Steps:
- To Marinate: Put chicken breasts in a nonporous glass dish or bowl. Drizzle melted butter or margarine over chicken and season with salt and ground black pepper. Cover dish and refrigerate overnight.
- Preheat oven to 375 degrees F (190 degrees C).
- Put potato chip crumbs in a shallow dish or bowl. Roll chicken in crumbs until well coated, then place in a lightly greased 9x13 inch baking dish.
- Bake at 375 degrees F (190 degrees C) for 45 minutes or until chicken juices run clear.

- In a large ziploc bag, add the flour, salt, pepper, garlic powder, onion powder, and stir to combine.
- In a wide dish, beat the eggs
- In a separate ziploc bag, crush your favorite type of potato chip.
- Preheat oven to 425°F (220°C).
- To bread the chicken, first place the chicken slices in the bag of seasoned flour and shake until completely coated, then pour the chicken into the egg mixture and stir with a slotted spoon until completely coated.
- Place the egg-coated chicken and place into the bag of crushed chips and shake until they are completely coated.
- Pour the potato chip-coated chicken onto a parchment paper-lined sheet tray.
- Bake for 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown.
- Serve with your favorite dipping sauce.

- Cut the chicken into thin strips then coat in the egg wash and flour.
- Shallow fry for a few minutes on each side, until golden brown.
- Add the peppers and fry for another couple of minutes. Remove the chicken and peppers and set aside.
- In the same pan, add the garlic, red chilli, soy sauce, tomato purée, and water. Stir and simmer the mixture reduces and is thick and syrupy.
- Add back in the chicken and peppers and stir well in the sauce.

- Note: this recipe works very well if you use chicken breasts with skin and bone; just bake for about 40 minutes.
- Preheat oven to 400F; spray a baking sheet with nonstick spray like Pam; set aside.
- In a shallow bowl or plate, like a pie plate, combine ranch dressing, garlic powder and cayenne pepper; mix well.
- In another shallow bowl, place crushed potato chips.
- Dip chicken chunks first into the ranch dressing mixture, then into the crushed potato chips; make sure you completely coat chunks; place coated chunks on prepared baking sheet.

- pound out chicken and soak in buttermilk for about 1 hour.
- pour Sun Chips and Tostitos into a ziplog bag and close leaving a little space for air to escape. roll with a rolling pin until chips are a fine crumb mix, should be a little over 1 cup.
- remove chicken from buttermilk and discard buttermilk.
- preheat oven to 350.
- dredge chicken in chip crumbs and but in a baking dish and cook for about 20 minutes or until done through, careful not to overcook.
- once chicken is done through out, pour pasta sauce over chicken and top with montz cheese, about 10 minutes.
- serve with pasta.

- Preheat the oven to 425 degrees F. Put the potatoes in a saucepan, cover with cold water and season with salt. Bring to a boil and cook until the potatoes are tender, 6 to 8 minutes, adding the broccoli halfway through. Drain and transfer the potatoes and broccoli to a large bowl; set aside.
- Meanwhile, set a wire rack on a rimmed baking sheet. Pulse the corn chips in a food processor until finely ground. Transfer the crumbs to a shallow bowl. CHICKEN CHIPS
Long story short: started to get things ready for dinner one night only to realize that I only had two very small chicken breasts and no time to run to the store. Trying to stretch the chicken as far as I could to feed two adults and a preschooler with a big appetite, I made these wonderful chicken chips! The cook time is an estimate because I just cook mine until they turn a nice golden brown.

- Pour the seasoned flour into a zip lock bag.
- Pour the olive oil into a medium sized frying pan on medium-low heat.
- Slice the chicken into pieces approximately 1/4 inch thick. Moisten in the water and set on a plate that is covered with a paper towel.
- Once all the chicken is sliced, put a quarter of it into the bag of flour and shake it to coat each piece. Put the covered chicken into the hot oil.
- Allow it to cook for 10-15 minutes on each side. I like the seasoned flour to turn a nice golden brown and cook mine until it is.
