Steps:
- Butter a 20cm square tin. Mix the sugar and golden syrup in a deep saucepan over a gentle heat until the sugar has melted. Try not to let the mixture bubble until the sugar has completely dissolved.
- Turn up the heat a little and simmer until you have an amber coloured caramel (this won't take long). To test if it's ready, turn off the heat and drop a little into a glass of very cold water. If it forms a hard ball, it's ready. If not, turn the heat back on and cook a little more. Then, as quickly as you can, turn off the heat, tip in the bicarb and beat with a wooden spoon until it's disappeared and the mixture is foaming. Scrape into the tin immediately - be careful, the mixture will be very hot.
- Leave the honeycomb in the tin for 1 hr-1 hr 30 mins until hard (it will continue to bubble).
- Line a baking sheet with parchment paper. Melt the chocolate in a small heatproof bowl over a pan of just simmering water.
- Snap the honeycomb into chunks and dip half of each piece into the chocolate. Drizzle with any remaining chocolate and a pinch of sea salt, if you like. Leave to set in the fridge for 1 hr.

Steps:
- Gather the ingredients.
- Prepare a baking pan by lining it with aluminum foil and spraying the foil with nonstick cooking spray . 8x8 pan or a 13x9 pan.
- Combine the sugar, corn syrup, honey, and water in a large saucepan. Stir the ingredients together until the sugar is completely moistened. Using a wet pastry brush, wipe the sides of the saucepan to remove any stray sugar crystals.
- Insert a candy thermometer in the saucepan and cook the mixture over medium heat, without stirring, until the candy reaches 300 F. Do not rush the boiling by using high heat.
- Once the candy is at the proper temperature, remove it from the heat and add the baking soda all at once. Immediately, quickly whisk the candy to incorporate the baking soda, and be careful as it will foam up a great deal.
- As soon as the baking soda is incorporated, quickly and carefully pour the candy into the prepared baking pan.
- Allow it to cool and harden completely, then break it into small pieces.
- Combine the chocolate and shortening in a microwave-safe bowl. Microwave in 30 seconds spans, stirring in between, until the chocolate is completely melted.
- Using two forks, dip the individual pieces in the melted chocolate so that they are completely covered and place them back on the baking sheet.
- Repeat with the remaining honeycomb and refrigerate until the chocolate is set.

- Combine sugar, corn syrup, and water in a large saucepan fitted with a candy thermometer. Bring to a boil over medium-high, stirring occasionally. Continue to cook, without stirring, until candy thermometer registers 280°F, 20 to 30 minutes. Stir in honey until incorporated. Continue to cook, without stirring, until temperature reaches between 303°F and 305°F, 10 to 15 minutes. Remove saucepan from heat and stir in vanilla. (Mixture will bubble up.) Add baking soda, and quickly stir just until combined. Mixture will bubble vigorously but do not overstir or mixture will deflate. Pour mixture into prepared baking sheet, tilting to distribute evenly. Let stand at room temperature until completely cool and firm, about 2 hours.
- Melt chocolate according to package directions. Break or cut honeycomb into about 2-inch pieces. Quickly dip honeycomb pieces in melted chocolate, coating completely. Lift out candy with a fork, letting excess chocolate drip off. Place dipped candies on parchment paper or wax paper, and let stand until chocolate sets, about 30 minutes. Reserve any remaining chocolate coating for another use. Layer between sheets of wax paper in an airtight container, and store at room temperature for up to 7 days. Note: To use chocolate chips instead of candy coating, place 1½ cups semisweet chocolate chips and 4½ teaspoons vegetable oil in a microwave-save bowl, and microwave on HIGH until melted, about 1 minute, stirring every 20 seconds.

- Have all your ingredients ready and nearby. It is key that the baking soda is sifted before hand (read post above for info). Have a sturdy silicon spatula ready.
- Line a baking tray or a glass casserole dish with parchment paper ensuring there is a generous overhang of about 2". (For thicker honeycomb use an 9"x13" baking tin and for thinner honeycomb use a baking tray.)
- In a large sauce pan or dutch oven (I used my largest stainless steel sauce pan) heat the sugar, golden syrup, and water together over high heat. Watching closely and stirring occasionally, bring to a boil. Allow to turn a deep amber colour once brought to a soft boil, still stirring every now and then to allow. This should take 5-7 minutes. The mixture will go from amber to burnt quickly so stay close by.
- Remove from heat and add baking soda carefully as the mixture will bubble to more than 4 times its original size. Stir in baking soda well. Quickly (and carefully) transfer the bubbling mixture to the parchment lined tray.
