Steps:

  • Preheat oven to 375°F (190°C).
  • In a large bowl, whisk together the brown sugar, granulated sugar, and melted butter, until evenly combined and light in color.
  • Add in the eggs and vanilla, mixing until smooth.
  • Add the flour and baking powder, folding the mixture until it forms a smooth dough.

1 cup butter
1 cup white sugar
½ cup light brown sugar
2 eggs
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
1 teaspoon baking soda

2 cups flaked coconut

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).

¾ cup butter
1 cup caster sugar
½ cup light brown sugar
1 egg
1 teaspoon vanilla extract
1 cup all purpose flour
1 teaspoon baking powder
1 pinch salt
¼ cup chocolate chips
½ cup desiccated coconut

Steps:

  • Heat the oven to 180'C. Rub a little bit of butter over 2 baking trays to stop the biscuits from sticking.
  • Mix the butter and both sugars until soft and smooth. Beat in the egg and vanilla.
  • Sift the flour into the bowl, followed by the baking powder and salt and beat well until everything is combined. Stir in the chocolate chips and coconut.
  • Drop teaspoons of the mixture onto the mixture onto the baking trays, spacing them 2" apart. Flatten them lightly with a wet fork.
  • Carefully place the baking trays in the oven and bake for 10-12 minutes until the biscuits are golden. Place the biscuits on a wire rack to cool completely.
