Homemade Chili Garlic Sauce (Huy Fong Brand Copycat) image

This homemade chili garlic sauce recipe is just like the famed Huy Fong brand, giving you authentically garlicky and spicy results that are rich and well balanced. Use it to create your own favorite Asian recipes! {Vegan, Gluten-Free}

8 oz (225 g) red jalapeno peppers
2 heads garlic
1 teaspoon salt
1 teaspoon sugar
1/3 cup white distilled vinegar
1 tablespoon water ((plus 1 teaspoon water to make the cornstarch slurry))
1 teaspoon cornstarch

Steps:

  • Combine the peppers, garlic, salt, sugar, vinegar, and water in a blender. Blend on medium until chunky. Remove 1/4 of the blended mixture.
  • Turn the blender to high and liquify the remaining contents of the blender.
  • Strain the liquified mixture so that you are left with just the juices.
  • Add the strained juice and reserved chunky bits to a pot.
  • Meanwhile, add the cornstarch to a small bowl with 1 teaspoon water, stir to mix well to make a slurry.
  • Heat the pot over medium-high heat. Once warm, add the cornstarch slurry and bring to a boil.
  • After reaching a boil, remove from heat and allow to cool completely. The chili garlic sauce is ready to serve.
  • To store, transfer the chili garlic sauce to a clean mason jar and seal it. Store in the fridge for up to 1 month.

Spicy chile crisp is a versatile condiment. Use it on noodles, over stir-fries, on eggs, with cold leftover meats, or in cold salads. (It's especially good paired with yogurt and crisp, refreshing vegetables like cucumbers or raw snap peas.)

Number Of Ingredients 13

4 dried chiles de árbol, stems and seeds removed (see Note)
2 dried ancho chiles, stems and seeds removed (see Note)
1 cup neutral oil, such as canola, rice bran or soybean oil
4 garlic cloves, smashed with the side of a knife, skins discarded
1 (1-inch) unpeeled knob fresh ginger, smashed with the side of a knife
1 tablespoon Sichuan peppercorns
1 whole star anise pod
1 teaspoon whole cumin seeds
1 teaspoon whole fennel seeds
1 tablespoon granulated sugar
1 tablespoon sesame seeds (black, white or a mix)
1/2 teaspoon kosher salt
1/4 teaspoon MSG powder, such as Aji-no-moto or Ac'cent (optional)

Steps:

  • Using a pair of kitchen shears, cut all of the chiles into 1/2-inch pieces. Toast chiles in a dry wok or saucepan over medium heat, stirring and shaking constantly, until fragrant and lightly darkened in color, about 2 minutes.
  • Transfer toasted chiles to the bowl of a food processor or mortar and pestle, and pulse or pound until the chiles break into 1/8- to 1/4-inch pieces that resemble store-bought red-pepper flakes or flaky sea salt. (Be careful not to overprocess.) Transfer the chile flakes to a heat-proof mixing bowl.
  • Combine oil, garlic, ginger, Sichuan peppercorns, star anise, cumin and fennel seeds in a small saucepan. Heat over low heat until gently bubbling, then cook for 10 minutes, adjusting heat to maintain the barest of bubbling.
  • Set a fine-mesh strainer over the bowl with the chiles. Pour the hot oil through strainer over the chiles. Discard solids. Stir sugar, sesame seeds, salt and MSG, if using, into oil mixture until combined. Allow to cool, transfer to a sealed container, and let rest at room temperature overnight before using. You can store chile oil in a cool, dark pantry for a few weeks, or indefinitely in the refrigerator.

This recipe yields a large amount and will keep in the refrigerator for up to a month. Use in stir-fries, noodle soups, or anywhere you need an added hit of flavor and heat.

1/4 cup crushed red-pepper flakes
2 tablespoons Szechuan peppercorns
2 cinnamon sticks, broken in half
1 star anise
1 cup safflower or other neutral oil

Steps:

  • Place red-pepper flakes in a small heat-resistant bowl or pint-size jar. In a small saucepan fitted with a candy thermometer, combine peppercorns, cinnamon, star anise, and oil over medium-low heat. Heat mixture until it registers 325 degrees on the thermometer, 10 to 12 minutes. Turn off heat and let steep 8 to 10 minutes until temperature reaches about 240 degrees. Pour through a strainer into bowl or jar with pepper flakes and let cool completely. Transfer to an airtight container or seal lid if using a jar. The chili oil can be stored in the refrigerator for up to 4 weeks.

  • Put chopped peanuts, roasted sesame seeds, red pepper flakes and salt into a medium bowl and set it aside. Heat your oil in pan over low heat, and add the scallions, ginger, garlic, star anise, cinnamon stick, and Sichuan peppercorns. Allow these aromatics to slowly infuse into the oil, until everything is kind of browned and wrinkly and fragrant. Discard the spices and pour the hot infused oil into the peanut mixture. Give everything a stir and cover the bowl with a plate to seal everything inside. Walk away and don't come back until everything else is ready!
  • Bring a medium pot of water to a boil (there should be enough water to submerge the chicken) along with the ginger and scallion. Once it's boiling, add the chicken (once it's added the water will probably stop boiling because of the temperature change).
  • Mix all of the Step 3 ingredients in a bowl. Now combine the mixture you just made with the peanut mixture you made in Step 1. Pour as much as you want over the chicken. We put about 2/3 of the mixture over the chicken and used the rest for a cold noodle lunch the next day (a highly recommended action!).
