SWEET POTATO CRUMBLE



Sweet Potato Crumble image

3 medium sweet potatoes, peeled and large diced
1/4 cup whole milk
1 teaspoon ground cardamom
4 to 6 tablespoons light brown sugar
Cooking spray
1 large egg
1 cup packed light brown sugar
1 cup plain Greek yogurt
1/4 cup vegetable oil
1 teaspoon vanilla extract
Zest of one orange
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon fine salt
2 cups all-purpose flour
1 cup packed light brown sugar
1 stick (8 tablespoons) unsalted butter, melted

Steps:

  • Preheat the oven to 350 degrees F.
  • For the mashed sweet potatoes: Cover the sweet potatoes with cold water in a medium saucepan and simmer over medium heat until fork-tender, 12 to 15 minutes. Drain off the excess water and transfer the potatoes to the bowl of a stand mixer fitted with the paddle attachment. Add the milk, cardamom and 4 tablespoons of the brown sugar and mix on medium until smooth, 3 to 4 minutes. Taste and add more brown sugar if desired. Set aside to cool.
  • Spray a 9-by-13-inch baking dish with cooking spray.
  • For the cake layer: In a clean bowl of a stand mixer fitted with the paddle attachment, cream together the egg and brown sugar until fluffy and thick, about 4 minutes. Add the yogurt, oil, vanilla extract and orange zest and mix until well combined. Add the flour, baking powder, baking soda and salt. Mix until the batter just comes together; it will be thick. Spread the batter into the bottom of the greased baking dish. Cover the batter evenly with the sweet potato mixture.
  • For the crumble: Combine the flour, brown sugar and melted butter in a small bowl. Mix with your hands until the mixture forms a rough crumbly texture. Sprinkle over the sweet potato and bake until the bottom is set and the crumb topping is golden brown, about 30 minutes.

1 butternut squash- peeled, seeded and cubed
½ teaspoon ground cinnamon
½ teaspoon nutmeg
¼ cup sugar free maple flavored syrup

Steps:

  • Place the sweet potatoes and butternut squash into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.
  • Mash the sweet potatoes and butternut squash, then add cinnamon, nutmeg, and syrup. Mix until smooth.

1 medium butternut squash (4 pounds), peeled and cubed
1 can (8 ounces) unsweetened crushed pineapple, drained
1 carton (8 ounces) spreadable honey nut cream cheese
2 tablespoons butter, melted
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
TOPPING:
10 shortbread cookies, crushed
1/4 cup butter, melted
1 tablespoon sugar
3/4 cup honey-roasted sliced almonds

Steps:

  • Preheat oven to 350°. Place squash in a large saucepan; add water to cover. Bring to a boil. Cook, covered, until tender, 15-20. Drain; cool slightly. Process in a food processor until slightly chunky. Add pineapple, cream cheese, butter, cinnamon and nutmeg; process until smooth. Transfer to a greased 8-in. square dish., For topping, combine crushed cookies, butter and sugar; sprinkle over squash mixture. Top with almonds. Bake, uncovered, until edges are lightly browned, 35-40 minutes.

1 cup mashed cooked butternut squash
1 cup mashed cooked sweet potato (about 1 medium)
1/2 cup honey
1 tablespoon all-purpose flour
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
Dash ground cloves
Whipped cream, optional

Steps:

  • Preheat oven to 375°. On a lightly floured surface, roll pastry dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim pastry to 1/2 in. beyond rim of plate; flute edge., In a large bowl, whisk eggs, cream, squash, sweet potato, honey, flour, salt and spices. Pour into pastry shell., Bake 50-60 minutes or until a knife inserted in the center comes out clean. Cover edge loosely with foil during the last 15 minutes if needed to prevent overbrowning. I made this up to go with some grilled salmon and boy, it sure turned out a lot better than I expected! A nice twist on the old scalloped potatoes.

2 sweet potatoes, quartered lengthwise
1 butternut squash, quartered and seeded
2 tablespoons olive oil, or as needed
3 tablespoons butter
½ yellow onion, chopped
2 tablespoons all-purpose flour
2 cups milk
1 ½ teaspoons minced fresh sage, or more to taste
1 pinch garlic salt, or to taste
ground black pepper to taste
¼ cup grated Asiago cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish.
  • Brush sweet potatoes and squash with olive oil. Arrange sweet potatoes on a baking sheet; set squash aside.
  • Bake sweet potatoes in the preheated oven for 5 minutes. Add squash to sweet potatoes; cook until almost tender, 10 to 15 minutes. Remove and cool.
  • Heat butter in a saucepan over medium heat; cook and stir onion until tender, about 10 minutes. Add flour, milk, and sage; season with garlic salt and black pepper. Cook and stir until flour is dissolved and sauce is thickened, 5 to 10 minutes.
  • Remove and discard skins from sweet potatoes and squash. Thinly slice sweet potatoes and squash. Arrange sweet potato slices in the bottom of the prepared baking dish. Layer half the squash atop sweet potatoes. Pour a little less than half the cream sauce over squash. Sprinkle with half the Asiago cheese. Repeat layering with remaining squash, cream sauce, and Asiago cheese, respectively. Cover with aluminum foil.
  • Bake in the preheated oven for 25 minutes. Remove foil and bake until cheese is melted and bubbling, about 10 more minutes.

A vegetarian dish which I use when I'm tired of meat. Simple to make and tasty. From Leith's Recipe of the Day. My children like it, my husband loves it. Can be made ahead and reheated. It will take 40 minutes to reheat from cold.

1 medium butternut squash, peeled, deseeded and cut into chunks
2 sweet potatoes, peeled and cut into chunks
30 g butter
30 g plain flour
1/2 teaspoon dry English-style mustard
1 pinch cayenne pepper
425 ml milk
1 tablespoon parsley, finely chopped
140 g gruyere cheese, grated
sea salt
fresh ground black pepper
55 g coarse breadcrumbs
2 tablespoons parmesan cheese, freshly grated

Steps:

  • Preheat oven to 190C/375F/gas mark 5.
  • Bring a large sauce of salted water to the boil, add the butternut and sweet potatoes and cook for ten minutes or until tender. Drain well.
  • Meanwhile, melt the butter in a saucepan, then add the flour, mustard and cayenne pepper. Stir to combine and cook for one minute. Take the pan off the heat and add the cold milk gradually, stirring all the time.
  • Return the saucepan to the heat and bring to the boil, stirring, until the sauce is thick. Allow to simmer for two minutes. Remove from the heat, then add parsley and all but 2 tablespoon of the gruyere cheese. Season to taste.
  • Add the squash and sweet potatoes to the white sauce and stir to coat thoroughly. Tip the mixture into a baking dish.
  • Make the topping by mixing together the breadcrumbs, Parmesan and remaining Gruyere cheese. Sprinkle over the sweet potato and squash filling.
  • Bake in the oven for 20 - 30 minutes until bubbling and golden on top.
