When our children were young, I prepared this recipe regularly because it's fast and easy. Loaded with cheese, Italian sausage, fresh mushrooms and garlic, the recipe makes two omelets, but the ingredients can easily be increased to suit larger families.-Catherine Fontana, Fox Lake, Illinois

1 fresh Italian sausage link (4 ounces), casing removed
1-1/2 cups sliced fresh mushrooms
10 large eggs
1/2 cup grated Parmesan cheese
2 to 4 garlic cloves, minced
1/4 teaspoon pepper
1/4 to 1/2 cup minced fresh parsley
4 teaspoons olive oil, divided

Steps:

  • In a 10-in. nonstick skillet, cook sausage and mushrooms over medium-high heat 4-6 minutes or until sausage is no longer pink, breaking up sausage into crumbles. Remove with a slotted spoon; wipe skillet clean., In a large bowl, whisk eggs, cheese, garlic and pepper until blended. Stir in parsley., In same skillet, heat 2 teaspoons oil over medium-high heat. Pour in half of the egg mixture. Mixture should set immediately at edges. As eggs set, push cooked portions toward the center, letting uncooked eggs flow underneath. When eggs are thickened and no liquid egg remains, spoon half of the sausage mixture on one side; fold omelet in half., Cut omelet in half; slide onto serving plates. Repeat with remaining ingredients.

1 (16 ounce) package farfalle (bow tie) pasta
1 pound mild Italian sausage links
⅓ cup water
1 clove garlic, minced
½ large onion, sliced
1 medium green bell pepper, sliced
1 medium red bell pepper, sliced
1 tablespoon Marsala wine
1 (14.5 ounce) can Italian-style diced tomatoes, undrained
1 pinch dried oregano
1 pinch black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente; drain.
  • Place whole sausages and 1/3 cup water in a skillet over medium-high heat. Cover, and cook 5 to 8 minutes. Drain and thinly slice.
  • Return sausage to skillet. Stir in garlic, onions, peppers, and Marsala wine. Cook over medium-high heat, stirring frequently, until sausage is cooked through. Stir in diced tomatoes, black pepper, and oregano. Cook about 2 minutes more, then remove from heat. Serve over cooked pasta.

1/4 pound bulk pork sausage
2 tablespoons chopped onion
2 tablespoons chopped sweet red pepper
1/4 cup sour cream
3 eggs, separated
3 tablespoons milk
1/4 teaspoon salt
1/4 teaspoon baking powder
1/8 teaspoon pepper
1 tablespoon butter

Steps:

  • Crumble the sausage into a small microwave-safe dish; add onion and red pepper. Cover and microwave on high for 2 minutes; drain. Stir in sour cream; set aside., In a small bowl, whisk the egg yolks, milk, salt, baking powder and pepper. In a large bowl, beat egg whites until stiff peaks form. Gently fold into egg yolk mixture. , Place the butter in a greased 9-in. microwave-safe pie plate. Microwave on high for 30 seconds. , Pour egg mixture into plate. Microwave, uncovered, at 50% power for 3-5 minutes or until partially set. Lift edges, letting uncooked portion flow underneath. Cook at 50% power 2-3 minutes longer or until eggs are set. 1 green onion, chopped
1/4 teaspoon salt
1/4 teaspoon msg (optional)
black pepper
1 tablespoon vegetable oil
2 sweet Chinese sausage (sliced 1/2 inch thick)

Steps:

  • Add eggs, green onion, salt, MSG, and pepper in a large bowl and lightly beat together.
  • In a non-stick skillet heat oil, add sweet sasuage and cook for 1 or 2 minutes until lightly brown.
  • Drain sausage and add to egg mixture, beat together lightly.
  • Add entire mixture to the same skillet you used for cooking the sausage.
  • Cook for about 2 to 3 minutes on each side, or until lightly brown.
  • Serve with steamed rice.

Also, other ingredients can be added, I usually add some shrooms and a dash of cayenne pepper, use your imagination. Do ahead: you can cook the sausage and onions the day before and refrigerate. 2 tablespoons olive oil
1 small onion, diced
1/2 lb Italian sausage, casings removed
8 large eggs
1/3 cup whole milk
1 teaspoon kosher salt
fresh ground black pepper
1 red bell pepper, diced
1 1/2 cups grated gruyere cheese
1/4 cup fresh flat-leaf parsley, plus
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 425 degrees F.
  • Lightly butter an 8 by 8-inch baking dish.
  • Heat the oil in a medium skillet over medium-high heat. Add the onion and cook until translucent, about 3 minutes. Add the sausage and cook until brown, about 5 minutes. Set the pan aside to cool.
  • In a large bowl, whisk together the eggs, milk, salt and pepper until smooth, about 20 seconds.
  • Add the red bell pepper, 1 cup of Gruyere cheese and 1/4 cup of parsley. Stir in the onion mixture.
  • Pour the batter into the prepared pan. Sprinkle with the remaining cheese. Bake for 20 to 25 minutes or until golden brown.

Cover; cook until vegetables are tender, stirring occasionally, about 12 minutes. Cool slightly.
  • Preheat broiler. Whisk eggs, salt and pepper in large bowl to blend; add vegetable mixture. Wipe out skillet. Heat remaining 2 teaspoons oil in same skillet over medium-low heat. Pour egg mixture into skillet. Sprinkle with cheese. Cover skillet and cook until eggs are set on bottom and cheese melts, about 10 minutes.
  • Place skillet under broiler and cook just until eggs are set on top and cheese bubbles, about 2 minutes. Transfer omelet to platter. Cut into wedges and serve.
