Number Of Ingredients 14

1/2 cup butter, softened
2/3 cup sugar
1 large egg, room temperature, separated
2 tablespoons 2% milk
1 teaspoon vanilla extract
1 cup all-purpose flour
1/3 cup baking cocoa
1/4 teaspoon salt
1 cup finely chopped pecans
FILLING:
12 to 14 caramels
3 tablespoons heavy whipping cream
1/2 cup semisweet chocolate chips
1 teaspoon shortening

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolk, milk and vanilla. In another bowl, whisk flour, cocoa and salt; gradually beat into creamed mixture. Refrigerate, covered, 1 hour or until easy to handle., Preheat oven to 350°. Shape dough into 1-in. balls. In a shallow bowl, beat egg white. Place pecans in a separate shallow bowl. Dip balls in egg white, then in pecans, patting to help pecans adhere., Place 2 in. apart on greased baking sheets. Press a deep indentation in center of each with the end of a wooden spoon handle. Bake 10-12 minutes or until set. Remove from pans to wire racks to cool., In a large heavy saucepan, melt caramels with cream over low heat; stir until smooth. Fill each cookie with about 1/2 teaspoon caramel mixture. In a microwave, melt chocolate chips and shortening; stir until smooth. Drizzle over cookies; let stand until set. Store in an airtight container.

1/2 cup butter (unsalted, at room temperature)
2/3 cup sugar
1 large egg (separated)
2 tablespoon milk
1 teaspoon vanilla extract
1 cup all-purpose flour
1/3 cup cocoa powder
1/4 teaspoon salt
1 cup pecans (finely chopped, or walnuts)
1/2 cup powdered sugar
1 tablespoon butter (softened)
2 teaspoon milk
1/4 teaspoon vanilla extract
20 - 24 milk chocolate kisses

Steps:

  • Add butter and sugar to the bowl of your mixer and mix them together until light and fluffy. Beat in the egg yolk, milk and vanilla. Combine the flour, cocoa and salt; gradually add to butter mixture and mix well. Cover and refrigerate for 1 hour or until or until easy to handle.
  • Preheat oven to 350 F degrees.
  • In a small bowl, whisk egg white until foamy. Shape dough into 1 inch balls; dip in egg white, then roll in nuts. Place on greased baking sheets. Using a wooden spoon handle, make an indentation in center of each cookie. I used a cork. Bake for 10-12 minutes or until center is set. Carefully remove from pans to wire racks to cool.
  • For filling, combine the confectioners' sugar, butter, milk and vanilla; stir until smooth. Let the cookies cool completely before spooning or piping 1/4 teaspoon of the vanilla mixture into each cookie; gently press a chocolate kiss in the center.

1/2 cup plus 1 tablespoon butter, softened, divided
1/4 cup packed brown sugar
1 egg yolk
1 teaspoon vanilla extract
1 cup all-purpose flour
1 egg white, lightly beaten
3/4 cup finely chopped pecans
3/4 cup semisweet chocolate chips

Steps:

  • In a small bowl, cream 1/2 cup butter and brown sugar until light and fluffy. Beat in egg yolk and vanilla. Gradually add flour; mix well. Cover and refrigerate for 2 hours or until easy to handle., Roll dough into 1-in. balls. Dip in egg white, then coat with pecans. Place 2 in. apart on greased baking sheets. Using the end of a wooden spoon handle, make a 1/2-in. indentation in the center of each ball. , Bake at 325° for 10 minutes. Press again into indentations with the spoon handle. Bake 10-15 minutes longer or until pecans are golden brown. Remove to wire racks to cool., In a microwave-safe bowl, heat the chocolate chips and remaining butter until melted; stir until blended and smooth. Spoon into cooled cookies.

1 ½ cups unsalted butter, softened
1 cup white sugar
1 ½ teaspoons vanilla extract
3 ½ cups all-purpose flour
½ teaspoon salt
2 large eggs, lightly beaten
¾ cup chopped toasted pecans
44 caramel candies
6 tablespoons heavy whipping cream
coarse sea salt
1 (6 ounce) bag semisweet chocolate chips
1 tablespoon vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 3 to 4 baking sheets with parchment paper.
  • Beat butter and sugar together in a bowl using an electric mixer until pale and fluffy. Beat in vanilla extract. Reduce mixer speed to low and gradually beat in flour and 1/2 teaspoon salt. Press dough together in plastic wrap; roll dough into 1 1/2-inch balls.
  • Place beaten eggs in one small dish and pecans in another dish. Dip each dough ball into the eggs and roll in pecans. Place dredged balls on the prepared baking sheets; press your thumb into the center of each ball.
  • Bake in the preheated oven for 10 minutes. Press each cookie again, with a spoon. Return to the oven and continue baking until golden, about 10 minutes more. Cool on wire racks.
  • Combine caramels and heavy cream in a small saucepan over low heat. Cook, stirring constantly, until caramels are melted and mixture is smooth, 4 to 6 minutes. Spoon the mixture into the thumbprints of the cookies and sprinkle with sea salt.
  • Melt chocolate chips in a microwave-safe bowl in 15-second intervals, stirring after each melting, 1 to 3 minutes. Stir in oil. Drizzle chocolate over the cookies.

1 1/2 cups Gold Medal™ all-purpose flour

1 1/2 cups finely chopped pecans
1/3 cup packed light brown sugar
2 tablespoons Gold Medal™ all-purpose flour
1 cup finely chopped pecans
2 tablespoons unsalted butter, softened

Steps:

  • Heat oven to 325°F. Grease cookie sheet with shortening or cooking spray, or line with cooking parchment paper or silicone baking mat.
  • In large bowl, beat 1 cup brown sugar, 1/2 cup butter, the egg and vanilla with electric mixer on low speed. Stir in 1 1/2 cups flour, the baking soda and salt. Stir in 1 1/2 cups pecans.
  • In small bowl, mix 1/3 cup brown sugar, 2 tablespoons flour and 1 cup pecans. Stir in 2 tablespoons butter with fork until mixture is crumbly.
  • Shape dough into 1 1/2-inch balls. Place 2 inches apart on cookie sheet. Press thumb into center of each cookie to make indentation, but do not press all the way to the cookie sheet. Fill each indentation with about 1 teaspoon of filling.
  • Bake 10 to 15 minutes or until edges are golden brown. Cool 5 minutes; remove from cookie sheet to cooling rack.

1 egg
1 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon salt
1/2 cup butter, softened
2/3 cup sugar
2 tablespoons milk
1 teaspoon vanilla
16 vanilla caramels
3 tablespoons whipping cream
1 1/4 cups pecans, finely chopped
1/2 cup semi-sweet chocolate chips
1 teaspoon shortening

Steps:

  • Separate egg; set egg yolk aside. Cover and chill egg white until needed. Stir together flour, cocoa powder, and salt; set aside.
  • In large bowl, beat butter with electric mixer on medium to high speed for 30 seconds. Add sugar; beat until combined. Beat in egg yolk, milk, and vanilla. Beat in as much of the flour mixture as you can with mixer. Stir in any remaining flour mixture. Cover and chill about 2 hours or until dough is easy to handle.
  • Preheat oven to 350°F In small saucepan, cook and stir caramels and whipping cream over low heat until mixture is smooth. Set aside.
  • Slightly beat reserved egg white. Shape dough into 1 inch balls. Roll balls in egg white, then in pecans to coat. Place balls 1 inch apart on greased cookie sheet. Using your thumb, make indention in center of each cookie.
  • Bake about 10 minutes or until edges are firm. Spoon melted caramel mixture into indentation. (If necessary, reheat caramel mixture to keep it spoon able.) Transfer cookies to wire rack; cool.
  • In another small saucepan, combine chocolate chips and shortening. Cook and stir over low heat until melted. Cool slightly. Drizzle cookies with chocolate mixture. Let stand until chocolate is set.

2/3 cup sugar
1 egg, seperated
2 tablespoons milk
1 teaspoon vanilla
1 cup flour
1/3 cup cocoa

1 cup walnuts, chopped
26 Hershey chocolate kisses (Hugs, peanut butter cups, pecan halves, or candied cherry halves could also be used)
1/2 cup powdered sugar
1 tablespoon butter, softened
2 teaspoons milk
1/4 teaspoon vanilla

Steps:

  • Beat butter, sugar, egg yolk, and vanilla in medium bowl until light and fluffy. In another bowl, stir flour, cocoa and salt. Add to butter mixture gradually until blended. Refrigerate dough until firm (about 1 hour).
  • Heat oven to 350. Lightly grease cookie sheet. Shape dough into 1 inch balls. Beat egg white slightly with fork. Dip each ball into egg white then roll in nuts (I've also done without the egg/nut mixture due to family preference). Place on cookie sheet. Press thumb gently in center of each cookie.
  • Bake 10-12 minutes or until set. While cooking, prepare filling by combining powdered sugar, 1 T. butter, 2 t. milk, and 1/4 t. vanilla until smooth. Remove wrappers from candies. Remove cookies from cookie sheet to wire rack; cool 5 minutes. Spoon about 1/4 t. filling into each thumbprint. Gently press an unwrapped candy in center of each cookie. Cool completely.
