RED, WHITE AND BLUE MASHED POTATOES



Red, White and Blue Mashed Potatoes image

2 pounds red new potatoes, quartered
2 cloves garlic, smashed
5 to 6 strips bacon
1/4 pound Gorgonzola cheese, room temperature
1/4 cup heavy cream, room temperature
1 tablespoon butter, room temperature
Salt and freshly ground black pepper

Steps:

  • Add potatoes and garlic to a medium pot and fill with enough cold water to cover the potatoes by an inch. Season with salt and bring water to a boil. Reduce to a simmer and cook until potatoes are soft, about 15 minutes.
  • Meanwhile, fry bacon in a skillet until crisp. Set aside on a paper towel to drain. Roughly chop and reserve.
  • Drain potatoes and garlic and place them back in the pot with the cheese, heavy cream, butter and chopped bacon. Roughly mash, adding more cream if needed. Season with salt and pepper, to taste.

1/2 cup scallion
1/2 cup celery
1/4 cup green onion
1 tablespoon parsley
1/4 cup butter, melted

1/2 teaspoon paprika
2 tablespoons butter

Steps:

  • Peel and quarter potatoes. cook potatoes in boiling salted water until tender.
  • Drain and return to pan on low heat, shaking to dry potatoes. In large bowl of electric mixer, cream together cream cheese, and sour cream.
  • Add hot potatoes one at a time to cream mixture and continue beating at high speed until light and fluffy.
  • On low speed add minced scallions, celery, green pepper, parsley, 1/4 cup melted butter, garlic powder, salt ant pepper.
  • Spoon into a 3 quart baking dish.

  • Put 1 3/4 pounds baby potatoes in a pot and cover with water. Add 2 bay leaves, 2 garlic cloves and a big pinch of salt; bring to a boil. Reduce to a simmer and cook until the potatoes are tender, 20 to 25 minutes. Drain, discarding the bay leaves and garlic. Toss the potatoes with 2 tablespoons olive oil, transfer to a baking sheet and smash with a spatula or measuring cup. Drizzle with more olive oil and season with salt and pepper. 1 cup sour cream
1 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon black pepper
1/4 teaspoon paprika
2 tablespoons butter or margarine, cut in pieces

Steps:

  • In a large saucepan over medium heat, cover and cook potatoes in boiling salted water for 30 minutes or until tender. Drain and return saucepan to low heat, shaking pan to dry potatoes. Remove from heat cover and keep hot.Preheat oven to 375°.Meanwhile, in a medium saucepan over medium heat, saute green onions, celery, green pepper and parsley in 1/4 cup butter or margarine for 5 to 8 minutes or until tender set aside.In a large mixer bowl at medium speed, beat cream cheese and sour cream until blended and fluffy. Add hot potatoes, one at a time, and continue beating until all potatoes are added. Increase speed to high and beat until smooth and fluffy. 1 egg white
¼ cup butter
½ cup half-and-half cream

Steps:

  • Place potatoes and lemon juice in a large saucepan, and add enough water to cover. Bring to a boil over medium-high heat, and cook until tender, about 15 minutes.
  • Drain water from potatoes, and use a potato masher to mash. Stir in egg white and butter, and gradually mix in the half-and-half using the masher. Use more or less cream to reach your desired consistency. Season with salt and pepper to taste.
