One word: scrumptious! Very moist, tasty and full of chocolate goodness! Even better the next day.

2 cups all-purpose flour
1 cup white sugar
¾ cup chocolate chips
½ cup unsweetened cocoa powder
1 teaspoon baking soda
1 egg
1 cup plain yogurt
½ cup milk
1 teaspoon vanilla extract
½ cup vegetable oil
¼ cup chocolate chips

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  • Combine flour, sugar, 3/4 cup chocolate chips, cocoa powder, and baking soda in a large bowl. Whisk egg, yogurt, milk, vanilla, and vegetable oil in another bowl until smooth; pour into chocolate mixture and stir until batter is just blended. Fill prepared muffin cups 3/4 full and sprinkle with remaining 1/4 cup chocolate chips.
  • Bake in preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

These cute filled chocolate cups get gobbled up whenever I set them out. The fluffy mint filling pairs well with the chocolate.

1 cup semisweet chocolate chips
12 large marshmallows
1/4 cup whole milk
1/2 teaspoon vanilla extract
1/8 teaspoon peppermint extract
3 drops red or green food coloring
Dash salt
1/2 cup heavy whipping cream
3 tablespoons crushed peppermint and/or spearmint candies, divided

Steps:

  • In a microwave, melt chocolate chips; stir until smooth. Brush evenly on the inside of 18 foil miniature muffin cup liners. Refrigerate until set. Add a second coat of chocolate; chill until set. , Meanwhile, in a small saucepan over medium-low heat, cook and stir marshmallows and milk until marshmallows are melted. Remove from the heat. Stir in the extracts, food coloring and salt. Cover and refrigerate for 1 hour or until thickened. , Carefully peel liners from the chocolate cups and discard. In a large bowl, beat cream until stiff peaks form. Fold in marshmallow mixture and 2 tablespoons crushed candies. Spoon into chocolate cups. Sprinkle with remaining candies. Store in the refrigerator.

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup granulated sugar
1 cup milk
30 large marshmallows (approximately)
2 eggs
1/4 cup canola oil
chocolate chips

Steps:

  • Preheat oven to 375 degrees fahrenheit
  • Grease a 12 cup muffin pan and set aside.
  • In a large saucepan put milk and marshmallows together over medium heat and stir until melted completely. Set aside to cool.
  • Assemble dry ingredients in a medium size bowl and put aside.
  • After the marshmallow mixture has cooled down pour into a large mixing bowl then add the eggs and oil and whisk until well combined.
  • Add the dry ingredients slowly and mix until just combined with other ingredients.
  • Pour batter into greased muffin cups and then add chocolate chips at your own discretion into each container.
  • Bake for approximately 15 minutes or until lightly browned on top
  • Remove from oven and wait 10 minutes before putting on a plate to cool.

1/2 cup melted butter or 1/2 cup margarine
1 cup sour cream
1/2 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups flour
1 teaspoon baking powder
1/2 cup walnuts
3/4 cup chopped marshmallows

Steps:

  • Heat oven to 400° and grease or line muffin pans (for 15).
  • In a mixing bowl, combine first 6 ingredients, mixing well.
  • Add the remaining ingredients except marshmallows; blend just until mixed.
  • Add in the marshmallows.
  • Pour into pans.
  • Bake for 15-20 minutes.
