 2006 Asia as taken from Sunsets Chinese Cookbook. A favorite Chinese appetizer - more moist and less brittle than our cowboy jerky. You precook the meat in two stages: this eliminates the extensive drying that most Jerky requires. After this precooking, drying the meat in a moderately hot oven for a short time preserves it enough so you can keep it moist and tender for several months in the refrigerator. Cooking time includes cooling time.

- Cut meat lengthwise into long strips about 3 inches thick and wide. Place in a wide frying pan with the water, soy, sherry, sugar, salt, star anise, ginger, onions and chile peppers. Bring to a boil, then reduce heat, cover and simmer turning meat occasionally for 30 minutes.
- Remove meat from cooking liquid, cool, and chill for at least 1 hour or until firm. Thinly slice meat across the grain. Return meat slices to cooking liquid. Cook, uncovered, over medium heat, turning slices occasionally until all liquid is absorbed (about 50 minutes) Turn meat more frequently as liquid is absorbed. Discard onion, ginger, and star anise.
- Arrange strips of meat slightly apart in a single layer on cooky sheets. Bake, uncovered, in a 300 degree F oven until dry to the touch but still pliable (about 20 minutes) Pat dry any beads of oil with paper towels, let cool thoroughly. Place in plastic bag, seal, and store in refrigerator up to 2 months.

CHINESE-STYLE BEEF JERKY
Soy sauce, ginger, honey, and sesame oil give our Chinese-style beef jerky its Asian flavor profile. Plan on beginning at least two days in advance.

- In a small bowl, whisk together soy sauce, honey, sweet red wine, minced garlic, minced ginger, crushed red pepper, sesame oil, and white pepper.
- Pour into a heavy zip-top freezer bag and set aside.
- Semi-freeze flank steak or London broil flat for 30 minutes; this makes the meat much easier to cut thinly. Slice crosswise against the grain into paper-thin strips, about 4 inches long and 1 1/2 to 2 inches wide.
- Add meat strips to the marinade in the zip-top bag, seal, and massage marinade into the meat. Open the bag and squeeze out all the air and reseal.
- Refrigerate at least 12 hours.
- Remove the beef from the marinade, shake off any excess liquid, and pat dry with a paper towel.
- Arrange meat on racks set in foil-lined shallow baking sheets in a single layer, making sure the pieces do not touch each other so there is room in between each for air circulation to aid in drying.
- Let dry overnight on the countertop in a cool room. (Do not refrigerate.)
- Heat oven to 250 F. Remove and replace the foil lining under the racks in the baking sheets. Bake jerky for 30 minutes.
- Reduce heat to 175 F. Bake an additional 40 minutes until lightly browned but not burnt.
- Remove jerky from oven and let it continue to dry on the counter overnight in a cool room.
- Pack into airtight zip-top plastic bags or jars for storage.

- Marinading: Combine soy sauce, sugar, rice wine, five spice powder and water and whisk until sugar is fully dissolved. Add the beef strips, mix well and refrigerate them over night.
- Drying: Preheat the oven to 160C, place the strips over the baking tray and cook for 20 minutes. flipping the beef jerky once about halfway through. Cool the beef strips to the room temperature to further the drying process. ( Or deep fry the beef strips in the oil over the low-medium heat until they are brown and dry.)
- Adding flavours(optional): In a saucepan, add the oil and sesame seeds and cook over the medium heat until the sesame seeds turn slightly golden. Add the salt and chilli powder and cook for about 5 seconds. Turn off the heat and stir in the dried beef jerky.
