Categories     Cookies

Time 2h30m

Number Of Ingredients 11

2 cups + 2 Tablespoons (265g) all-purpose flour (spoon & leveled)
1 teaspoon cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup (1.5 sticks or 170g) unsalted butter, melted + slightly cooled
3/4 cup (150g) packed light or dark brown sugar
3/4 cup (150g) granulated sugar
1 large egg + 1 egg yolk, at room temperature
1 and 1/2 teaspoons pure vanilla extract
1 heaping cup (210g) white chocolate chips*
1 cup (120g) roughly chopped macadamia nuts*

Steps:

  • Whisk the flour, cornstarch, baking soda, and salt together in a large bowl. Set aside.
  • Whisk the melted butter, brown sugar, granulated sugar, egg, egg yolk, and vanilla extract together until combined. Pour into dry ingredients and mix everything together with a rubber spatula until completely combined. Fold in the white chocolate chips and macadamia nuts. (You can use a mixer for this step if needed.)
  • Cover and chill the dough in the refrigerator for at least 2 hours and up to 4 days. If chilling for longer than 2 hours, allow to sit at room temperature for at least 20-30 minutes before rolling and baking because the dough will be quite hard.
  • Preheat oven to 350°F (177°C). Line baking sheets with parchment paper or silicone baking mats. Set aside.
  • Roll cookie dough into balls, about 1-1.5 Tablespoons of dough per cookie, and arrange 3 inches apart on the baking sheets. Bake for 12-13 minutes or until lightly browned on the sides. The centers will look soft.
  • Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • Cookies stay fresh covered at room temperature for up to 1 week.

2 teaspoons pure vanilla extract
2 extra-large eggs at room temperature

SOFT & CHEWY WHITE CHOCOLATE CHUNK MACADAMIA NUT COOKIES

Soft & Chewy White Chocolate Chunk Macadamia Nut Cookies image

These cookies are thick, soft, and chewy - just what you want a chocolate chunk cookie to be. They're not too sweet, except when you happen across a nice cool hunk of white chocolate, and when that happens at the same time as when you get a bit of salty macadamia nut, it's pure cookie nirvana.

Provided by Kare for Kitchen Treaty

Time 30m

Number Of Ingredients 11

1 cup 2 sticks unsalted butter, room temperature
1 cup packed dark brown sugar
3/4 cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon freshly ground nutmeg (optional)
1 1/2 cups white chocolate chunks (about 8 ounces, chopped)
1 cup coarsely chopped roasted salted macadamia nuts (about 4 1/2 ounces)

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Line cookie sheet with parchment paper or Silpat.
  • In the bowl of a stand mixer affixed with paddle attachment, beat the butter on medium speed until pale and fluffy, about 2 minutes (or use a large bowl and a hand mixer).
  • Add the brown sugar and granulated (white) sugar and continue beating on medium speed for about 2 minutes.
  • Add the eggs one at a time, continuing to beat each time until well-incorporated. Mix in the vanilla.
  • In a medium bowl, sift together the flour, baking soda, salt, and nutmeg.
  • With the mixer on low speed, carefully add the dry ingredients to the wet ingredients and mix just until the ingredients are incorporated. Stir in the white chocolate chunks and the macadamia nuts.
  • Scoop a generous tablespoonful of the dough (I use this cookie dough scoop) and roll into a ball. Tear the ball in half, turn each half a quarter turn, and smoosh the dough back together with the torn side now at the top of the cookie. Gently shape so that the dough ball is taller than it is wide and place on cookie sheet about three inches apart.
  • Bake for about 10 minutes, until edges of cookie begin to turn golden brown. Remove from oven and let sit for 5 - 10 minutes on cookie sheet so the cookie can set. Carefully move to wire rack to cool completely.
  • Cookies stay fresh when kept in a sealed container at room temperature for 3 - 4 days, or can be frozen for up to two months.

CHOCOLATE MACADAMIA COOKIES WITH WHITE CHOCOLATE CHUNKS

Chocolate Macadamia Cookies With White Chocolate Chunks image

The cookies are flavorful, without an overpowering sweetness or richness. The chocolate cookie dough bakes to buttery, crumbly texture, much like a shortbread. The macadamias add a rich nuttiness, and white chocolate imparts the sweetness. The recipe is from Pillsbury Best Cookies Cookbook. They're listed as editor's favorite, and chocoholic's choice. The prep time was listed at 45 minutes, but it only took me 15. I avoided chopping the chocolate and nuts by buying white chocolate chunks (instead of bar chocolate), and putting the nuts into a plastic ziplock bag and giving them a good beating with a rolling pin. Be careful not to turn them into flour. Next time I make them I will do half butter, half shortening, and add a teaspoon of vanilla. I used dutch process cocoa, since that's what was in the pantry.
