CHOCOLATE CUPCAKES

Chocolate Cupcakes image

Sweet enough for kids but intensely chocolate enough for grown-ups, these are my go-to chocolate cupcakes.

Provided by Jennifer Segal, frosting adapted from Cook's Illustrated

Categories     Desserts

Time 1h

Yield 24 cupcakes

Number Of Ingredients 18

1½ cups all-purpose flour, spooned into measuring cup and leveled off with knife
1½ cups granulated sugar
¾ cup unsweetened natural cocoa powder, such as Hershey's
¾ teaspoon salt
1½ teaspoons baking powder
¾ teaspoon baking soda
2 large eggs, lightly beaten
¼ cup vegetable oil
¾ cup sour cream
1 teaspoon vanilla extract
¾ cup boiling water
8 ounces milk or semi-sweet chocolate, broken into small pieces (see note)
2½ sticks (20 tablespoons) unsalted butter, softened but still cool
1¼ cups Confectioners' sugar
¾ cup natural unsweetened cocoa powder, such as Hershey's
Pinch salt
¾ cup light corn syrup
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350°F and set two oven racks in the centermost positions. Line two 12-cup muffin tins with paper liners.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine the flour, sugar, cocoa powder, salt, baking powder, and baking soda. Mix on low speed for 30 seconds to combine. Add the eggs, oil, sour cream, and vanilla and mix on low speed until combined.
  • Increase the speed to medium and beat for 2 minutes. Then, reduce the speed to low and gradually pour in the hot water (be careful to pour very slowly so it doesn't splash). The batter will be soupy. Stop the mixer and scrape down the sides and bottom of the bowl; mix again until evenly combined.
  • Pour the batter evenly into the prepared muffin tins (they should be about halfway full). Bake for 18 to 20 minutes, or until the cupcakes are set and a toothpick inserted into the center of a cupcake comes out clean.
  • Cool the cupcakes in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
  • Place the chocolate in a microwave-safe bowl and cook in the microwave in 20-second intervals, stirring in between, until about three-quarters of the way melted. Stir, allowing the residual heat in the bowl to melt the remaining chocolate completely. (If necessary, place the chocolate back in microwave for a few seconds.) Set aside to cool.
  • In a food processor, process the butter, sugar, cocoa powder and salt until smooth, about 30 seconds, scraping down the sides of the bowl as needed. Add the corn syrup and vanilla and process until just combined, 5 to 10 seconds. Scrape down the sides of the bowl, then add the lukewarm chocolate and pulse until smooth and creamy, 10 to 15 seconds. Do not overmix. The frosting can be used immediately or held at room temperature for up to 3 hours.
  • When the cupcakes are completely cool, use a small offset spatula or butter knife to swirl the frosting lavishly over top. The cupcakes are best enjoyed fresh on the day they are made, but they will keep for two days stored in an airtight container at room temperature.
  • Note: If making this cake for children, I recommend using milk chocolate for the frosting (Hershey or Lindt milk chocolate bars work well). Semi-sweet chocolate will lend a more intense chocolate flavor (Ghirardelli bars for baking are ideal).

CHOCOLATE SWEET POTATO CUPCAKES

Chocolate Sweet Potato Cupcakes image

Provided by Food Network

Categories     dessert

Time 4h45m

Yield 14 servings

Number Of Ingredients 14

1 1/2 cups all-purpose flour
1 cup sugar
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/4 cup canola oil
2 tablespoons white or apple cider vinegar
2 teaspoons pure vanilla extract
3/4 cup pureed sweet potato
Two 13.5-ounce cans of coconut milk (not lite), such as Thai Kitchen brand or Whole Foods 365 brand, chilled in the refrigerator overnight (be sure not to shake or stir)
1/4 cup powdered sugar
Chocolate shavings, for garnish, optional
Ground cinnamon, for garnish, optional

Steps:

  • For the cupcakes: Preheat the oven to 350 degrees F. Line two 12-cup cupcake pans with 14 cupcake liners.
  • In a large bowl, whisk together the flour, sugar, cocoa, baking soda, and salt. In a separate bowl, whisk together the water, oil, vinegar, vanilla, and sweet potato until smooth. Pour the wet mixture into the dry mixture and mix until just combined. Do not overmix.
  • Fill the cupcake liners about two-thirds full with the batter. Bake for 20 minutes, or until a toothpick inserted in the center of a cupcake comes out clean with a few crumbs clinging to it. Cool the cupcakes completely before frosting.
  • For the coconut whipped cream: Chill the bowl and whisk of a stand mixer in the freezer for about 10 minutes. If they are not very cold, the cream will not whip properly. Skim the solidified coconut cream from the chilled can of coconut milk and transfer the solids to the bowl of the stand mixer. Do not include any of the coconut water, even if you have to leave behind a little margin of coconut cream (even a little bit of coconut water can harm your results).
  • Add the powdered sugar and whip for a few minutes until the mixture begins to stiffen and turn into whipped cream. Chill the whipped cream in a covered container in the refrigerator. It should firm up even more as it sits in the refrigerator for the next few hours or overnight.
  • To serve: Top each cupcake with whipped cream. Garnish each cupcake with chocolate shavings or a dash of ground cinnamon.

Here's what you need: all-purpose flour, cocoa powder, baking powder, baking soda, salt, sugar, warm water, buttermilk, large eggs, vanilla extract, heavy cream, marshmallow cream, semi-sweet chocolate chips, heavy cream, powdered sugar, milk

Provided by Alix Traeger

Categories     Bakery Goods

Yield 24 servings

Number Of Ingredients 16

1 ½ cups all-purpose flour
¾ cup cocoa powder
¾ teaspoon baking powder
1 ½ teaspoons baking soda
½ teaspoon salt
1 ½ cups sugar
½ cup warm water
1 cup buttermilk
2 large eggs
1 teaspoon vanilla extract
1 cup heavy cream
1 cup marshmallow cream
1 cup semi-sweet chocolate chips
⅔ cup heavy cream
1 cup powdered sugar
1 tablespoon milk

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • Sift the flour, cocoa powder, baking powder, baking soda, and salt into a large bowl. Add the sugar and whisk to combine.
  • Add the warm water, buttermilk, eggs, and vanilla and whisk until combined.
  • Line 2 muffin tins with paper liners.
  • Scoop the batter into prepared muffin tins, filling each cup a little more than halfway.
  • Bake for about 20 minutes, until the tops of the cupcakes spring back when gently pressed. Let cool completely.
  • Make the marshmallow filling: In a medium bowl, whip the heavy cream with an electric hand mixer until soft peaks form. Add the marshmallow cream and whip until stiff.
  • Transfer the filling to a piping bag fitted with a medium round tip or a zip-top bag with a corner snipped off.
  • Use the end of a whisk or another utensil to push down the center of each cupcake.
  • Pipe the filling into the cupcakes, leveling off the tops if needed. Freeze for 15 minutes while you make the ganache and icing.
  • Make the ganache: Add the chocolate chips and heavy cream to a medium microwave-safe bowl. Microwave in 30-second increments, until melted. Mix together until smooth.
  • Make the icing: In a medium bowl, stir together the powdered sugar and milk until smooth. The icing should fall off the spatula in ribbons. If it is too thin, add a bit more powdered sugar.
  • Transfer the icing to a piping bag fitted with a small tip or a zip-top bag with a corner snipped off.
  • Dip the top of each cupcake in the ganache, then set aside to dry for 10 minutes.
  • Pipe icing curls across the center of the cupcakes and let dry for 15 minutes at room temperature.
  • Enjoy!

  • Frost the cooled cupcakes with the buttercream. (You can use vanilla buttercream, although we prefer chocolate because it takes longer for the frosting to firm up, giving you and your wee ones more time to decide on which sweets to use as decorations before the frosting sets.)
  • Immediately go footloose and fancy-free, plopping sweets of varying shapes, sizes, and colors onto each cupcake quickly before the frosting sets. We find it better to use too many candies rather than too few, so heap them on without hesitation.
