FRENCH POTATO DAUPHINOISE

French Potato Dauphinoise image

Dauphinoise is the French method of baking potatoes in milk, cream, and cheese. In France, every home cook has his or her own formula.

Provided by Brett Moore

Categories     Side Dish

Time 2h10m

Yield 8

Number Of Ingredients 10

1 garlic clove, halved
2 tablespoons butter, divided
1 1/2 cups whole milk
1 1/2 cups heavy cream, divided
1 large egg
1 cup shredded Emmenthaler cheese, divided
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon grated nutmeg
2 1/2 pounds Yukon Gold potatoes , peeled, thinly sliced, rinsed, and patted dry

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F. Rub inside of baking dish with garlic clove and use 1 tablespoon of butter to grease dish.
  • In a large saucepan, heat milk and 3/4 cup cream until bubbles appear around sides of pan. Set aside.
  • In a medium bowl, beat egg lightly.
  • Gradually whisk in hot milk mixture. Use a thin stream to temper egg; adding too much hot liquid can make scrambled eggs.
  • Once all the hot liquid is mixed with the egg, add 3/4 cup of the cheese and return mixture to saucepan.
  • Cook over medium heat, continuously stirring, for 3 to 4 minutes to melt cheese. Season with salt, pepper, and nutmeg.
  • Add potato slices to sauce and stir to coat.
  • Transfer potatoes to buttered baking dish and spread out in an even layer.
  • Sprinkle remaining cheese on top and add remaining butter on top cubed in tiny pieces.
  • Place baking dish in oven and raise heat to 400 F. Bake for 1 hour.
  • Transfer gratin to a heat-proof surface and let cool for 15 minutes.
  • Loosen sides of the gratin with a flat knife and brush top of gratin with remaining 3/4 cup of heavy cream.
  • Return baking dish to oven and bake for 15 minutes. Turn off heat and let gratin finish browning in the receding heat for 30 minutes longer.

GRATIN DAUPHINOIS - CLASSIC FRENCH POTATOES BAKED IN CREAM

Gratin Dauphinois - Classic French Potatoes Baked in Cream image

Very simple with no cheese topping or onions, just potatoes, butter, and cream, with a bit of garlic. Optional - If you add cheese to this dish, it will become a Gratin Savoyard. The recipe originated in the Dauphine, a region of mountains, forests, and pasturelands that lies between the Savoy with its alpine lakes and snowy peaks, and Provence, home to sunshine and lavender. Serve with meat or poultry. Note: Make sure your baking dish is large enough to allow the cream to completely cover the potatoes. Adapted from Williams-Sonoma.

Time 2h25m

Yield 6 serving(s)

Number Of Ingredients 7

3 garlic cloves
3 1/2 lbs charlotte potatoes or 3 1/2 lbs russet potatoes, peeled
salt & freshly ground black pepper
1 1/4 cups heavy double cream or 1 1/4 cups whipping cream
2 cups grated gruyere cheese (optional)
4 tablespoons unsalted butter, cut into bits
2 tablespoons mixed chopped fresh chives and flat-leaf Italian parsley

Steps:

  • Preheat oven to 375F (190C).
  • Rub a large 3-qt. (3-l) baking dish about 3 1/2 inches deep with a split garlic clove and butter generously.
  • Chop the garlic.
  • Using a mandolin or a sharp knife, slice the potatoes as thinly as possible, about 1/8 inch (3 mm) thick. Blot the slices dry with paper towels.
  • Spread a layer of potatoes in the prepared dish, slightly overlapping them if desired, and sprinkle with salt & pepper; cover evenly with a small amount of cream, and sprinkle with a little chopped garlic (sprinkle layers and top with grated gruyere cheese, if using).
  • Repeat the layering until all the potatoes and garlic are used and the potatoes are completely submerged by the cream.
  • Dot with small bits of butter.
  • Bake in the hot preheated oven for a good hour, then increase the temperature to 400F (200C) for the last 15-20 minutes until the potatoes have absorbed all of the cream and the top has turned a nice golden brown in color.
  • Serve in the cooking dish straight from the oven, sprinkling each portion with some of the chives and parsley.
  • Menu idea: Serve with steak, peaches in red wine and a beaujolais wine to drink!

CLASSIC FRENCH GRATIN DAUPHINOIS

Classic French Gratin Dauphinois image

Potatoes, milk, cream and a touch of other ingredients. The Classic French Gratin Dauphinois is proof that French cuisine doesn't have to be complicated and often relies on simple ingredients to create a decadent dish. In this traditional French gratin, thinly sliced potatoes are baked slowly in creamy milk until utterly tender. It is a great classic of the French culinary repertoire, and one of the most beloved dishes to make in the Winter. As its name suggests, the Gratin Dauphinois hails from the Dauphiné, a former province of southeastern France. Straddling...

Time 1h

Yield 6-8 people

Number Of Ingredients 1

1.65 lbs baking potatoes, ie. Russet or Yukon Gold1 cup (240ml/8 fl oz) heavy cream (35% mf)½ cup (125ml/4 floz) milk, whole or 2%½ tsp freshly grated nutmeg½ tsp freshly ground black pepper1 tsp salt2 tbsp (28g) butter (salted or unsalted), at room temperature.1 garlic clove, cut in halfOptional: 1/3 cup (about 40g) Gruyère Cheese, grated.

Steps:

  • Preheat your oven to 350F (180C), with a rack in the middle.
  • Step 1 - In a large pot over medium heat, combine the cream, milk, nutmeg, pepper, and salt and bring to a simmer.
  • Step 2 - Peel the potatoes and thinly slice them, ideally with a mandoline. Drop the potato slices immediately into the milk (to avoid browning). Cover the pot and simmer for 10 minutes, until potatoes are just tender and can be easily pierced with a sharp knife. Stir occasionally to avoid having the potatoes stick to the bottom of the pan. Remove from heat.
  • Step 3 - Rub the inside of a gratin dish with the cut side of a halved garlic clove. Then, grease the inside of the dish evenly with 1 tablespoon of butter. Transfer the potatoes and milk to the dish and spread them out in an even layer. Dot the top with the remaining 1 tablespoon of butter.
  • Step 4 - Cover the dish with foil, poke a small hole in the center of the foil (for the steam to escape) and bake for 30 minutes. Remove the foil and sprinkle the grated cheese evenly on top of the gratin. Bake for another 30 minutes (uncovered) until the cheese turns golden. Let the gratin rest for at least 15 minutes before serving.

CLASSIC FRENCH GRATIN DAUPHINOIS

Classic French Gratin Dauphinois image

A French gratin Dauphinois is a classic dish and the ultimate comfort food. It is so easy to make with soft, melting potatoes plus a garlicky cream sauce.

Provided by Rebecca Franklin

Categories     Side Dish     Dinner

Time 1h45m

Yield 8

Number Of Ingredients 10

2 pounds baking potatoes (peeled and cut crosswise into 1/4-inch slices)
5 cups whole milk
2 garlic cloves ( very lightly crushed )
1 1/2 cups heavy cream
1 1/2 cups crème fraiche (or sour cream)
1 teaspoon salt
1/4 teaspoon ground black pepper
Pinch nutmeg (freshly grated)
2 tablespoons unsalted butter (softened)
Optional: 2/3 cup Gruyere cheese (coarsely grated)

Steps:

  • Gather the ingredients.
  • In a large saucepan over medium heat, bring the potatoes, milk, and garlic to a gentle simmer.
  • Continue to cook the potatoes, gently stirring occasionally and adjusting the heat as necessary to maintain a simmer, until just tender, about 15 minutes. Be very careful not to overcook them as they need to hold their shape for layering in the pan. Position a rack in the center of the oven and preheat to 350 F.
  • Transfer the potatoes to a medium bowl with a slotted spoon, taking care not to break the slices. Drain the milk from the pan and reserve for another use. Add the heavy cream, crème fraiche or sour cream, salt, pepper, and nutmeg to the saucepan and whisk to combine. Gently return the potatoes to the pan.
  • Heat the potato-cream mixture to barely a simmer (a few bubbles are fine but no more) for 10 to 15 minutes until the potatoes are very tender but not falling apart.
  • Butter a large baking dish. Transfer the potatoes to the baking dish with a slotted spoon, layering them without breaking them up too much.
  • Cover with the cream from the pan.
  • Sprinkle the Gruyere cheese over the potatoes (if using).
  • Bake in the oven until the potatoes are golden brown on top and the cream is mostly absorbed, about 50 minutes.
  • Serve with your favorite main dish. Enjoy!

CLASSIC BISTRO STYLE GRATIN DAUPHINOIS - FRENCH GRATIN POTATOES

Classic Bistro Style Gratin Dauphinois - French Gratin Potatoes image

This classic French potato gratin dish is world famous, and rightly so! I am quite happy to have this as a main meal, with just some crusty bread and a large mixed salad on the side. I have heard that this famous dish was created as a way of encouraging the "Dauphin" (the young prince destined to become King Henri II), to eat up his vegetables, hence the name! Maybe - it is certainly just as popular with children, as it is with adults. Try to slice the potatoes as thinly as possible for the best results. A wonderful accompaniment for all sorts of roast meats, stews, casseroles and poultry. This recipe is not strictly French, using as it does a Swiss cheese.

Provided by French Tart

Categories     One Dish Meal

Time 1h45m

Yield 4-6 serving(s)

Number Of Ingredients 9

3 lbs waxy potatoes, peeled and thinly sliced (such as Desiree, Golden Wonder, Maris Piper, Idaho or King Edward)
6 ounces gruyere cheese, grated
3/4 pint double cream
salt
fresh ground black pepper
2 -4 garlic cloves, peeled and crushed
2 sprigs fresh thyme
1 ounce butter
cheese, for topping (optional)

Steps:

  • Preheat the oven to 300F/150C/gas mark 2.
  • Take a heavy-bottomed dish or an ovenproof gratin dish (a Le Creuset is ideal - the potatoes tend not to catch), and grease it will with some of the butter.
  • Layer the potato slices in the dish, slightly overlapping each other, seasoning lightly with the salt and pepper, and sprinkling a liberal amount of cheese on each layer.
  • Sprinkle cheese on the top of the last layer.
  • Put the double cream, garlic and sprigs of thyme in a pan and bring to them gently to the boil, then remove the thyme and pour hot cream over the potatoes.
  • Dot the top of the gratin with the remaining butter and some extra cheese if you wish, and bake for about 1 hr to 1 1/2 hrs, or until the potatoes are soft, and the top is crispy and golden brown.
  • Serve bubbling hot as a main meal or as an accompaniment.
