Number Of Ingredients 15

6 ounces semi-sweet chocolate chips
6 ounces bittersweet chocolate, broken into large pieces
8 tablespoons butter, softened and divided
1 1/2 cups flour
1/3 cup unsweetened dutch cocoa
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup dark brown sugar, packed
3/4 cup granulated sugar
3 eggs
1 1/2 teaspoons vanilla extract
4 tablespoons butter, softened
1/3 cup heavy cream
3/4 teaspoon vanilla extract
2 3/4 cups confectioners' sugar

Steps:

  • In the top of a double boiler, melt the chips, chopped up chocolate and 4 tbsp butter. When melted, set aside to cool.
  • Sift together flour, cocoa, baking powder, and salt. Set aside.
  • In a large mixing bowl, beat the remaining 4 tbsp of butter in with both sugars. When mixed, add eggs abd vanilla. Mix in the slightly cooled chocolate mixture, until just combined.
  • Stir in flour mixture, mixing only until completely combined.
  • Cover bowl with plastic wrap and refegerate for.
  • 25 minutes.
  • Preheat oven to 350ºF Grease the cookie sheets.
  • Using a heaping tablespoon measure, scoop out enough for 12 cookies on a sheet.
  • Bake one sheet at a time for @ 9 to 11 minutes.Do not overbake, the cookies will firm up when they have cooled.
  • Allow cookie to cool for a minute before moving them off the cookie sheet. When cool, frost with Vanilla Icing.
  • Vanilla Icing-.
  • Beat the butter until creamy.
  • Gradually add the cream vanilla, and confectioners sugar and beat well.
  • If necessary, add more confectioners sugar. The icing should be fairly stiff, not soupy.
  • Spread a thick layer on each cookie.

1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa (recommended: Dutch-processed)
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups sugar
10 tablespoons (1 1/4 sticks) unsalted butter at room temperature
1 large egg
4 tablespoons (1/2 stick) unsalted butter at room temperature
1/4 cup vegetable shortening
2 cups confectioners' sugar
2 teaspoons vanilla extract

Steps:

  • Set 2 racks in the middle and upper third of the oven and preheat to 375 degrees. In a food processor or the bowl of an electric mixer, thoroughly mix together the flour, cocoa, baking soda, baking powder, salt and sugar. While pulsing or on low speed, add the butter, then the egg. Process or beat until the dough is thoroughly blended and massed together. Drop rounded teaspoons of batter onto nonstick or parchment-lined cookie sheets at 2-inch intervals. With moistened fingers, round out the cookies and flatten them a little. Bake for 9 minutes, turning the pans once for even baking, until the cookies are set. Set the cookie sheets on a rack to cool.
  • Vanilla-Cream Filling: Put the butter and shortening in a mixing bowl and, at low speed, gradually beat in the confectioners' sugar and vanilla, until blended. Turn the mixer up to high and beat for 2 or 3 minutes more, until fluffy.
  • With a pastry bag fitted with a 1/2-inch tip, pipe teaspoon size blobs of filling onto the tops of half the cookies. Keeping the smooth bottoms of the cookies facing up, flip the remaining cookies on top of the filling and lightly press to form sandwiches.

3 Cups powdered sugar
3 Tablespoons of cocoa powder, don't level
1/3 cup butter, room temperature
1 teaspoon of vanilla
1/4 cup milk
1 Tablespoon sugar

Steps:

  • In a medium bowl combine 1 cup powdered sugar and cocoa powder. Using an electric mixer add butter and mix well. Add additional 2 cups of powdered sugar slowly until combined as well as vanilla. Mixture will be thick, set aside. In a small pot, heat milk and 1 Tablespoon sugar on stove until warm but not hot and sugar is dissolved. While mixer is on, slowly add milk to powdered sugar mixture and blend until smooth and creamy and desired consistency. Use immediately or store in an airtight container. If storing, you'll need to whisk it up again before spreading over cookies.

Steps:

  • Set your oven to 200°C (400°F). Grease 2 small ovenproof dishes or ramekins with butter and place them on a baking tray.
  • Chop the chocolate if necessary and place in a microwaveable dish. Add the butter and microwave in 30-second bursts until melted. In my microwave, it takes 2 minutes on medium power. Remove, stir gently and allow to cool a little (to avoid making chocolate scrambled eggs).
  • In a medium bowl, beat the eggs and sugar together with the salt and vanilla until very well combined. You could use a handheld mixer, though I prefer to do it by hand with a balloon whisk because it's quieter and more pleasant.
  • Stir in the slightly cooled chocolate, then mix in the flour until just combined. Do not over-beat.
  • Divide the mixture between the dishes and cook for 12 minutes. Check that the top is just beginning to crack and remove from the oven. Let them sit for 5 minutes before serving, turning them out onto a plate if you want to.
  • While these are perfectly delicious just the way they are, you could serve them with cream or vanilla ice cream to suit your mood.
