CHIPOTLE-HONEY GLAZED TILAPIA
There's nothing fishy about perfectly cooked sweet-and-spicy tilapia.

Steps:
- Put the chipotle chiles, honey, scallions, 2 tablespoons of the oil, 1 teaspoon salt and a few grinds of pepper in a food processor and pulse until combined. Transfer to a large bowl, add the tilapia and toss to coat evenly; set aside for 10 minutes at room temperature.
- Heat the remaining 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add the tilapia and cook, turning once, until just cooked through, 5 to 7 minutes. Serve with coleslaw and lemon wedges on the side.
CILANTRO-CHIPOTLE TILAPIA
Steps:
- Preheat broiler.
- Purée cilantro, oil, chiles with some adobo sauce, water, cumin, 3/4 teaspoon salt, and 1/2 teaspoon pepper in a blender until smooth, then coat fish with sauce.
- Line rack of a broiler pan with foil, then broil fish 3 to 4 inches from heat until just cooked through, 6 to 9 minutes.
CHIPOTLE TILAPIA WITH CHERRY TOMATOES
Steps:
- Heat olive oil in heavy large skillet over medium-high heat. Sprinkle fish with salt and ground Chipotle pepper. Add half of fish to skillet and saute until just opaque in center, about 3 minutes per side. Transfer fish to platter. Repeat with remaining fish. Add cliantro and onion to same skllet; saute 2 minutes. Add tomatoes and jalapeno; saute until tamatoes are soft and juicy, about 2 minutes. Add lime juice just prior to serving; spoon over fish.
BAKED TILAPIA WITH TOMATOES AND POTATOES

Steps:
- Preheat the oven to 400 degrees F. Toss the potatoes with 1 tablespoon olive oil, 1 teaspoon thyme, 1/4 teaspoon salt, and pepper to taste in a bowl. Coat a rimmed baking sheet with cooking spray; add the potatoes and spread in an even layer. Roast until browned and crisp, tossing halfway through, about 35 minutes.
- Meanwhile, toss the tomatoes, olives, capers and garlic with 1 teaspoon olive oil, 2 tablespoons vinegar and 1 teaspoon thyme in a bowl. Coat another baking sheet with cooking spray; add the tomato mixture and spread in an even layer. Roast until softened, 15 minutes.
- Mix the remaining 2 teaspoons olive oil and 1 teaspoon thyme, 2 tablespoons vinegar, 1/4 teaspoon salt, and pepper to taste in a bowl; brush on the fish. Place the fish on top of the roasted tomato mixture and return to the oven until just cooked through, about 10 minutes. Divide among plates and serve with the potatoes.
TILAPIA WITH CHARRED CHERRY TOMATOES AND BALSAMIC REDUCTION
Steps:
- Chop 1/4 of the basil leaves. Mix chopped basil, thyme, garlic, lemon zest, salt, and pepper in a bowl. Rub spice mixture on tilapia fillets and place in an airtight container. Marinate for 2 hours at room temperature.
- Preheat the oven to 350 degrees F (175 degrees C). Line a baking dish with aluminum foil and grease with 1 tablespoon olive oil.
- Place tilapia fillets into prepared baking dish, shaking off excess seasoning. Sprinkle cherry tomatoes, shallot, and remaining unchopped basil leaves on top. Drizzle 1/2 the lemon juice and 2 tablespoons balsamic vinegar over the fish.
- Bake in the preheated oven for 10 minutes, until fish is starting to flake.
- Meanwhile, combine remaining lemon juice, 1 tablespoon olive oil, and 1/4 cup balsamic vinegar in a saucepan and bring to a boil over medium-high heat. Boil mixture until it has the thick consistency of molasses, 5 to 10 minutes.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Broil fish until tomatoes are charred, about 5 minutes. Remove from oven and discard liquid. Pour balsamic reduction on top of fish.

- In a medium bowl, combine tomatoes, red onion, jalapeno, lemon juice, lime juice and salt.
- Let stand for 10 minutes at room temperature to blend flavors. Stir in cilantro. Taste salsa and adjust amount of jalapeno pepper and salt as desired.
- Serve with tortilla chips.

- Preheat oven to 425 degrees.
- In a food processor or blender, blend chipotle peppers, salsa, and lime juice. Place in a shallow bowl.
- Place crushed tortilla chips in a separate shallow bowl.
- Dredge tilapia through the chipotle mixture and then through the tortilla chips. Place the fillets in a greased 9 x 13 inch baking dish.
- Bake for about 20 minutes, until the fillets easily flake with a fork and the edges are browning.
- Garnish with limes and cilantro before serving.

- Stir together the chipotle chile powder, garlic powder, salt, and cracked black pepper in a shallow bowl. Brush the tilapia fillets with the canola oil, and press into the spice mixture to coat, and set aside. Make the salsa by stirring together the mango, jalapeno, red onion, 1 clove garlic, cilantro, and lime juice in a separate bowl, and set aside. Make the aioli by stirring together the chipotle puree, 1 clove garlic, and mayonnaise in a small bowl, and set aside.
- Bring the black beans and 2 cloves of garlic to a simmer in a saucepan with a pinch of salt. Cover, and cook over low heat for 20 minutes. Meanwhile, heat a large skillet over medium-high heat, and cook the tilapia until opaque in the center, and crispy on both sides, about 7 minutes. Heat the tortillas in a skillet over medium heat, and keep warm.
- To serve, place the tortillas on a plate, spoon on some Spanish rice and black beans. Top with some of the coleslaw mix, hot tilapia, and a spoonful of the mango-cilantro salsa. Top with a dollop of chipotle aioli to serve.

Steps:
- Combine all ingredients for the dressing in a small bowl. Set in the frig. for two hours.
- In a food processor, put Doritos, spices and jalapeno and process until finely crushed. Place on waxed paper when ready to cook.
- Preheat oven to 350 Degrees.
- In a med. bowl, whisk egg.
- Dip fish into egg and then coat both sides of the fish with crust ingredients. Be sure they are well coated.
- Place fish on parchment paper lined baking sheet and squeeze lime over the fish.
- Bake for 30 minute.
- Serve with the chipotle lime dressing and enjoy.

- Heat a large skillet over medium-high heat. Melt 1 tablespoon of butter and then add the tilapia fillets. Cook 1-2 minutes on each side or until golden and cooked through. Remove the fillets from the pan and set aside.
- In the same pan over medium heat, add the remaining tablespoon of butter and then stir in the garlic. Cook for 1 minute or until soft.
- Pour in the wine and salt, and increase the heat to high. Cook for 1-2 minutes, or until the wine is reduced in half. Stir in the tomatoes and cook for 1 minute more.
