Chipotle-Grilled Pork Shoulder Steaks with Corn Salsa image

Pork shoulder isn't just for pulled pork. Ask your butcher to cut it into steaks, and it'll soon become your favorite well-marbled and quick-cooking cut for grilling, especially when seasoned with this Mexican barbacoa-style rub.

2 tsp. chipotle chile powder
2 tsp. dried oregano
1 1/2 tsp. garlic powder
1 tsp. ground allspice
2 3/4 tsp. (or more) kosher salt, divided
4 (3/4"-thick) boneless pork shoulder (Boston butt) steaks (about 2 lb.) or pork blade chops
Vegetable oil (for grill)
4 ears of corn, husked
1/2 small white onion, finely chopped
1 cup cilantro, finely chopped
1 cup crumbled Cotija or feta (about 5 oz.)
1/2 cup toasted pumpkin seeds (pepitas)
3 Tbsp. fresh lime juice
Flaky sea salt
Lime wedges (for serving)

Steps:

  • Mix chile powder, oregano, garlic powder, allspice, and 2 tsp. kosher salt in a small bowl. Rub spice mixture all over pork steaks. Let sit at room temperature at least 15 minutes.
  • Prepare a grill for medium heat; oil grate. Grill pork and corn, turning occasionally, until pork is deeply charred and an instant-read thermometer inserted into the thickest part registers 145°F for medium, and the corn is lightly charred all over, 7-9 minutes. Transfer pork to a cutting board and let rest 10 minutes.
  • Let corn cool slightly. Slice kernels off cobs into a large bowl. Add onion, season with 3/4 tsp. kosher salt, and stir to combine. Stir in cilantro, cheese, pumpkin seeds, and lime juice; taste salsa and season with more kosher salt if needed.
  • Transfer pork to a platter. Drizzle any accumulated juices left on cutting board over; sprinkle with sea salt. Top with corn salsa and serve with lime wedges alongside.
  • Do Ahead: Pork can be seasoned 1 day ahead. Cover and chill. Let sit at room temperature 15 minutes before grilling.

This is a similiar version of Chipotle's restaurant pork. I crave Chipotle's often and so I was glad to finally have a recipe I could create on my own. Note that the pork is supposed to come to room temp. before cooking. (2 hours) I would never do that. I am a freakezoid when it comes to raw meat, but you may be more savvy than I am, so that might work for you. Also, garnish ingredients are approximate. I found this on www.grillinchillin.com

1 (6 lb) boneless pork shoulder
2 -3 tablespoons oil
1 onion
4 medium tomatoes
4 -6 cloves garlic
1/2-1 teaspoon cumin
2 -4 sprigs fresh oregano
2 whole cloves
2 bay leaves
2 dried chipotle chiles
3/4 cup water or 3/4 cup meat stock
1 teaspoon salt
1 teaspoon pepper
8 -12 flour tortillas
2 cups shredded lettuce
1/2 cup sour cream
2 cups grated cheese
1 cup salsa
2 tomatoes, chopped
1 cup black olives, chopped

Steps:

  • Generously salt and pepper the pork shoulder.
  • Let meat come to room temperature (2 hours) I would never, ever do this step, but some of you may feel comfortable.
  • Preheat oven to 325*.
  • Add olive oil to pan, sear pork.
  • Let rest 10- 15 minutes.
  • Drain excess oil from pan.
  • Add remaining ingredients to pork.
  • Cover and cook 2-3 hours until internal temperature reaches 140*- 150*.
  • Let pork rest 10- 15 minutes before slicing.
  • Fill flour tortillas with shredded pork, garnish with lettuce, sour cream, grated cheese, salsa, tomatos and black olives or garnish as desired.

2 cups frozen corn
2 vine-ripened tomatoes, cut into 1/2 inch pieces
1 small red onion, diced
¾ cup diced red bell pepper
2 jalapeno peppers - seeds removed and reserved, flesh minced

4 tablespoons fresh lime juice
1 tablespoon olive oil
¼ cup chopped fresh cilantro
salt to taste

Steps:

  • Spray a large skillet with non-stick cooking spray, and place over medium-high heat. Add corn to hot skillet. Cook, stirring occasionally, until browned but not burned. Place in a large bowl.

1.2kg trimmed pork shoulder joint (weight after cutting away the rind - ask your butcher to do this)
75g ketchup , plus 1tbsp
3 tbsp chipotle paste
3 tbsp honey
1 tbsp red wine vinegar

Steps:

  • Up to two days before (and at least 2 hrs ahead), mix together 75g ketchup with 2 tbsp chipotle, 2 tbsp honey and the vinegar. Rub all over the pork and leave in a food bag (or bowl) in the fridge to marinate, turning occasionally.
  • Heat oven to 160C/140C fan/gas 3. Lift the pork into a snug-fitting roasting tin and baste with any excess marinade, plus 100ml water. Cover with foil, ensuring the pork is sealed in but the foil isn't touching it, and bake for 4 hrs.
  • Turn up the oven to 200C/180C fan/gas 6 (or cool and chill the pork, if making ahead). Remove the foil and put the pork back in for 30 mins until crisp and sticky on the outside.
  • Lift the pork from the tin and use two forks to shred the meat. Mix together the extra 1 tbsp ketchup with the remaining chipotle and honey, and stir it through the shredded meat with some seasoning before serving.
