CHOCOLATE CHIP COOKIE BLONDIES
This recipe has been used in my family as long as I can remember. My mom would make these for us when we were young and I have continued the tradition to my own family. When my husband and I were engaged, I would send these to him during his deployment overseas. In no time, he and his buddies would have the entire container emptied. Steps:
- Whisk flour, baking soda and salt. In a 1-qt. glass jar, layer flour mixture, brown sugar, granulated sugar, and chocolate chips in order listed. Cover and store in a cool dry place up to 3 months., To prepare blondies: Preheat oven to 375°. Whisk eggs, oil and vanilla until blended. Gradually add blondie mix, mixing well. Spread into a greased 13x9-in. baking pan., Bake until a toothpick inserted in center comes out clean (do not overbake), 15-20 minutes. Cool completely in pan on a wire rack.

CHOCOLATE CHUNK BLONDIES
Steps:
- Preheat the oven to 350 degrees. Grease and flour an 8 x 12 x 2 inch baking pan.
- In the bowl of an electric mixer fitted with the paddle attachment, cream the butter, brown sugar, and granulated sugar on high speed for 3 minutes, until light and fluffy. With the mixer on low, add the vanilla, then the eggs, one at a time, and mix well, scraping down the bowl. In a small bowl, sift together the flour, baking soda and salt and with the mixer still on low, slowly add flour mixture to the butter mixture. Fold the walnuts and chocolate chunks in with a rubber spatula.
- Spread the batter into the prepared pan and smooth the top. Bake for 30 minutes exactly. Don't overbake! A toothpick may not come out clean. Cool completely in the pan and cut into bars.

- Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x13-inch baking pans with cooking spray.
- Whisk together 3 cups flour, baking powder, baking soda, and salt in a medium bowl. Toss chocolate chips with 1 tablespoon flour in another medium bowl until lightly coated.
- Beat butter and brown sugar in a large bowl with an electric mixer until creamy, 4 to 5 minutes. Add eggs, vanilla, and almond extract; mix well. Gradually add flour mixture, mixing on low speed. Fold in chocolate chips.
- Divide batter evenly between the 2 prepared pans. Spread thinly with the back of a metal spoon; bars will rise when baking.
- Bake in the preheated oven until golden brown and edges have started to pull away from the sides of the pan, 22 to 25 minutes. Let cool completely before cutting into squares.

This recipe is a great base for any blondie dream you may have. Use chips or chopped bar chocolate, try butterscotch or white chocolate chunks, stir in nuts, coconut or seeds. If you like your blondies sort of brownielike, follow the recipe as follows. For a chewier, cookielike blondie, reduce the eggs by one.

- Heat oven to 350 degrees. Grease and line a 9-inch square baking pan with parchment paper, leaving a 2-inch overhang on two sides.
- In a medium saucepan combine the butter and sugar, and heat over medium until the butter is melted. Remove from the heat, and whisk vigorously until well combined.
- Let mixture cool for about 10 minutes, then whisk in the eggs, one at a time. Whisk in the vanilla.
- Add the flour, baking powder, baking soda and salt, and stir to combine. (You might still have some flecks of flour. That's OK.) Stir in 1 1/4 cup of the chocolate. Transfer to the prepared pan and smooth the top. Sprinkle with the remaining chocolate.
- Bake until the very top looks just set, and a toothpick inserted into the center comes out with moist crumbs attached, 18 to 20 minutes. Do not overbake.
- Transfer to a rack to cool completely, about 45 minutes. Lift out using the paper, and transfer to a cutting board. Cut into 16 pieces.
