CHOCOLATE CHERRY CORDIALS - HOME MADE CHOCOLATE COVERED CHERRIES
This chocolate covered cherry cordial recipe lets us have the traditional holiday favorite any time of the year.

Steps:
- In a large bowl, combine butter and milk. Gradually beat in confectioners' sugar until a smooth dough is formed. Cover with plastic wrap and chill.
- Shape the dough into 1-in. balls; flatten to 2-in. circles. Wrap each circle around a cherry and gently reshape into a ball. Dip into milk chocolate coating; allow excess to drip off.
- Place on waxed paper-lined baking sheets. Chill until firm. Store in an airtight container.

- Place cherries in a small bowl; add brandy. Cover and freeze for at least 3 hours., Place chocolate chips in a small heavy saucepan. Cook over low heat until chips begin to melt. Remove from the heat; stir. Return to the heat; cook just until melted. Immediately remove from the heat; stir until smooth., Pat cherries dry. Holding onto the stems, dip cherries into chocolate; allow excess to drip off. Place on a waxed paper-lined pan. Refrigerate for 10 minutes or until firm. Store in an airtight container in the refrigerator.

- In a small bowl, combine the sugar, butter, milk and extract. Knead until smooth and pliable. Shape into 1-in. balls and flatten each into a 2-in. circle. , Wrap one circle around each cherry and lightly roll in hands. Place with stems up on waxed paper-lined baking sheet. Cover loosely and refrigerate 4 hours or overnight. , In a microwave, melt chocolate and shortening; stir until smooth. Holding on to the stems, dip cherries into chocolate; allow excess to drip off. Place on waxed paper until set. Store in a covered container. Refrigerate 1-2 weeks before serving.

HOW TO MAKE HOMEMADE CHERRY CORDIALS
My husband loves cherry cordials and I am always up for a challenge to recreate his favorite store-bought treats. These homemade cherry cordials are so easy to make and taste delicious!

Steps:
- Remove cherries from liquid and place on a paper-towel lined cookie sheet to drain.
- Line a cookie sheet with parchment paper.
- Combine butter, corn syrup, 1 tablespoon of liquid from cherries and invertase.
- Stir until blended.
- Gradually add powdered sugar. Mixture should come together and not be too sticky.
- Form into 1/2″ balls and flatten. Place a drained cherry in the middle and wrap to completely cover cherry. Roll to round out ball. Return to prepared sheet.
- Place in freezer for at least 30 minutes.
- Melt chocolate by microwaving fo 45 seconds, stirring and repeating until smooth and melted.
- Dip balls in chocolate with a fork, shaking off excess and return to prepared sheet.
- Refrigerate for 15 minutes to set chocolate.
- Use a knife to carefully trim excess chocolate from candies.
- Place in sealed container and allow to sit for a week or so for invertase to liquify sugar.
CHOCOLATE COVERED CHERRIES
Easy, delicious cherries. Just like you buy in the box! It's best to let the candies ripen for 1 to 2 weeks.

- In a medium bowl, combine butter and corn syrup until smooth. Stir in confectioners' sugar and knead to form a dough. Chill to stiffen if necessary. Wrap each cherry in about 1 teaspoon of dough. Chill until firm.

- Pour cherries, with their juice, into a glass bowl. Cover cherries with rum. Cover with plastic wrap and store in the refrigerate for 1 week.
- Drain and dry rum-infused cherries.
- Line a baking sheet with waxed paper.
- Mix confectioners' sugar, 1/2 cup butter, milk, and maple syrup together in a bowl until smooth and pliable. Wrap each cherry with sugar mixture. Arrange on baking sheet. Cover loosely with plastic wrap and chill until firm, about 30 minutes.
- Combine chocolate chips, semisweet chocolate, 2 tablespoons butter, and paraffin wax in a saucepan. Heat over medium-low heat, stirring, until melted, about 5 minutes.
- Dip each wrapped cherry into the melted chocolate mixture using a toothpick. Return to baking sheet. Repeat with remaining cherries. Cover loosely with plastic wrap and chill until set, about 1 hour.
