BANANA OATMEAL CHOCOLATE CHIP MUFFINS



Banana Oatmeal Chocolate Chip Muffins image

These delicious banana oatmeal chocolate chip muffins are soft and moist. It takes almost 30 minutes from start to finish to make these easy and yummy snacks!

140 g (1 cup and 3 tablespoons) whole wheat flour
100 g (1 cup) rolled oats
1 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
1/4 tsp salt (optional)
3 medium ripe bananas (335 grams peeled)
75 g (1/3 cup) unsalted butter, melted
60 g (1/4 cup) milk
105 g (1/2 cup) granulated sugar
2 large eggs
1 tsp vanilla extract
90 g (1/2 cup) chocolate chips

Steps:

  • Preheat the oven to 350°F(177°C). Line 12 non-stick standard paper liners into regular size 12 cup-cupcake/muffin pan and set aside.
  • Place whole wheat flour, oatmeal, cinnamon, baking powder, baking soda and salt if using in a large bowl and stir. Set aside.
  • Slice the bananas into a medium bowl and mash with a fork.
  • Stir in the melted butter, milk and sugar.
  • Mix in the egg and then the vanilla.
  • Add the wet ingredient mixture into dry ingredient mixture. Stir until combined.
  • Reserve 1 tablespoon of chocolate chips and add the rest to the mixture and stir with a spoon/spatula.
  • Divide the batter into 12 cup muffin tin and sprinkle the reserved 1 tablespoon of chocolate chips on top of the batter.
  • Bake for 20-22 minutes or until the top is golden brown and the toothpick inserted into the middle comes out clean. Keep the muffins in the pan for 10 minutes before transferring on a wire rack to completely cool.

Number Of Ingredients 14

1/4 cup sugar
3/8 cup butter, subtract 2 tablespoons from a stick
2 eggs
4 ripe bananas, mashed
1/4 cup honey
1 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 cup oatmeal
1 teaspoon vanilla
1 cup chocolate chips
1 teaspoon cinnamon

Steps:

  • In one bowl mix all dry ingredients. Except chocolate chips. Adding softened butter last.
  • In another bowl mash bananas until smooth, but not liquidy.
  • Add all other wet ingredients to mashed banana bowl.
  • Once wet ingredients are thoroughly mixed pour into dry ingredient bowl.
  • Stir until completely combined. Then fold in chocolate chips.
  • Fill PAM sprayed muffin cups 2/3 way full.
  • Bake at 375 for 18 minutes. Rotating halfway through.
  • Enjoy deliciousness. :).

1 ½ cups whole wheat flour
1 cup rolled oats
½ cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ cup semi-sweet chocolate chips
2 large eggs
½ cup unsweetened applesauce
¼ cup skim milk
1 cup mashed banana

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper liners.
  • Stir whole wheat flour, rolled oats, sugar, baking powder, baking soda, and chocolate chips together in a bowl. Make a well in the center. Whisk eggs in a separate bowl until frothy; mix applesauce, skim milk, and banana into eggs. Pour moist ingredients into well made in dry ingredients; stir just to moisten. Batter will be lumpy. Fill prepared muffin cups about 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into the center of several muffins comes out clean, 16 to 18 minutes. Cool in pan for 5 minutes before removing to finish cooling on wire racks.

I am now actually "watching" my diet, and in the process am trying to make my favorites in a "low fat" manner. I took my favorite muffin recipes and combined them, made some adjustments and came up with this great recipe. Hope you enjoy them!

3 large bananas, mashed
1/2 cup white sugar
1 egg, beaten
1 teaspoon baking soda
1 teaspoon baking powder
1 cup flour (you can use whole wheat for a change if you like)
1/2 cup rolled oats (instant is fine)
1/3 cup applesauce
1/2 teaspoon salt
1/2 cup chocolate chips

Steps:

  • Add sugar to mashed bananas and mix.
  • Add beaten egg and mix.
  • In a separate bowl mix all dry ingredients.
  • Add dry ingredients to the banana mixture and mix well.
  • Mix in applesauce.
  • Add chocolate chips and Stir.
  • Spoon into medium size muffin tin (I use paper muffin cups so they won't stick) and fill 3/4's full.
  • Bake for 20-25 minutes at 350.
  • Enjoy!

2 eggs

Steps:

  • Preheat oven to 325F and line muffin cups with paper liners.
  • Stir together oats and milk in a small bowl and set aside.
  • In a large bowl, combine flour, baking powder, baking soda, salt and chocolate chips.
  • In a large bowl, cream together shortening and sugar. Blend in bananas, eggs, vanilla and oat mixture.
  • Stir the wet ingredients into the dry ingredients and scoop batter into muffin cups.
  • Bake for 30-35 minutes or until tester comes out clean.

1 cup oats (any type oatmeal)
1 cup sour milk
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup lightly packed brown sugar
1 egg, beaten
1/4 cup melted butter
1 teaspoon vanilla
1 cup mashed ripe banana
2/3 cup milk chocolate chips

Steps:

  • Combine oats and milk in medium bowl, let stand at least 5 minutes.
  • Combine next 5 dry ingredients in a large bowl.
  • Add egg, melted butter and vanilla to oat mixture, mixing well.
  • Add oat mixture to dry ingredients, and stir until moistened.
  • Fold in mashed banana and chocolate chips.
  • Fill greased muffin tins (or use paper baking cups) and bake at 400 degrees for 15-22 minutes, until toothpick inserted comes out clean.
