CHOCOLATE COCONUT SNOWBALLS

Chocolate Coconut Snowballs image

This recipe is from the back of an old bag of "M & M's" Semi-Sweet Chocolate Baking Bits. I am glad I saved it, because these are great cookies and the recipe is no longer available, even on their website. This recipe is one of thirty or so varieties that I make every Christmas and it is always a favorite. *Added 12/30/07: I don't add the M & M baking bits AFTER the dough is refrigerated. I never understood why that was necessary and since I stopped doing it I've noticed no difference. I couldn't find the M & M's this year, so used a 10 oz. bag of Hershey Kissables and they came out just as good.* --K

CHOCOLATE SNOWBALLS

Chocolate Snowballs image

Growing up, these were always made for every kid's birthday party and for Christmas. They are so easy to make and very fudgy. The yield on these will vary depending on how big you make the snowballs. The "cooking" time is the time it takes for the mixture to cool.

Time 45m

Yield 20-30 serving(s)

Number Of Ingredients 7

2 cups sugar
3/4 cup milk
1/2 cup butter
3 cups rolled oats
2 cups coconut
5 tablespoons cocoa
1 teaspoon vanilla

Steps:

  • Boil sugar, milk and butter gently for 5 minutes.
  • Remove from heat.
  • Fold in rolled oats, 1 cup coconut, cocoa and vanilla.
  • Chill mixture for about 1/2-1 hour. Form into balls and roll into remaining coconut.
  • Some tips for getting the texture of these correct:.
  • -- Be precise with your measurements.
  • -- Boil for no more than 5 minutes and time it from point it starts to boil.
  • -- Do not stir the mixture as it boils. This can cause crystallization of the sugar and results in a hard end product.

Yield Serves 2

Number Of Ingredients 8

vanilla ice cream, scooped into 4 balls and frozen for 15 minutes
1 cup sweetened coconut (about a 3 1/2-ounce can), toasted lightly if desired and chopped fine
1/3 cup firmly packed light brown sugar
1 tablespoon light corn syrup
2 tablespoons instant espresso powder
1 1/2 ounces unsweetened chocolate, chopped fine
1/4 cup heavy cream
1 tablespoon Kahlúa

Steps:

  • In a shallow dish roll the ice-cream balls in the coconut, coating them heavily, and freeze the snowballs while making the mocha sauce. In a small heavy saucepan combine the brown sugar, the corn syrup, and the espresso powder, bring the mixture to a boil over moderate heat, stirring, and cook it, stirring constantly, for 3 minutes, or until the sugar is dissolved. Remove the pan from the heat, stir in the chocolate, the cream, the Kahlûa, and a pinch of salt, and stir the sauce until it is smooth. Pour some of the mocha sauce onto each of 2 plates, divide the snowballs between the plates, and serve the remaining sauce separately.
