1 cup butter, softened
3/4 cup packed brown sugar
1/2 cup sugar
1 large egg
1 teaspoon almond extract
2 cups all-purpose flour
1/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup white baking chips
1 cup chopped almonds

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and extract. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture and mix well. Stir in the chips and nuts. , Drop by teaspoonfuls onto ungreased baking sheets. Bake at 375° for 7-9 minutes. Cool on pans for 1 minute before removing to wire racks to cool completely.

1 cup (2 sticks) butter, at room temperature
1/4 cup plus 1 cup powdered sugar
1 teaspoon pure vanilla extract
2 cups flour
1/2 cup chocolate-hazelnut spread, at room temperature (recommended: Nutella)

Steps:

  • For the cookies: Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line 3 baking sheets with parchment paper or silicone liners. Set aside.
  • In a stand mixer fitted with the paddle attachment, beat the butter and sugar on high speed until light and fluffy, 2 to 3 minutes. Beat in the vanilla. With the machine running, gradually add the flour until incorporated. Beat in the chocolate-hazelnut spread. Using a small cookie scoop or a tablespoon, drop 12 balls of dough onto each baking sheet. Bake until the bottoms of the cookies flatten out slightly, 10 to 12 minutes. Cool for 5 minutes and transfer to a wire rack to cool completely, about 30 minutes.
  • Place 1 cup of powdered sugar in a medium bowl. In batches, roll the cookies in the sugar until coated. Store in an airtight container at room temperature.

Drop cookies, made from soft dough and dropped onto a baking sheet in balls, are a simple, old-fashioned treat that are prime for personalization. If you like nuts, add them in. Prefer mint chocolate chips to semi-sweet chips? Feel free to substitute. No matter what you add, you're sure to end up with a soft, cake-like cookie that packs on the chocolate flavor. Plus, once you pile on the chocolate icing, it's nearly impossible to have just one.To drop the cookies on your baking sheet, try using a tablespoon cookie scoop. On the recipe card Gramma Bea says this recipe came out of "The Spry Cook Book". I am only guessing here but I bet this recipe is from the 1950's. It is a wonderful soft cookie that always shows up on our Christmas cookie tray.

1 c brwn sugar (firmly packed)
1 egg
2 oz melted chocolate (unsweetened)
1/2 tsp salt
1 tsp vanilla

1 c copped walnuts (optional)

Steps:

  • 1. Combine shortening, brown sugar, egg, melted chocolate, vanilla & salt. Beat well. Add flour, soda & buttermilk. Mix well. If you want to you can add the chopped walnuts now. Drop by teaspoons on the cookie sheet and bake at 350 for 12 minutes. Cool and frost with a chocolate frosting & place 1/2 walnut or pecan on each cookie.

  • Heat oven to 400°F. Grease cookie sheet with shortening or cooking spray.
  • In large bowl, beat granulated sugar, 1/2 cup butter, the buttermilk, vanilla, egg and 2 ounces melted chocolate with electric mixer on medium speed, or mix with spoon. Stir in flour, baking soda and salt.
