Categories     dessert

Time 1h45m

Yield one 8-inch cake

Number Of Ingredients 10

1/4 pound unsalted butter at room temperature
1 cup sugar
4 extra-large eggs at room temperature
1 1/3 cups Hershey's chocolate syrup
1 tablespoon pure vanilla extract
1 cup all-purpose flour
1/2 cup heavy cream
8 ounces good semisweet chocolate chips
1 teaspoon instant coffee granules
Candied violets or edible gold leaf, for decoration (optional)

Steps:

  • Preheat the oven to 325 degrees. Butter and flour an 8-inch round cake pan, then line the bottom with parchment paper.
  • Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment until light and fluffy. Add the eggs, one at a time. Mix in the chocolate syrup and vanilla. Add the flour and mix until just combined. Don't overbeat, or the cake will be tough.
  • Pour the batter into the pan and bake for 40 to 45 minutes, or until just set in the middle. Don't overbake! Let cool thoroughly in the pan.
  • For the ganache, cook the heavy cream, chocolate chips, and instant coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally.
  • Place the cake upside down on a wire rack and pour the glaze evenly over the top, making sure to cover the entire cake and sides. You can tilt the rack to smooth the glaze. Decorate with candied violets, if desired, or gently crumble the gold leaf and place it on the center of the cake. Do not refrigerate.

CHOCOLATE GANACHE CAKES WITH WHITE-COFFEE FOAM

Chocolate Ganache Cakes with White-Coffee Foam image

Yield Makes 8 servings

Number Of Ingredients 13

For coffee foam
1/2 cup green coffee beans
1/4 cup packed light brown sugar
1 (13 1/2-oz) can unsweetened coconut milk
1/2 cup heavy cream
For chocolate ganache cakes
4 whole large eggs
4 large egg yolks
1/2 cup granulated sugar
1/2 lb Valrhona or Lindt bittersweet chocolate (not unsweetened), chopped
2 sticks (1 cup) unsalted butter, cut into pieces
1/2 cup cake flour (not self-rising)
Special equipment: 1-liter whipped-cream siphon and 2 gas (N2O) chargers

Steps:

  • Make coffee foam:
  • Toast coffee beans with brown sugar in a 2-quart heavy saucepan over moderately low heat, stirring constantly to evenly toast beans, until sugar is melted and beans are color of almond skins, 12 to 15 minutes.
  • Add coconut milk and simmer (mixture will bubble up and steam, and sugar will harden), stirring occasionally, until sugar is dissolved, about 5 minutes. Pour through a sieve into a metal bowl and stir in cream.
  • Set metal bowl in a larger bowl of ice and cold water to chill, stirring occasionally.
  • Transfer sauce to siphon and screw on top tightly. Unscrew charge holder from head and put in a charger. Reattach charge holder and screw on tightly. Gas will be released into siphon (with a whooshing sound) within a few seconds. Chill filled siphon at least 1 hour to produce a stiffer foam. Remove and discard first charger. (As you unscrew charge holder, you'll hear a brief hissing sound.) If fitting from holder comes out attached to charger, just remove charger and reattach fitting. Screw on second charger and chill at least 15 minutes (longer if a test of foam is not thick enough).
  • Make cakes:
  • Preheat oven to 400°F. Butter and flour 8 (4-oz) ramekins, knocking out excess flour, and put on a baking sheet.
  • Whisk together whole eggs, yolks, and sugar until combined well.
  • Melt chocolate and butter in a double boiler or a metal bowl set over a saucepan of simmering water, stirring.
  • Remove top of double boiler or bowl from heat and whisk egg mixture into it. Sift flour evenly over chocolate mixture and fold in until just combined.
  • Divide among ramekins and bake in middle of oven until cakes begin to puff but centers are not set, 12 to 13 minutes.
  • Shake siphon well, about 1 minute. Turn upside down and press lever to fill a bowl with coffee foam.
  • Serve cakes in ramekins with coffee foam on the side.

WARM CHOCOLATE GANACHE CAKES

Warm Chocolate Ganache Cakes image

Provided by Food Network

Categories     dessert

Time 1h11m

Yield 6 servings

Number Of Ingredients 8

4 ounces extra-bittersweet chocolate, finely chopped
3/4 cup heavy cream
3 1/2 ounces extra-bittersweet chocolate, chopped
3 tablespoons unsalted butter, softened, plus additional for buttering the tins
3 large eggs, separated
1/4 cup almond flour
1/4 cup cake flour
1/4 cup confectioners' sugar

Steps:

  • Line an 8 by 4-inch loaf pan or 6-inch gratin dish with plastic wrap. To prepare the ganache, put the chocolate in a bowl. Bring the cream to a boil in a small saucepan and pour the hot cream over the chocolate. Let stand until the chocolate begins to melt, about 2 minutes, then whisk until smooth.
  • Pour the ganache into the loaf pan or gratin dish and refrigerate until firm, about 1 hour. When the mixture has set, unmold, and cut out 6 (1 1/2-inch) rounds (you can use a knife or a cookie cutter). Refrigerate until ready to use (up to 5 days).
  • Preheat the oven to 350 degrees F. Butter a muffin pan and set aside.
  • To make the cakes, in the top of a double boiler, or in metal bowl suspended over a pot of simmering (not boiling) water, melt the chocolate. Whisk in the softened butter and turn off the heat. Let cool for 5 minutes, then whisk in the egg yolks, one at a time.
  • Sift together the almond and cake flours and fold the flours into the chocolate mixture.
  • Using an electric mixer, beat the egg whites to soft peaks. Sift in the confectioners' sugar and continue beating to stiff peaks. Fold 1/3 of the egg white mixture into the chocolate mixture, then gently fold in the remaining whites in two additions.
  • Scoop or pipe a 1/4-cup measure of cake batter into each muffin tin.
  • Place a ganache round in the center of each muffin cup, then spoon in enough batter to cover. Bake the cakes for 20 minutes, or until the tops are firm. Allow the cakes to rest for 1 minute before serving.

CHOCOLATE COFFEE CAKE WITH DARK CHOCOLATE GANACHE

Chocolate Coffee Cake With Dark Chocolate Ganache image

This recipe comes from Baked Explorations and it yields one 8-inch 3-layer cake. The cake can be stored, covered in a cake dome or cake saver, at room temperature for up to 3 days.

Provided by Brookelynne26

Categories     Dessert

Time 2h

Yield 10 serving(s)

Number Of Ingredients 22

3/4 cup dark unsweetened cocoa powder
2/3 cup sour cream
2 2/3 cups all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, cut into 1 inch cubes, softened
1/2 cup vegetable shortening
1 1/2 cups sugar
1 cup firmly packed dark brown sugar
3 large eggs, at room temperature
1 tablespoon vanilla extract
1 1/2 cups granulated sugar
1/3 cup all purpose flour
1 1/2 cups whole milk
1/3 cup heavy cream
1 1/2 cups three sticks unsalted butter, soft but cool, cut into small pieces
1 teaspoon pure vanilla extract
3 tablespoons coffee extract
unsalted butter, softened and cut into 1/2 inch pieces
1 tablespoon light corn syrup
10 -12 chocolate covered espresso beans

Steps:

  • Preheat oven to 325 degrees F. Butter three 8 inch round cake pans, line them with parchment paper, and butter the parchment, Dust the parchment with flour and knock out excess flour.
  • In medium bowl, mix the cocoa powder and sour cream with 1 1/4 cups hot water and set aside to cool.
  • In a large bowl, sift the flour, baking soda, baking powder, and salt together and set aside.
  • Using a standing mixer fitted with a paddle attachment, beat the butter and shortening together on medium speed until light and fluffy, about 5 minutes - the mixture will appear to string or ribbon throughout the bowl. Add the sugars and beat on medium speed until light and fluffy, about 5 more minutes. Add the eggs, one at a time, mixing about 10 to 15 seconds after each addittion until the egg is incorporated into the mixture. Then turn the mixer to low, add the vanilla, and beat until incorporated. Scrape down the sides of the bowl and mix again for 30 seconds.
  • Beginning with the dry ingredients, add the dry mixture and the cocoa mixture to the mixer bowl in three alternating parts, ending with the dry. Divide the batter amond the prepared pans. Use an offset spatula to level the batter. Bake the cakes for 35-40 minutes, rorating the pans halfway through the baking time, until a toothpick inserted in the center comes out clean. Transfer the pans to a wire rack and cool for 30 to 45 minutes. Turn the cakes out onto the rack and let them cool completely. Remove the parchment.
  • Make the coffee buttercream: In a medium, heavy bottomed saucepan, whisk the sugar and flour together. Add the milk and cream and cook over medium heat, whisking occasionally, until the mixture comes to a boil and has thickened, about 10 to 15 minutes.
  • Transfer the mixture to the bowl of a standing mixer fitted with the paddle attachment. Beat on high speed until cool (this takes about 7-9 minutes; however, you can speed up the process by pressing bags of frozen berries or frozen corn around the sides and bottom of the mixing bowl). Reduce the speed to low and add the butter; mix until thoroughly incorporated. Increase the speed to medium high and beat until the frosting is light and fluffy, about another 1-2 minutes.
  • Add the vanilla and coffee extracts and continue mixing until combined. If the frosting is too soft, put the bowl in the refrigerator to chill slightly, then beat again until it is the proper consistency. If the frosting is too firm, set the bowl over a pot of simmering water and beat with a wooden spoon until it is the proper consistency.
  • To assemble the cake: Place one cake layer on a serving platter. Trim the top to create a flat surface, and evenly spread about 1 1/4 cups frosting on top. Add the next layer, trim and frost it, then add the third layer. Spread a very thin layer of frosting over the sides and top of the cake and put it in the refrigerator for about 15 minutes to firm up. (This is known as the crumb coating and will help you keep loose cake crumbs under control when you frost the outside of the cake.) Spread the sides and top of the cake with the remaining frosting. Refrigerate it for 15 minutes to firm it up.
  • Make the chocolate glaze: Place the butter, chocolate, and corn syrup in the top of a double boiler. Using a rubber spatula, stir the mixture until the chocolate and butter are completely melted and smooth.
  • Remove the pan from the heat and stir the glaze to release excess heat. Drizzle glaze over the cake. Refrigerate the cake about 15 minutes to set the glaze before serving.
  • Glaze the cake: Line a rimmed baking sheet with parchment paper. Place your cake on a wire rack over the baking sheet. Slowly pour about 3/4 of a cup of the glaze over the cake. Use a small offset spatula to smooth it out to the edges. Place the cake in the refrigerator for 5 minutes to set the glaze. Remove from the refrigerator and slowly pour the rest of the glaze over the cake. It should run down the sides in thick streams. You should be able to control the size and length of the streams by the pour. Feel free to experiment, and have no fear n plaing around. This is the fun part, and there is no right or wrong way. Garnish with chocolate covered espresso beans. Chill the entire cake for approximately 20 minutes, or until glaze is set, then transfer to a cake plate. Serve at room temperature.
