CHOCOLATE BAKED BANANAS
These fruity treats taste fabulous and are fun to make, try popping them on the barbie

Steps:
- Heat oven to 200C/180C fan/gas 6 (or a BBQ). Make a slit through the skin of the bananas along one side - making sure you don't cut all the way through to the other side. Poke in the chocolate buttons along the cut. Put each banana onto a sheet of foil and crimp the edges together to seal into a parcel. Transfer to a baking sheet and cook for 25 mins until the bananas have turned black (or pop straight into the BBQ embers for 15 mins).
- Serve with a scoop of ice cream and any melted chocolate that has escaped!

CAMPFIRE BANANAS AT HOME
Steps:
- Place a rack in the upper third of the oven and heat oven to 400 degrees F.
- Slice bananas down the center vertically. Wrap individually in foil. Top each banana with chocolate chips and marshmallow. Seal the foil and place on a rimmed baking sheet. Bake for 6 to 8 minutes or until chocolate and marshmallow has melted and the bananas are softened slightly.
- Remove from the oven, carefully open the foil and top with whatever toppings you'd like. Enjoy and Happy Summer!
BANANA CAKE WITH WHITE CHOCOLATE MACADAMIA FROSTING
Steps:
- Preheat the oven to 350 degrees F. Place 12 cupcake liners into a cupcake pan.
- In a medium bowl, cream the white sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine the flour, pudding mix and baking powder. Then add to the creamed mixture and mix well. Pour in the buttermilk and stir until the batter is smooth. Stir in the mashed banana. Pour or spoon the batter into the cupcake liners in the cupcake pan. Bake until the cake springs back to the touch, 18 to 20 minutes. Test cake doneness approximately 15 minutes into baking time. Cool.
- To assemble: Frost the cooled cupcakes with the Buttercream Frosting. Roll the cupcake tops and sides in the macadamia nuts.
- Slowly combine the butter into the confectioners' sugar, 1/2 cup at a time. After well incorporated, add white chocolate and vanilla. Whip well until light and fluffy.

- Preheat oven to 325°. In a large bowl, mix the first six ingredients. Stir in egg whites, corn syrup and vanilla until blended. , Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake until set and dry to the touch, 15-20 minutes. Cool on pans 5 minutes. Remove to wire racks to cool completely., Dip bottom of each cookie in melted chocolate, allowing excess to drip off. Place on waxed paper; let stand until set. - Preheat oven to 350 degrees with racks in upper and lower thirds. In a large bowl, using an electric mixer, beat butter and sugar on medium-high until light and fluffy, 2 minutes. Add egg yolk, lemon zest and juice, and salt and beat until combined; beat in nuts. With mixer on low, add flour and beat just until combined, 2 minutes. Form dough into a 4 1/2-inch-long log, wrap in plastic, and freeze until firm, 30 minutes. Cut into 1/4-inch slices, transfer to 2 parchment-lined baking sheets, and freeze 5 minutes. Bake until golden at edges, 14 minutes, rotating sheets halfway through. Let cookies cool completely on wire racks.
- Microwave chocolate in 30-second increments, stirring after each, until melted. Dip half of each cookie into chocolate; transfer to parchment-lined baking sheets. Chill until set, 10 minutes.

- Preheat the oven to 425 degrees F.
- Cut off the ends of the bananas and place the unpeeled bananas on an ungreased cookie sheet. Bake for about 15 minutes, or until their skins burst and turn black. Discard the skins (once cooled a bit) and cut the bananas lengthwise.
- Mix the melted butter, brown sugar and lemon and then drizzle it over the cooked bananas. Enjoy!

CHOCOLATE BANANA BREAD WITH SALTED MACADAMIA NUTS

- Preheat oven to 175°C/350°F. Mash most of the bananas with a fork. Add vanilla extract, sugar, and salt and whisk to combine. Melt the coconut oil and half of the chocolate, add to the banana mixture and whisk to combine.
- Mix baking powder, cocoa, and flour, sieve into the banana mixture and fold in until you have a smooth batter (feel free to taste).
- Chop the remaining chocolate and macadamia nuts, then fold in with a scraper. Grease your loaf pan and lay out some parchment paper. I like to let some hang over the edges, so I can lift the baked banana bread out effortlessly.
- Fill the loaf pan with the batter. For decoration, slice the leftover banana lengthwise, arrange on top of the batter, and sprinkle some brown sugar over it to caramelize.
