CHOCOLATE CHIP CHERRY BARS
These cherry bars use my favorite blondie base and turn out perfectly every single time!

Steps:
- Preheat oven to 350F. Line an 8-by-8-inch pan with aluminum foil, spray with cooking spray; set aside.
- In a medium microwave-safe bowl, melt the butter, about 60 seconds.
- To the melted butter, add the brown sugar and stir to combine.
- Add the egg, vanilla, and stir to combine. Add the flour, salt, and stir until just combined, taking care not to over mix or the blondies will be tough.
- Fold in chocolate chips, fruit (I don't halve the cherries: I like them chunky and big), and pour batter into prepared pan, smoothing it lightly with a spatula or offset knife if necessary.
- Bake for 27 to 32 minutes, or until edges begin to slightly pull away from sides of pan and center is set.**
- Allow bars to cool for at least 1 hour before slicing and serving. Blondies can be stored in an airtight container at room temperature or in the refrigerator for up to 1 week or frozen for up to 3 months.

Steps:
- In a food processor, pulse together the flour, sugar, cocoa powder and fine sea salt. Pulse in the butter and vanilla until the mixture just comes together into a smooth mass. Line an 8-inch square baking pan with parchment or wax paper. Press the dough into the pan. Prick all over with a fork. Chill for at least 20 minutes and up to 3 days.
- Heat the oven to 325 degrees. Bake the shortbread until firm to the touch and just beginning to pull away from the sides, 35 to 40 minutes.
- Cool in the pan for 20 minutes on a wire rack. Brush jam over shortbread's surface and let cool thoroughly.
- Place chocolate in a heatproof bowl. In a saucepan, bring the cream to a simmer. Pour over the chocolate and whisk until smooth. Whisk in the kirsch. Spread over shortbread. Sprinkle fleur de sel on. Cool to room temperature; cover and chill until firm. Slice and serve.

- Preheat the oven to 350 degrees F (175 degrees C).
- Beat sugar, butter, and shortening together in a bowl using an electric mixer until creamy. Add water, egg, and vanilla extract and mix well. Add flour, flaxseed meal, cocoa powder, yeast, salt, and baking soda. Mix well. Fold oats, chocolate chips, and walnuts into the dough.
- Drop dough by rounded teaspoonfuls about 2 inches apart on ungreased baking sheets.
- Bake in the preheated oven until edges are golden, about 12 minutes. Let cool for 5 minutes; transfer to a wire rack to cool completely.

- In a bowl, combine the flour, sugar and cocoa. Cut in butter until the mixture is crumbly. Add egg and almond extract until blended. Set aside 1 cup for topping. Press remaining crumb mixture into a greased 13x9-in. baking pan. Carefully top with pie filling. Combine chocolate chips, almonds and reserved crumb mixture; sprinkle over pie filling. , Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. LACTATION COOKIE BARS
IMO, the absolute best lactation cookies you can make. Dairy free (when made with dairy free "add ins", such as chocolate chips, etc.) and gluten free (as long you ensure to use gluten free oats, and again, gluten free "add ins"). I make my own oatmeal flour by putting oatmeal in a food processor on high for a couple of minutes.

- In a small cup or bowl, combine flaxseed meal and water. Allow to sit 3-5 minutes.
- Cream coconut oil and sugars until well blended.
- Add eggs, one at a time beating well after each one.
- Stir in vanilla and flaxseed mixture.
- In a separate bowl, stir together flour, baking soda, salt and nutritional yeast.
- Add flour mixture slowly to coconut oil mixture and mix well.

- Preheat oven to 350°F. Grease and flour 15x10x1-inch baking pan or 13x9-inch baking dish. Photo above was in a 13X9-inch baking dish.
- In large bowl, combine all cake bar ingredients (cake mix, cherry pie filling, almond extract, and eggs);
- Stir until well blended. You can use a stand mixer or stir by hand. A stand mixer will break up the cherries a bit more. Pour into greased and floured pan.
- Bake at 350°F. until toothpick inserted in center comes out clean. For 15x10x1-inch pan, bake 20 to 30 minutes; for 13x9-inch pan, bake 25 to 35 minutes.
