In my search for healthier summer treats for my daughters, I came up with this recipe.

¾ cup milk chocolate chips
½ cup milk
3 tablespoons unsweetened cocoa powder
1 tablespoon white sugar
½ teaspoon ground cinnamon
½ teaspoon vanilla extract
1 avocado
1 banana

Steps:

  • Combine chocolate chips, milk, cocoa powder, sugar, cinnamon, and vanilla extract in a saucepan over low heat; stir until all ingredients are melted and combined, about 5 minutes.
  • Place avocado and banana in blender; blend until smooth. Add chocolate mixture into the puree; blend until the mixture is the consistency of pudding, about 5 minutes. Pour the pudding into ice pop molds, and place into freezer until firm, about 3 hours.

Living on the equator, we experience warm weather year-round. These cold sweets are a favorite after-nap treat with my four children. I like how these pops are easy to make in large quantities.

3/4 cup sugar
3 tablespoons all-purpose flour
3 tablespoons baking cocoa
4 cups milk
10 Popsicle molds or plastic cups (3 ounces) and Popsicle sticks

Steps:

  • In a large saucepan, combine the sugar, flour and cocoa. Gradually stir in milk until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Cool slightly., Pour 1/4 cup into each mold or plastic cup; top with holders or insert Popsicle sticks. Freeze until set. May be frozen for up to 3 months.

  • Pour mixture through a sieve in a bowl over the chocolate chips, let sit for 20 seconds then whisk to melt and incorporate the chocolate chips, pour mixture into you popsicle molds and freeze until solid (I leave them overnight or a minimum of 6 hours).
  • When ready to serve, in a microwave safe bowl add the chocolate chips and coconut oil and melt until smooth. Dip or drizzle the popsicle in the melted chocolate mixture and immediately top with toppings of choice, they will set in just a few seconds so work fast!
