NANA'S HOMEMADE CHOCOLATE PUDDING
A rich, silky homemade chocolate pudding made the same way in our family since the 50's. Cooled pudding will form a dark skin on top, which is our favorite part! Top with whipped cream, if desired.

Steps:
- Sift and whisk sugar, cocoa powder, cornstarch, and salt together in a saucepan.
- Heat saucepan over medium heat. Pour milk in slowly, whisking constantly until incorporated. Cook, stirring often with a metal spoon, until pudding is noticeably thicker and clings to the spoon, about 10 minutes.
- Remove from heat and stir in vanilla extract. Divide between 4 small bowls and serve immediately, or chill in the refrigerator for at least 2 hours.

MOM'S CHOCOLATE PUDDING
My mom came to the United States from Colombia when she was 16 years old. She married at 17, had her first child by 18 and quickly needed to find her way in the kitchen. New American convenience foods were a novelty to her, and we were occasionally treated to pudding from the store. My brother loved chocolate pudding so much that, once my mom became more fluent in the kitchen, she decided to try making it from scratch. - Whisk the milk, granulated sugar, cocoa and cornstarch constantly in a nonreactive medium saucepan over medium-high heat until the cocoa has fully dissolved and the mixture starts to simmer, about 8 minutes. Reduce the heat to medium, and continue to cook, whisking, until the mixture thickens to the consistency of a light gravy, 6 to 7 minutes more. Stir in the chopped chocolate, vanilla and a pinch of salt and continue to cook, whisking, until the chocolate has melted and the pudding is thick and creamy, about 2 minutes more. Remove the pudding from the heat, add the butter and stir until the butter has melted.
- Divide the pudding evenly into six 6- to 8-ounce ramekins or glasses. Cover with plastic wrap, and refrigerate for 4 hours or overnight until cold and fully set.
- Before serving, pour the cream and confectioners' sugar into a chilled medium bowl. Whip the cream with a whisk or an electric mixer until soft peaks form, 2 to 3 minutes. Top each pudding with a dollop of whipped cream and chopped-chocolate garnish if using.
OLD-FASHIONED CHOCOLATE PUDDING

- In a double boiler or metal bowl over simmering water, heat the milk, butter and chocolate until chocolate is melted (chocolate may appear curdled)., Combine sugar, flour and salt. Sprinkle over chocolate mixture (do not stir). Cover and continue to cook in a double boiler over medium-low heat, 20 minutes. With a wooden spoon, stir until smooth. Remove from the heat., Stir a small amount of hot mixture into egg yolks; return all to the pan, stirring constantly. Cook and stir until mixture is thickened and a thermometer reads 160°. Remove from heat; stir in vanilla. Cool for 15 minutes, stirring occasionally. Transfer to dessert dishes., Cover and refrigerate for 1 hour. If desired, top with whipped cream.

CHOCOLATE PUDDLE PUDDING

- Preheat the oven to 180° C (350° F).
- Measure the flour and vanilla sugar into a large mixing bowl with two tablespoons of the cocoa powder and the baking powder. Melt the butter and chocolate together, and when melted, add them to the bowl with the milk.
- Stir with a wooden spoon until everything is well blended, and spread the mixture (which should be a thick paste) into the bottom of a baking dish. (I used a 20Ã30 cm dish.)
- Mix the soft brown sugar with the remaining four tablespoons of cocoa, and sprinkle them over the top of the sponge mixture.
- Pour over the hot water (this should be hot from the kettle but not boiling) and put in the oven for 45 minutes. The sponge pudding will rise through the puddle of chocolate sauce.

- Place a fine-mesh sieve over a medium heatproof bowl and set aside. In a medium saucepan, combine sugar, cornstarch, cocoa, and salt. In a medium bowl, whisk together milk, cream, and egg yolks; add to saucepan.

CHOCOLATE PUDDLE PUDDING

- Preheat the oven to 180°C/160°C fan/gas mark 4. Put the chocolate in a small saucepan with the milk and heat gently until the chocolate has melted. Stir in the brandy if using.
- Beat together the butter and sugar in a bowl until pale and fluffy. Gradually beat in the egg yolks, flour, cocoa powder and chocolate mixture.
- Whisk the egg whites in a separate, grease-free bowl until they hold their shape. Using a large metal spoon, fold a quarter of the egg whites into the chocolate mixture, then fold in the remaining egg whites.
- Turn the mixture into a 1.5 litre pie dish or into 5 or 6 ramekins around 8cm x 8cm in size and place in a roasting tin. Pour boiling water to a depth of 2.5cm into the tin. Bake in the oven for about 35 minutes in a pie dish or about 20 minutes in ramekins, until a crust has formed on top.
- Dust generously with cocoa powder and serve hot with whipped cream.
SELF-SAUCING CHOCOLATE PUDDING
Chocolate, not many people who don't like it. This always goes down well, my husband likes it with soft whipped cream on the side. Easy to put together, you should end up with a cake topping and a puddle of sauce underneath that.

- Preheat oven to 350 degrees F.
- Grease an eight-cup capacity ovenproof dish, not too shallow.
- Sift the flour, castor sugar and cocoa powder into a large bowl.
- Combine the milk, essence and melted butter, add this and stir until smooth and combined.
- Pour this mix into your prepared dish.
- Combine the brown sugar and the rest of the cocoa powder; sift that evenly over the top.
- Carefully, with love and a bit of patience, pour the hot water over the pudding mix.
- Bake for approx 40- 50 minutes, or until the pudding feels firm to the touch.
- If you want serve it dusted with icing/confectioners sugar.
