Found this on About.com: Chinese Food. People are often surprised to discover that this popular dish doesn't contain lobster at all. The name comes from the fact that one of the ingredients is fermented black beans, which the Cantonese use when preparing Cantonese lobster.

1/4 lb ground pork
2 teaspoons soy sauce
pepper, to taste
1 teaspoon cornstarch
1 tablespoon fermented black beans
1 garlic clove
2 green onions (spring onions, scallions)
1 tablespoon soy sauce
1 tablespoon sherry wine
1 teaspoon granulated sugar
3/4 cup chicken broth
1 tablespoon cornstarch
2 tablespoons water
2 eggs, beaten
1/4 teaspoon salt
2 tablespoons oil, for stir-frying

Steps:

  • Combine the ground pork with the soy sauce, pepper and cornstarch. Marinate the pork for 15 minutes.
  • Rinse the black beans, letting them sit in the water for a few minutes to soften. Drain. Use a cleaver or knife to finely chop the beans. Peel and mince the garlic clove. Mash the garlic together with the soaked black beans. Wash the green onion and cut on the diagonal into 1-inch pieces.
  • In a small bowl, mix together the soy sauce, sherry, sugar, and chicken broth. Set aside. In a separate small bowl, dissolve the cornstarch in the water and set aside.
  • Lightly beat the eggs with the salt.
  • Heat the wok over medium high to high heat. Add 2 tablespoon oil, swirling to coat the sides. When oil is ready, add 1/2 of the mashed black beans and garlic mixture. Stir-fry until aromatic. Add the ground pork. Stir-fry until it changes color. Remove and clean out the wok.
  • Add 1 tablespoon oil. When the oil is hot, add the second half of the bean and garlic mixture. Stir-fry until aromatic. Add the sauce. Give the cornstarch and water mixture a quick re-stir and add to the sauce, stirring quickly to thicken. Add the ground pork back into the pan. Stir in the green onion.
  • Stir in the beaten eggs. Remove the sauce from the heat, pour over shrimp or lobster and serve.

I love lobster sauce and this was published in the Boston Herald as an answer to a request. by the way, it has no lobster in it in case you never had it before! I'm revising the quantities because I think they made a mistake on the amount of water. I used more black bean sauce and garlic, subbed the molasses with sugar because I didn't have any molasses and left out the egg. I like my way better!

1/3 lb ground pork
1/2 cup water
2 tablespoons black bean sauce
1 tablespoon minced garlic
1 teaspoon molasses (optional)
cornstarch, as needed for thickening
1 egg (optional)
salt

Steps:

  • Place the ground pork in a wok or large saute pan.
  • Stir fry until the pork is about 3/4 cooked.
  • Add the water, black bean sauce and molasses or sugar.
  • Thicken to taste with the cornstarch.(Mix cornstarch with some water before adding to the pan).
  • While stirring, add the egg. (optional).
  • Continue stir frying as the egg cooks and the sauce heats through.
  • Season to taste.
  • The cooking time depends on the type of pan and temperature of your stove top.
  • Serve with rice.

I've always wondered why it's called lobster sauce when there is no lobster in the recipe nor does it taste like lobster. To the best of my knowledge Chinese restaurants use pork so it could be an alternative to the ground beef.

4 garlic cloves, minced
1/2 teaspoon ground pepper
1 lb ground beef (diet lean)
2 cups sliced scallions
4 cubes instant chicken-flavored broth (Herb-Ox)
3 cups hot water
4 tablespoons sugar
4 tablespoons oyster sauce
4 teaspoons soy sauce
6 teaspoons cornstarch

Steps:

  • Saute' meat and seasonings.
  • Add scallions.
  • Dissolve Herb-Ox in water and add to meat.
  • Add sugar, oyster sauce and soy sauce.
  • Mix corn starch with some of the liquid to thicken.

2 cloves garlic, minced
1/2 teaspoon salt
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 1/2 cups water
1 lb raw shrimp, peeled and deveined
3 tablespoons cornstarch, in
1/4 cup water
3 eggs, slightly beaten
3 green onions, sliced thin

Steps:

  • Heat wok.
  • Stirfry pork, breaking apart any chunks.
  • Add garlic and salt.
  • Add soy, oyster sauce and water to pork.
  • Cover and boil five minutes.
  • Add shrimp and cook until pink and cooked through.
  • Thicken mixture with cornstarch slurry.
  • Cook until mixture is clear and thick.
  • Add green onions and beaten eggs, stirring constantly.

4 teaspoons extra virgin olive oil
1/2 lb large shrimp, peeled and deveined
1/2 lb lobster meat, cooked, cut into bite-size pieces
3 garlic cloves, minced
1/2 teaspoon thyme
1/4 teaspoon crushed red pepper flakes
1 (14 1/2 ounce) can crushed tomatoes
1/4 cup tomato paste

Steps:

  • Cook linguine according to package directions, omitting salt if desired. Drain and transfer to serving bowl.
  • Heat 2 teaspoons of oil in a large non-stick skillet over medium-high heat. Add shrimp and cook just until opaque in the center. (1-1/2 to 2 minutes per side)Transfer to a plate.
  • Heat 1 teaspoon of the oil in the same pan and add the lobster pieces, stirring frequently until just heated through. Transfer to the plate with the shrimp.
  • Heat remaining 1 teaspoon of oil in the skillet over medium heat. Add the garlic, thyme and crushed red pepper. Cook, stirring constantly until fragrant, about 30 seconds. Stir in the tomatoes and tomato paste and cook until slightly thickened.
  • Return shrimp and lobster to the skillet and cook stirring frequently tunil heated through.
  • Serve at once over linguine.

1 lb medium raw shrimp (in shells)
1 teaspoon cornstarch
1/4 teaspoon salt
1/4 teaspoon toasted sesame oil
1/4 cup chicken broth
1 tablespoon cornstarch
1 teaspoon dark soy sauce
1 tablespoon vegetable oil
2 tablespoons vegetable oil
1/2 lb ground lean pork
2 garlic cloves, finely chopped
1 teaspoon finely chopped gingerroot
1/2 cup chicken broth
2 tablespoons dry white wine
2 eggs, slightly beaten
2 green onions, chopped (with tops)

Steps:

  • Peel shrimp. Make a shallow cut length wise down back of each shrimp; wash out vein. Pat dry with paper towels. Toss shrimp, 1 teaspoons cornstarch, the salt and sesame oil in medium bowl. Cover and refrigerate 30 minutes.
  • Mix 1/4 cup broth, 1 teaspoons cornstarch and the soy sauce.
  • Heat wok until very hot. Add 1 Tbs. vegetable oil; tilt wok to coat side. Add shrimp; stir fry 3 minutes or until pink. Remove shrimp from wok.
  • Heat wok until very hot. Add 2 Tbs. vegetable oil; tilt wok to coat side. Add pork, garlic and gingerroot; stir fry 1 minute.
  • Add 1/2 cup broth and wine; heat to boiling. Stir in cornstarch mixture; heat to boiling.
  • Gradually pour in eggs over high heat. stirring constantly so eggs form threads. Remove from heat; stir in shrimp. sprinkle with green onions.
