- Once chocolate is fully melted pour into a parchment paper-lined 8x8 inch (20x20 cm) baking tin.
- Chill for 10 minutes.
- Add peanut butter and spread evenly.
- Chill for 2 hours or until the fudge is firm.
- Cut into bite-sized piece.

- Mix sugar, cocoa and milk in a saucepan. Bring to a rapid boil and boil for exactly one minute. Pour over peanut butter and vanilla and nuts in a bowl and beat until thick -- this only takes about a minute. Immediately pour onto a buttered platter and allow to cool. Cut into squares.
- Tip: Have your peanut butter and vanilla already in a bowl before boiling the mixture as you need to pour it over the peanut butter immediately.

- Butter one 9x9 inch pan.
- Combine the sugar, evaporated milk and cocoa in saucepan. Stir over high heat until mixture comes to a rolling boil. Lower heat to medium and continue cooking to a soft ball stage.
- Remove from heat, add peanut butter and margarine. Beat by hand until creamy; pour into prepared pan. Allow to cool and cut into squares.

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Drain on paper towels; set aside.
- Stir milk and unsweetened chocolate in a large saucepan over low heat until chocolate melts and mixture is thoroughly combined, 2 to 3 minutes; stir in sugar all at once. Whisk mixture, trying to clean the sides of pan as much as possible.
- Bring the mixture to a boil and cook, stirring constantly, until a candy thermometer inserted into the middle of the fudge reads 236 to 238 degrees F (110 to 115 degrees C), or candy forms a soft ball when dripped into cold water. Remove from heat as soon as candy hits the correct temperature; stir in bacon.
- Place butter squares onto fudge mixture and pour vanilla extract over the top. Set aside with thermometer in the fudge; do not disturb pot until temperature has dropped to 110 to 115 degrees F (43 to 46 degrees C).
- While fudge is cooling, line an 8x8-inch baking dish with aluminum foil and coat with butter. When fudge has reached 110 to 115 degrees F, stir in butter and vanilla extract thoroughly into the fudge; pour fudge into prepared pan.
- Refrigerate fudge for 30 minutes, then score the fudge in desired piece sizes; return to refrigerator for 2 more hours. Cut into pieces to serve.

- Stir sugar and cocoa powder together in large saucepan. Stir in milk. Heat at medium-high heat until boiling, then lower heat and let low boil continue. Stir occasionally.
- Have ready a greased pie plate or similar dish. Start checking temperature with a candy thermometer when bubbles get small and glossy. (Total cooking time will be 20 minutes or less depending on amount of milk.)
- Remove from heat when mixture reaches 235 F degrees or "soft ball" stage. Set pan in cold water to cool. Add vanilla extract.
- Let cool slightly and add peanut butter. Remove from cold water and stir quickly to mix in peanut butter. Pour fudge into pie plate. Let cool and cut into pieces.

STEPHEN'S CHOCOLATE PEANUT BUTTER MARBLE FUDGE
After hunting for the 'perfect' recipe, I decided to experiment on my own. This received rave reviews. We now just refer to it as "Stephen's Fudge". This has been adapted from an Eagle Brand recipe. Cooking time is chilling time. UPDATE Aug 18/08: I'm very happy to say that this recipe won Second Place in the Eagle Brand Category at our local fair.

- Lightly spray an 8 x 8 pan with oil. Lining it with parchment paper also works well.
- In a medium saucepan, mix together chocolate chips, peanut butter chips and sweetened condensed milk. Heat at medium temperature until chips have melted and mixture is smooth.
- Remove from heat and add the vanilla.
- Spread in the prepared pan.
- While still warm, add dollops of the peanut butter, and swirl with a knife to create the marble effect.
- Chill for at least 3 hours or until firm before cutting.

- COAT AN 8-INCH-SQUARE PAN WITH COOKING SPRAY. COOK BACON IN MICROWAVE UNTIL CRISP. CUT INTO SMALL PIECES.
- COMBINE ALL INGREDIENTS EXCEPT BACON IN A MEDIUM SAUCEPAN OVER MEDIUM LOW HEAT. STIR CONTINUOUSLY UNTIL CHIPS AND BUTTER ARE MELTED, AND MIXTURE IS THICK AND SMOOTH. REMOVE FROM HEAT. STIR IN BACON.
