CHIPOTLE CHILI RECIPE

This chunky chipotle chili recipe is made with a mix of peppers, chili seasoning, and lots of chipotles in adobo sauce for the best rich and smoky flavor.

Number Of Ingredients 14

1 tablespoon olive oil
1.5 pound ground turkey or ground beef (I'm using a combination of both)
1 large onion chopped
1 jalapeno pepper (chopped)
1 poblano pepper (chopped)
1 hot chili pepper (chopped (for a spicier version - try a habanero or ghost pepper - optional for a nice and extra spicy chili))
4 cloves garlic chopped
2 cans red kidney beans
3 cans fire roasted tomatoes (42 ounces, or use equivalent fresh)
2 tablespoons chili powder
1 7- ounce can chipotles in adobo sauce (use half the can for a milder chipotle flavor)
1 teaspoon freshly ground cumin
1 teaspoon red chili flakes
Salt and pepper to taste

Steps:

  • Heat the oil in a large pot to medium-high heat and add the ground turkey (or beef), onion and peppers. Cook them down about 10 minutes, or until the meat is cooked through and the vegetables are softened.
  • Add the garlic and cook another minute, stirring.
  • If using fresh tomatoes, chop them and add them to the pot. Cook about 10 minutes to let them break down. If using canned fire roasted tomatoes, just add them to the pot and go to the next step.
  • Add the remaining ingredients and give it all a good stir.
  • Reduce the heat and cook the chili on low heat for at least 1 hour to let the flavors develop, stirring every now and then. Adjust for seasonings if you wish. Alternatively, you can transfer everything to a slow cooker or crock pot at this stage and cook on high for 1-2 hours, or on low for 3-4 hours, until the flavors develop to your preference.
  • Serve in bowls with your favorite fixin's.

2 or 3 chipotle chilies with sauce that clings to each (see note)
1 1/2 tablespoons corn, peanut or vegetable oil
1/2 cup quartered, thinly sliced onion

Steps:

  • Combine the tomatoes and chilies in the container of a food processor or electric blender. Blend as finely as possible.
  • Heat the oil in a skillet, and add the onion. Cook, stirring, until wilted, and add the tomato and chili mixture. Let simmer, stirring often, about 20 minutes.

2 dried ancho chiles (1 oz)
1 dried chipotle chile
2 cups water
1 small yellow onion, coarsely chopped
2 garlic cloves
1 tablespoon cumin seeds, toasted

Steps:

  • Discard stems from chiles and remove seeds. Rinse chiles under cold running water. Bring chiles with water to a simmer in a nonreactive 1 1/2-quart saucepan. Add onion, garlic, and a pinch of salt, then simmer, uncovered, stirring occasionally (add more water if necessary to cover chiles), until softened, about 30 minutes.
  • While chiles are cooking, finely grind cumin seeds with a mortar and pestle or in an electric coffee/spice grinder.
  • Transfer chiles and vegetables with a slotted spoon to a blender and purée with cumin and cup chile water (save remaining chile water) until smooth. (Sauce should be thick but not stiff; add more chile water, 1 tablespoon at a time, if necessary.) Season with salt.

1/2 cup onion, cut into 1/2-inch slices

1 teaspoon dark brown sugar
3 cups water

Steps:

  • Place all ingredients in a heavy bottom pan, cover, and cook over very low heat for 1 to 1-1/2 hours, until the chiles are very soft and the liquid has reduced down to 1 cup.
  • Alternate Method:.
  • Place ingredients in a dutch oven and bake at 325 degrees for 1 1/2 hours till peppers are tender,and sauce is thick.
  • You can also can this into a half pint jar and water bath it for 12 minutes at sea level. (See canning chart for your altitude).

4 pounds plum tomatoes (about 12 medium)
1 cup packed brown sugar
3/4 cup cider vinegar
1/4 cup minced chipotle peppers in adobo sauce
2 teaspoons salt

Steps:

  • In a large saucepan, bring 8 cups water to a boil. Add tomatoes, a few at a time; boil 30 seconds. Drain and immediately place tomatoes in ice water. Drain and pat dry; peel., In a food processor, cover and process tomatoes in batches until finely chopped. Transfer to a Dutch oven. Add brown sugar, vinegar, chipotle peppers and salt. Bring to a boil. Reduce heat; simmer, uncovered, 20-25 minutes or until most of the liquid is evaporated, stirring constantly. , Remove from heat. Ladle hot mixture into six hot half-pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.
