½ cup semi-sweet chocolate chips
3 tablespoons heavy cream
2 cups pecan halves

Steps:

  • Combine the chocolate chips and cream in a medium metal bowl, and set on top of a pan of simmering water. Stir occasionally until melted and smooth. Remove from heat. Stir pecan halves into the chocolate until completely coated.
  • Remove a few pecans at a time with a slotted spoon. Separate pecan halves and place onto a waxed paper lined cookie sheet. Refrigerate for 10 minutes to set.

We coated our butter crunch with a layer of melted chocolate. You can leave the candy covered and simply cut it into squares or break it into pieces when cool.

Yield Makes 2 to 3 dozen pieces

Number Of Ingredients 6

1/2 pound (2 sticks) unsalted butter, room temperature, plus more for pan
1/3 cup water
1 cup sugar
2 cups chopped pecans, plus more halves (optional) for top
8 ounces semisweet chocolate (optional)
2 tablespoons light corn syrup (optional)

Steps:

  • Butter a 9-inch square baking pan, and line the bottom with a piece of parchment paper that extends up and over two sides. Butter the parchment, and set the pan aside.
  • Place the butter and water in a large saucepan. Cook over medium-high heat until the butter is melted. Add the sugar, and stir constantly until dissolved and the mixture comes to a boil. Using a pastry brush dipped in water, brush away any sugar crystals on the side of the pan to prevent recrystallization. Cook until the mixture is dark amber in color. Remove from heat, and stir in the pecans. Pour into the prepared baking pan, and let stand at room temperature to cool completely.
  • Place the chocolate and corn syrup, if using, in a small heat-proof bowl set over a pan of barely simmering water. Stir occasionally until combined and completely melted. Let cool slightly, and spread over the top of the cooled toffee. Arrange the pecan halves on top, and let sit at room temperature until the chocolate has cooled completely and set, at least 2 hours or overnight. Carefully unmold by lifting out the parchment paper. Break or cut into pieces, and store in an airtight container at room temperature for up to 1 month.

We are natives of the Lone Star State who moved to Ohio when my husband was transferred several years ago. -June Humphrey, Strongsville, Ohio

1 tablespoon plus 1 cup butter, softened, divided
1-1/2 cups coarsely chopped pecans, toasted
1 cup semisweet chocolate chips
2 cups packed brown sugar
1 cup light corn syrup
1/4 cup water
1 can (14 ounces) sweetened condensed milk
2 teaspoons vanilla extract

Steps:

  • Line a 13x9-in. pan with foil; butter the foil with 1 tablespoon butter. Sprinkle with pecans and chocolate chips; set aside. , In a heavy saucepan, melt remaining butter over medium heat. Add the brown sugar, corn syrup and water. Cook and stir until mixture comes to a boil. Stir in milk. Cook, stirring constantly, until a candy thermometer reads 248° (firm-ball stage)., Remove from heat and add vanilla. Pour into prepared pan (do not scrape saucepan). Cool completely before cutting.

1 ounce bakers unsweetened chocolate
2 tablespoons butter
2 tablespoons heavy cream
1/4 teaspoon vanilla
7 teaspoons Splenda sugar substitute, sweetner divided
1/2 cup pecan halves
1/2 teaspoon cinnamon

Steps:

  • Mix pecans, 2 tsp splenda and cinnamon in a plastic bowl with a lid and shake until coated.
  • In a double boiler, melt the chocolate and butter, then add the cream and add the rest of the spenda.
  • Mix well until smooth, then remove from the heat.
  • Stir in pecans, or dip them into the chocolate mixture one at a time.
  • Place coated pecans on wax paper or plate to chill, at least one hour.

1/2 pound pecan halves
75 caramels
3 tablespoons milk
1 pound dark chocolate candy coating, melted

Steps:

  • On waxed paper, place pecan halves in pairs 2 in. apart. In a heavy saucepan over medium-low heat, cook and stir the caramels and milk until melted. Pour about 2 teaspoons of caramel mixture over each pair of pecans. Let stand until set., With buttered fingers, shape pecan clusters into balls. Dip in candy coating. Place on waxed paper-lined baking sheets. Refrigerate until set. Store in an airtight container.

1 lb white chocolate, finely chopped
1 tablespoon unsalted butter
1 tablespoon vegetable oil
1 cup pecans, toasted and coarsely chopped (can also use pistachios)

Steps:

  • Line a cookie sheet with aluminum foil. In a double boiler melt the chocolate with the butter and oil over hot (not simmering) water, stirring constantly until the chocolate is melted and smooth.
  • Remove the top part of the double boiler and stir the nuts into the melted chocolate . Pour the chocolate mixture out onto the prepared cookie sheet. Spread randomly to the desired thickness. Refrigerate 20-30 minutes, or until set.
  • Slide a metal spatula under the chocolate to loosen from the foil. Break into uneven pieces . Store in an airtight container or in the refrigerator. Prep time includes refrigeration time.
