This delicious sauce has the classic profile of any great BBQ sauce, sweet, tart, spicy, but with a wonderful twist: The tastes of chocolate and chile. While the chocolate BBQ sauce recipe might sound weird at first, you are sure to instantly fall in love with it the first time you try it on ribs, chicken, steak, and more.

¾ cup granulated sugar
½ cup water
¾ cup rice vinegar
½ cup tomato paste
¼ cup orange juice
2 tablespoons unsweetened cocoa powder
1 tablespoons Worcestershire sauce
½ teaspoon vanilla extract
½ teaspoon Morton Coarse Kosher Salt
⅛ teaspoon chipotle chile powder

Steps:

  • Mix the sugar and water in a pan and simmer until the sugar dissolves. Add the rest of the ingredients and simmer on low for 30 minutes.
  • Paint it on your meat after it is fully cooked. One layer is all that is needed. If you wish, put the sauced meat over high heat to caramelize the sugars a bit, but watch it carefully so it doesn't burn. Then, for a festive touch, grate some orange zest on top. Serve it with a big red wine.

1 oz Scharffen Berger 62% Cacao Semisweet Dark Chocolate
1/2 TBS butter
3 cloves garlic, minced
1/4 tsp onion powder
1/8 tsp crushed dried Chinese chili pepper (or more to taste)
2 TBS apple cider vinegar
1/4 cup tomato sauce
1/2 TBS golden brown sugar
1/4 tsp cumin
1/8 tsp cinnamon
1 TBS chopped cilantro
sea salt and pepper to taste

Steps:

  • Melt the chocolate and butter in a saucepan on low heat.
  • Add the garlic, onion powder, and chili pepper then stir well for one minute to let garlic soften.
  • Add apple cider vinegar, tomato sauce, brown sugar, cumin, cinnamon, and cilantro.
  • Let cook 5 minutes stirring occasionally and adding salt and pepper to taste.

1 (44 ounce) bottle Heinz ketchup (plastic squeeze bottle)
1/2 cup apple cider vinegar
1 cup strong brewed coffee (french roast)
1 cup dark brown sugar
4 tablespoons steak sauce (A1 gives a great flavor)
2 tablespoons dark molasses
2 -3 tablespoons liquid smoke (Some brands are stronger than others)
4 tablespoons Worcestershire sauce
1 cup dark brown sugar
1 teaspoon cumin
1 tablespoon dark chili powder
2 teaspoons onion powder
2 teaspoons granulated garlic
1 tablespoon baker's cocoa powder plus 1 teaspoon baker's cocoa powder
2 tablespoons ground chipotle peppers (I buy them at the Mexican store and grind them myself, much better than the store big company spice )

Steps:

  • Combine all ingredients in a sauce pan and bring to a boil.
  • Lower the heat and continue to simmer for at least an hour.
  • Cool the sauce and return to the Ketchup bottle. Save your previous batches bottles.

2 tablespoons chili garlic sauce
1 tablespoon rice vinegar
1 teaspoon lime juice
1 teaspoon soy sauce
4 salmon fillets (6 ounces each)
1 tablespoon minced fresh cilantro

Steps:

  • In a small bowl, combine the first six ingredients; set aside 1/4 cup for serving. , Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill salmon, covered, over hot heat or broil 3-4 in. from the heat for 5-10 minutes or until fish flakes easily with a fork, basting occasionally with barbecue sauce mixture., Top with reserved sauce; sprinkle with cilantro.
