1 lb boneless chicken, cut into bite-size pieces
2 garlic cloves, minced
0.5 (16 ounce) package coleslaw mix
1/3 cup hoisin sauce
1/3 cup soy sauce
1/4 cup light brown sugar, packed
1 tablespoon cornstarch
1 (5 ounce) can chow mein noodles
5 flour tortillas, burrito size

Steps:

  • In a small bowl, mix hoisin sauce, soy sauce, brown sugar and corn starch.
  • Spray a large skillet with cooking spray.
  • Add garlic and chicken, cook until chicken is cooked through.
  • Add cole slaw mix and cook 5 minutes until wilted.
  • Add sauce to skillet and cook until heated through.
  • Meanwhile, heat tortillas according to package instructions.
  • Just before serving, add chow mein noodles to the skillet, and stir to combine.
  • Serve by spooning chicken mixture over tortillas and rolling up burrito-style.

8 boneless skinless chicken breast halves
8 thin slices deli ham
4 slices provolone cheese or 4 slices mozzarella cheese, halved
2/3 cup seasoned bread crumbs
1/2 cup grated romano cheese or 1/2 cup parmesan cheese
1/4 cup minced fresh parsley
1/2 cup milk

Steps:

  • Flatten chicken to 1/4-inch thickness.
  • Place a slice of ham and cheese on each piece of chicken.
  • Roll up from a short side and tuck in ends; secure with a toothpick.
  • In a shallow bowl, mix crumbs, grated cheese and parsley.
  • Pour milk into another bowl.
  • Dip chicken rolls in milk, then roll in crumb mixture.
  • Wrap and freeze roll-ups for up to 2 months.
  • To use frozen chicken--completely thaw in the refrigerator.
  • Unwrap roll-ups and place on a greased baking sheet.
  • Spritz with nonstick cooking spray.
  • Bake uncovered, at 425 degrees for 30 minutes or until juices run clear.

4 skinless, boneless chicken breasts
1 cup dried bread crumbs, seasoned
½ cup grated Parmesan cheese
¼ cup butter, melted
1 (7 ounce) package garlic cheese spread

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pound chicken breasts until thinned out. In a shallow dish or bowl mix together bread crumbs and cheese. Dip one side of each breast into melted butter or margarine, then into crumb/cheese mixture. Place a dollop of cheese spread at one end of each chicken breast, on the side of the breast not dipped in the mixture. Roll up each breast and secure with toothpicks.
  • Place rollups in a lightly greased 9x13 inch baking dish and drizzle any remaining butter or margarine over all. Bake in the preheated oven for 35 to 40 minutes, or until cooked through and juices run clear.

Excitingly Good! My neighbor, Millie, gave me this recipe and my family has enjoyed them ever since. The cream cheese/chicken filling is delicious! Very popular with teenagers and children.

1 chicken breast, cooked and shredded
1 (8 ounce) refrigerated crescent dinner rolls
1 (3 ounce) cream cheese
1/2 cup butter, melted
1 1/2 cups seasoned stuffing mix (Pepperidge Farm)
1/4 cup water
1/4 cup sour cream
1 (10 ounce) cream of mushroom soup

Steps:

  • Melt cream cheese slightly in a microwave. Mix with shredded chicken.
  • Separate rolls. Start at widest part of rolls and spread with chicken mixture. Roll up and seal at point.
  • Dip each roll into melted butter and then roll in stuffing to coat. Place roll ups in a greased 7 x 11 (best) or 9 x 13 inch pan.
  • Mix mushroom soup, sour cream and water. Pour mixture over roll ups. Bake in a 375 degree oven until light brown for approximately 20 to 25 minutes.
  • Enjoy!

8 skinless, boneless chicken breasts
8 slices cooked ham
4 slices Swiss cheese, cut into 1 inch pieces
salt and pepper to taste
1 teaspoon dried thyme
¼ cup melted butter
½ cup cornflakes cereal crumbs
1 (10.75 ounce) can condensed cream of chicken soup
½ cup sour cream
1 teaspoon lemon juice

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place each chicken breast half between sheets of plastic wrap and pound with a meat mallet to about 1/8 inch thickness. Place a finger of cheese on each ham slice and sprinkle lightly with thyme and salt and pepper to taste. Roll up seasoned ham and cheese 'jellyroll-style', then roll each chicken breast with ham and cheese inside. Tuck in ends and fasten with toothpicks.
  • Place melted butter in a small bowl and place cereal crumbs in a shallow dish or bowl. Dip each chicken roll in butter or margarine, then roll in crumbs, turning to coat thoroughly. Place coated rolls in a lightly greased 9x13 inch baking dish.
  • Bake at 400 degrees F (200 degrees C) for about 40 minutes or until chicken is golden brown and juices run clear. Serve with cordon bleu sauce, if desired.
  • To Make Cordon Bleu Sauce: In a small saucepan mix together the soup, sour cream and lemon juice. Heat over low heat, stirring occasionally, and serve hot over chicken rolls. Makes about 2 cups; 8 servings of 1/4 cup each.
