3 cups dried split peas, rinsed and picked over
1 1/2 pounds russet potatoes (about 3), peeled and cut into 1/2-inch pieces
7 carrots, sliced 1/2 inch thick (3 cups)
2 green bell peppers, cut into 1/4-inch pieces (2 cups)
2 medium onions, cut into 1/2-inch pieces (2 cups)
2 cloves garlic, minced
1 teaspoon dried thyme
Salt and pepper

Steps:

  • In a large pot, combine split peas, potatoes, carrots, peppers, onions, garlic, thyme, and 4 quarts water.
  • Bring to a boil over high heat. Reduce heat, cover partially, and simmer, stirring occasionally, until peas have broken down and liquid has thickened, about 45 minutes. Add extra water as necessary and skim foam from the surface as needed. The consistency should be smooth and not too thick.
  • Season soup with salt and pepper.

VEGAN SPLIT PEA SOUP I

This makes a very thick vegetarian split pea soup. To make it thinner, reduce the amount of split peas or add more water. Depending on the density of split peas, it may take a while for the vegetables and peas to soften, but you can't really overcook this soup; just stir occasionally, and add water if it gets too dry. Seasonings can be altered to taste. Tastes even better reheated.

1 tablespoon vegetable oil
1 onion, chopped
1 bay leaf
3 cloves garlic, minced
2 cups dried split peas
½ cup barley
1 ½ teaspoons salt
7 ½ cups water
3 carrots, chopped
3 stalks celery, chopped
3 potatoes, diced
½ cup chopped parsley
½ teaspoon dried basil
½ teaspoon dried thyme
½ teaspoon ground black pepper

Steps:

  • In a large pot over medium high heat, saute the oil, onion, bay leaf and garlic for 5 minutes, or until onions are translucent. Add the peas, barley, salt and water. Bring to a boil and reduce heat to low. Simmer for 2 hours, stirring occasionally.
  • Add the carrots, celery, potatoes, parsley, basil, thyme and ground black pepper. Simmer for another hour, or until the peas and vegetables are tender.

¾ cup uncooked orzo pasta
1 cup chopped onion
1 cup chopped celery
2 cloves garlic, minced
1 ½ cups chopped carrots
1 tablespoon olive oil
1 quart vegetable broth
1 cup dried split peas
1 teaspoon dried thyme
½ teaspoon dried chipotle chile pepper
salt and pepper to taste

Steps:

  • Bring a medium-size pot of salted water to a boil, add orzo and cook until al dente. Drain well.
  • In a large skillet, saute onion, celery, garlic, and carrots in olive oil for 5 minutes.
  • Place vegetables, vegetable broth, peas, thyme, chile pepper, salt and pepper in a pressure cooker. Cover. When pressure cooker reaches full pressure, cook for 10 to 12 minutes. Remove the pressure cooker from the heat. Add cooked orzo and serve.
  • Note: If you would like creamier soup, puree soup in a food processor or blender. Add additional broth to bring the soup to the consistency you desire.

7 cups water (may need more) or 7 cups vegetable stock (may need more)
1 bay leaf
2 teaspoons salt
1 teaspoon dry mustard
2 cups onions, minced
4 medium garlic cloves, minced
3 stalks celery, minced
2 medium carrots, sliced
1 potato, diced
fresh ground black pepper
1 -4 tablespoon balsamic vinegar, to taste (or red wine vinegar)
sesame oil (optional)
fresh ripe tomatoes, diced (optional)
fresh parsley, minced (optional)

Steps:

  • Place first 5 ingredients in a large pot.
  • Bring to a boil, reduce heat to low, and simmer, partially covered for about 20 minutes, stirring occasionally to prevent split peas from sticking to bottom of pot.
  • Add onions, garlic, celery, carrots and potato. (You can saute these first or add them in directly if you want a fat free soup).
  • Partially cover and allow to simmer for about 40 minutes, stirring occasionally.(You may need to add extra water).
  • Season to taste with pepper and vinegar.
  • Serve with a drizzle of sesame oil, diced tomato and minced parsley.

1 tablespoon extra virgin olive oil
2 large onions, chopped
1 teaspoon fine-grain sea salt
2 cups dried split green peas, picked over and rinsed
5 cups water, plus more to finish
juice of 1 lemon (reserve the zest)
To finish: a few pinches of smoked paprika, olive oil, toasted almonds, and/or, scallions

Steps:

  • Add olive oil to a big pot over med-high heat. Stir in onions and salt and cook until the onions soften, just a minute or two. Add the split peas and water. Bring to a boil, dial down the heat, and simmer for 20 minutes, or until the peas are cooked through (but still a touch al dente).
  • Using a large cup or mug ladle half of the soup into a bowl and set aside. Using a hand blender (or regular blender) puree the soup that is still remaining in the pot. Stir the reserved (still chunky) soup back into the puree - you should have a soup that is nicely textured. If you need to thin the soup out with more water (or stock) do so a bit at a time - there are times I need to add up to 3 1/2 cups extra.
  • Stir in the lemon juice and taste. If the soup needs more salt (likely), add more a bit at a time until the flavor of the soup really pops.

3 carrots, sliced
2 tsp olive oil
3-4 small gold potatoes, cut into 1/2″ dice
1 tsp oregano
1 tsp dried thyme
1 lb split peas, rinsed
8 cups veggie broth
1/8 - 1/4 tsp cayenne pepper
1/4 - 1/2 tsp salt
a bunch of freshly cracked black pepper
5 cups cubed day-old bread
1 Tbsp sumac*
2 Tbsp olive oil

Steps:

  • Preheat your oven or convection toaster oven to 400°F.
  • Warm the olive oil in a large stock pot over medium-high heat. Add the onions and carrots and cook until starting to brown, about 5 minutes. Add the diced potatoes, oregano, and thyme and mix. Add the peas and veggie broth, stir well, and bring to a rolling boil. Turn the heat to low, then partially cover and simmer, stirring occasionally, until the peas turn to mush, about 45 minutes.
  • While the soup cooks, toss the cubed bread with the olive oil, then sprinkle on the sumac and toss to distribute. Spread the bread out onto a greased baking sheet and bake for 15 minutes, tossing once halfway through.
  • When the soup is done cooking, add cayenne pepper, salt, and a bunch of black pepper to taste. Serve the soup topped with a few croutons and some extra black pepper. Enjoy!

1 yellow onion (chopped)
6 cloves garlic (finely chopped)
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon marjoram
1/4 teaspoon black pepper
8 cups vegetable stock/broth
2 teaspoons Worcestershire sauce (or soy sauce)
4 medium Yukon gold potatoes (peeled and cubed)
2 large carrots (peeled and chopped)
Salt to taste

Steps:

  • Rinse split peas. Set aside.
  • In a large pot on medium heat, add the oil and chopped onion. Sauté until the onion is translucent.
  • Add in the garlic, smoked paprika, thyme, marjoram, and black pepper and sauté for an additional two minutes.
  • Add the split peas, vegetable stock, and Worcestershire sauce to the pot.
  • Bring to a boil on high. Reduce heat to low, cover with lid, then simmer for 60-75 minutes, or until the peas are tender and beginning to disintegrate.

2 cups dried yellow split peas, (washed and rinsed)

4 cups vegetable stock
4 cups water
3 whole bay leaves
1 teaspoon turmeric
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • In a stock pot, over medium heat, add the olive oil, onions, carrot, and celery. Sauté for 5 minutes.
  • Add the garlic and sauté for 2 more minutes.
  • Add the split peas and turmeric, stir into the vegetable mixture, and sauté for 3 minutes.
  • Add the vegetable stock and water, along with the salt, pepper, and bay leaves. Stir to combine. Cover and cook for 40 minutes, stirring occasionally to prevent the split peas from settling to the bottom of the pot.
  • Add the potatoes and stir to combine. Cover and continue to cook for 10 minutes.
  • Stir the soup and check the liquid level. At this point, the potatoes should be starting to soften, and the peas should be nearly dissolved. Add one cup of water if the peas are not nearly dissolved.
  • Cover and continue to cook for another 10 minutes. Check the potatoes for doneness again. Add another cup of water if needed. If not, cover and continue to cook until the potatoes are fork tender.
  • Once the potatoes are cooked, remove the lid and turn off the heat. Stir the soup well, and allow to sit for 5 minutes before serving.

Smooth or chunky. Your choice. If you are too lazy to chop vegetables (like me), use a food processor for a great shortcut.

1 tablespoon olive oil or vegetable oil ((or half oil, half butter))
1 medium to large sweet onion
3 large carrots, peeled
3 -4 celery ribs, scrubbed
3 garlic cloves, peeled
7 cups vegetable broth ( (I use one box plus 3 cups water))
2 cups (390 grams) green split peas ((or yellow split peas or mix of the two))
1/3 cup (16 grams) chopped fresh dill
1 -2 bay leaves
1 1/2 teaspoon kosher salt ((or more to taste - depends on saltiness of broth))
1/2 teaspoon black pepper
1 tablespoon fresh thyme ((or 1 1/2 teaspoon dried))

Steps:

  • CHOP VEGETABLES: Option #1: Dice carrots, celery and onion into 1/2 inch/1.3cm pieces - and mince the garlicOption #2 (shortcut): Cut vegetables into 2 inch/5 cm pieces and pulse them in the processor (this is a big shortcut so my preference!). I process onions in one batch, then carrots, garlic and celery in another. I leave a few larger chunks of carrots and celery to have some vegetables that hold their shape in the finished soup. If you plan to blend the soup into a purée, however, there's no need.
  • COOK ON STOVE TOP: (see Note 1 and 2 for other cooking methods)Sauté veggies: Heat oil on medium heat in a large pot. Add onions and sauté 3 minutes. Add celery and carrots and garlic and sauté 4-5 minutes. Shortcut: skip this step (and skip the oil) and just add everything to the pot and cook. Sautéing adds flavor though.Add broth and seasonings, then cook: Add peas, broth, water, dill and seasonings to pot. Bring to boil. 1 Medium Onion (White, Yellow or Brown, Chopped)
1 teaspoon Crushed Garlic
1 Tablespoon Olive Oil
1 teaspoon Oregano
2 cups Dried Green Split Peas ((450g))
2 Large Carrots (Chopped)
2 Large Potatoes (Peeled and chopped)
8 cups Vegetable Stock ((1920ml))
14 ounces Canned Coconut Milk ((400ml) Full Fat, Unsweetened)
Sea Salt (to taste)
Black Pepper (to taste)

Steps:

  • Add the chopped onion and crushed garlic to a pot with the olive oil and oregano. Sauté until softened.
  • Add the dried green split peas, chopped carrots and potatoes and the vegetable stock.
  • Bring to the boil and then cover and turn the heat down to a simmer. Simmer for around 45 minutes, stirring now and again (be careful it doesn't stick to the bottom of the pot) until everything is soft and cooked. It will become very thick, like a very thick stew.
  • When cooked remove from the heat and blend with an immersion blender if you have one. If you don't have one then either leave the soup chunky or transfer in stages to a blender jug and blend it.
  • When blended it will be very thick and smooth. Now add in the coconut milk and stir in.
  • Add sea salt and black pepper to taste.
  • Serve with chopped spring onions to garnish and bread for dipping.

2 tablespoons olive oil
1 medium onion, (diced)
2 medium carrots, (diced)
2 medium celery stalks, (diced)
3 garlic cloves, (minced)
2 teaspoons ground cumin
6 cups vegetable broth
1 pound dried split peas
Hot water, (as needed (I used about 1 cup))
2 teaspoons red wine vinegar
1/2 teaspoon liquid smoke, (or to taste)
Salt and pepper, (to taste)

Steps:

  • Coat the bottom of a large pot with oil and place it over medium heat.
  • Give the oil a minute to heat up, then add the onion, carrot and celery.
  • Sweat the vegetables for about 10 minutes, until they soften up a bit.
  • Add the garlic and cumin, and cook them with the vegetables until the garlic becomes very fragrant, about 1 minute.
  • Stir in the broth and peas. Raise the heat and bring the liquid to a boil.
  • Lower the heat and allow the soup to simmer until the peas are very soft and falling apart, about 1 hour to 1 hour and 15 minutes. Keep a bowl of hot water near the stove and add it as the broth dries up.
  • When the soup has finished simmering, remove it from the heat and stir in the vinegar and liquid smoke. Season the soup with salt and pepper to taste.
  • Ladle into bowls and serve.
  • Press the "sauté" button on your Instant Pot then add the oil.
  • Give the oil a minute to heat up, then add the onion, carrot and celery.
  • Sweat the vegetables for about 5 minutes, until they begin to soften up.
  • Add the garlic and cumin, and cook them with the vegetables until the garlic becomes very fragrant, about 1 minute. Hit the "cancel" button.
  • Stir in the broth and peas.
  • Place the lid on your Instant Pot and set the valve to the "sealing" position. Press the "pressure cook" or "manual" button and set the pressure to high. Set the soup to cook for 15 minutes.
  • When the soup has finished cooking, carefully move the valve to the "venting" position. Let the pressure release completely.
  • Remove the lid from the Instant Pot. Stir in the vinegar and liquid smoke. Season the soup with salt and pepper to taste.
  • Ladle into bowls and serve.

2 tablespoons vegetable oil
2 celery ribs, sliced
1 onion, diced
2 carrots, sliced
1 turnip, peel and dice (optional)
1 medium potato, peel and dice
1 cup brown rice, uncooked
8 ounces spinach, chopped
4 cups vegetable broth
4 cups water (or more as needed)
1 tablespoon chopped parsley

  • In a large soup pot, saute onion and celery in oil until tender. Add carrots, turnip, and potato. Saute about 5 more minutes. Add water, broth, peas, rice, and spinach.
